So I bake. Like a lot. Maybe more than I cook. Probably way too much, for the normal person that is.
There are a lot of us in this house (but you already know this). We like our chocolate (again, I am sure you have figured this out by now).
Creaming butter, whipping cream, melting chocolate those are all second nature to me. I could do them in my sleep. So to say that I am excited for all the holiday treats (cookies, cakes, cupcakes, tarts, sweat breads, and truffles) that I have yet to make is an understatement! See I have been writing my “to bake this Christmas list” since October. I know…this is embarrassing and I should not be telling you this.
So yeah, I have my Christmas treats planned from now until Christmas. Yes, I am crazy. And yes, probably a little OCD as well. But honestly what is better than Christmas cookies. You can NEVER have too many! I mean come on, I can not be the only one with people dropping in for an overnight (errr, more like week) stay? I have to be prepared!
First up this season? Lace Cookies. But of course not just any old lace cookies. Nutella Stuffed Oatmeal Lace Cookies. I had never made lace cookies before yesterday and I have no idea why! They have a really nice mix of crunchy and creamy. I know that sounds odd, but it is the best way to describe them. Other than insanely addicting!
Crunchy, creamy, buttery, and chocolatey! These cookies are soo goood! Yes, I know, I say this all the time. I really mean it though. I mean let’s be real, there is Nutella in the middle. How could anything stuffed with Nutella not be crazy good?
