Happiest Valentine’s Day!
Who’s ready to celebrate with these lava cakes?
Ahh, me. duh.
I may be single on Valentine’s day, but you know I am totally cool with it. Single, loving life and loving the fact that I have every excuse to make these easy lava cakes today. Any of you with me or what? Did I mention not only is their warm chocolate oozing out, but peanut butter too? Because there is. And you know…the best part is possibly the fact that you really do not have to feel all that guilty about eating these. Made with all dark chocolate, whole wheat flour, an egg, and coconut sugar, these are practically one hundred percent, well, healthy…ish. 🙂
In all seriousness though, I love these cakes SO much. The fact that they can be made in just about fifteen minutes is a huge selling point. I mean, don’t you ever just crave some serious chocolate (hello, you know what I’m talking about…don’t deny it) and need to get your fix ASAP? This is your cake. Bonus that they’re pretty healthy!
OK, so let’s chat here about these sweet little single girls wholesome molten chocolate lava cakes.
What I love about these is that they are really easy to make, I used ingredients that I have on hand at all times (and I do mean at ALL times), and these are made for just one serving. So basically, they’re perfect for all us single girls out there! Or okok, anyone else who just needs a healthy..ish (<–clearly my favorite word) chocolate treat anytime, any day.
The ingredients are as follows…
…butter. I have been really into using ghee lately, which is clarified butter and a little healthier than conventional butter. That said, organic butter will do the trick, or even melted coconut oil.
…super dark chocolate. I like to use 82% dark as it has more of the superfood cacao in it.
…an egg. hello protein.
…vanilla. needed for any and all desserts. <–truth.
…coconut sugar. ahh, sweet, sweet, superfoods.
…salt. just a little to bring out those chocolate flavors
…peanut butter. or any other nut butter, but I like to use peanut butter. this is totally optional too, but you guys know I love my chocolate and peanut butter combos.
And that’s it. Simple right? Just mix everything all in one bowl. Bake for seven to ten minutes (I like to bake seven minutes for extra lava action). Then just serve with whipped cream or ice cream and EAT. You could also serve this with greek yogurt, which I think would be delish as well.
Total chocolate lava cake perfection.
So while I know what I will be doing tonight, do you guys have any big Valentine’s Day plans? Do you do it up and go out or make a romantic dinner at home? Do any of you make something fun that you can also enjoy with your kids?
Totally dying to know since I have never really been into Valentine’s Day. Sure I love the idea of chocolate and flowers galore, but ahh, why can’t we do that everyday?
Whether you love Valentine’s Day or hate it, these cakes are probably a must make for today. Single, married, not sure what the status of the relationship is, whatever your love life situation is, you need this cake.
Again, it’s oozing with chocolate and peanut butter (if you want, which I DO) and topped with whipped cream. It’s just the most perfect sweet cake that you can treat yourself to today…and then every other day after. Obviously.

Oh my gosh. That center though. The best!
Heeee tieghan, I saw them on valentine’s and thought “oh yum”; clearly I wasn’t in my right mind.
Those treats are not just “yum” – rather holy shit freakin amazing. I’m definitely making these and probably doubling the pb amount ? A few questions; did you make this in a mug?? — genius. And do you have any idea if they can be made beforehand? Love, Eva
HI Eva! I actually made this in a ramekin in the oven. Unfortunately, I am not sure about making these in advance as the molten part will not be molten if baked before hand. Let me know if you have any questions! Thank you!
I’m almost afraid to try this because I will like it far too much and I’ll want to make it often–I read a couple of people above have.
Is your name changing to Daily Harvest–I saw that on my email???
Hey Nancy! Nope, no name change. Just trying a work out the kinks of a new email system…it’s a little tricky, but hoping to perfect over the next couple weeks. Hope you have a great weekend 🙂
Who run the world? Girls! And also this lava cake.
You got that right!!
Lava cakes are the best, I just love these!!
Ah, so good! Thanks Laura!
I made one of these last night and have another in the oven as I type this.
Oh, my goodness…this little gem is sooo delicious and way to easy to make.
Luck for me , I have only one Dove chocolate heart left. Otherwise I would make one of these every night! I am imagining using other little Dove chocolates…the mint, the caramel filled, the peanut butter filled.
Thanks so much for developing and sharing this recipe.
Haha, yay!! So happy you like it!! Thanks Nancy!
Married guy here…and I love this cake!
Haha, too funny! Glad it appeals both ways (:
This molten chocolate lava cake is everything! Hope you had a fabulous Valentine’s Day!
Awh thank you! Hope you had a great Valentines too!
I made a lava cake for myself last night! Husband hates chocolate so he got apple crisp and I got something almost identical to this. Let’s pretend it’s Valentine’s Day again tonight so I can try your version next!
Haha, wow those both sound delicious! I think any night would work for this one!
I’ll take like 5 please. 😉
Haha, thanks Jennifer!
Looks fantastic, Tieghan! I love lava cake, so delicious & easy to make!
Me too!! Thanks so much Anastasia!
The peanut butter oozing out of the molten cake is heavenly – that photo is just killing me!!! My goodness, I love this post. This one is a keeper. Love it, thanks for sharing.
I always try my best to get a good oozing photo! Thanks Cindy!
Wow! This looks delish! I have to make one. Question tho: If I use semi-sweet chocolate (I don’t think I have any dark in the pantry) should I reduce the sugar and if so how much?
Hi! I don’t think you need to reduce the sugar. Maybe use 1 teaspoon, but again, i think it would be fine with 2. Let me know if you have questions. Hope you love this!
Yum! These look so good!
Thanks so much as always Kari!
Wow – another wonderful recipe and beautiful photos. I absolutely love your work! If I ever get to the point that I’m a tiny fraction of how talented you are, I’d consider myself a successful blogger – hey, hope springs eternal! Happy Valentines’ Day!
Happy Valentine’s Day Roberta! Your blog looks amazing, just keep doing what you love! Thank you so much!
Oh my!! Thanks so much!! The first year of blogging I was using my phone for photos, and got a Canon EOS8 a few months ago which has been very fun but of course I don’t know what I”m doing…then a couple of weeks ago found out my camera had been set so everything was overexposed by twice!! So now all is adjusted and it’s just my own talent that needs work but having a blast. Thanks so much for your inspiring words – it means so much. xoxo
Believe me I was right there with you, still not sure what I am doing sometimes! Just keep having fun with it (:
Incredible. I have never made lava cake before (so terrified of getting them out of the ramekins without breaking them) but when I finally work up the courage, I will make these. I made myself a trio of breakfast tacos this morning and excellent coffee in the French press, so the day is off to a grand Treat-Yo-Self start.
Wow tacos and French press?! Sounds like an awesome morning Kate! When you do make these I hope they turn out perfect for you! Thank you!!
