Honey, Peach, and Brie Panini with Bacon Butter. Salty, savory, sweet, and all kinds of deliciousness. Bacon butter spread onto sourdough bread with sweet peaches and melty Brie cheese then drizzled with honey…all together in one warm sandwich that’s dangerously good. This is not your average panini!

As you can see, this summer’s peach obsession is still going strong. I have definitely been using a lot of fresh peaches in both sweet and savory ways. They’re just so delicious. And since they are only available a few months out of the year, I’m embracing their availability, and incorporating them into as many recipes as I possibly can.

I am so excited about today’s very summery and very delicious panini. For one, is there anything better than starting Monday off than with a Brie and peach filled panini complete with bacon butter? I am thinking no, and while it might be a decadent recipe for a Monday, sometimes those are just very much needed, you know?

Yes, yes, this panini is very much needed today.

Let’s talk details.

Everything about this recipe revolves around one very important component, the bacon butter.

Yes everyone, bacon butter. It’s every bit as delicious as it sounds, and it’s absolutely the best when smeared all over this peach and brie filled panini.

If you happen to own the Half Baked Harvest Cookbook, than you may recall that I have bacon butter paired with my favorite apple pancakes in the breakfast chapter. I developed that pancake recipe over two years ago, and to this day, it is still my favorite pancake recipe, mostly thanks to the bacon butter, which consists of two ingredients: 1. extra crispy bacon 2. my favorite Land O Lakes® butter in half sticks.

It’s hard for me to explain just how delicious this butter is, but it’s so good. And you guys, I’ve found that it’s best when paired with sweet & savory recipes…

Enter this Honey, Peach, and Brie Panini.

It’s sweet, but still very savory.And yes, it would be good as listed above, but let’s be real, it’s made ten times better with the addition of a little salty bacon butter. It’s true.

SO.

Once you have your bacon butter mixed up, it’s time to start assembling the panini.

You’ll need good sourdough bread, white cheddar cheese, Brie cheese, a perfectly ripe (but firm) peach, honey, and fresh thyme. The key to this panini is spreading the insides and outsides of each piece of bread with bacon butter. This will give your panini the best flavor as well as make them extra crispy on the outside and gooey soft on the inside. Trust me.

Layer the ingredients in between the buttered pieces of bread, drizzle the peach with honey and sprinkle with thyme. I love cooking this in a a panini press/grill pan, but if you don’t have either a panini press or a grill pan, you can obviously just cook this as you would a grilled cheese.

No matter what, the sandwich is going to be good.

I like to finish the panini with a sprinkle of fresh thyme (from the garden…because I am also obsessed with my garden herbs right now) and then enjoy this warm, right off the press. Of course.

This is one of those recipes that’s so simple but so good, and perfect for any time of the day. I’m currently loving making this for an easy lunch or a super quick dinner.

It’s a great way to use up leftover bacon from a Sunday brunch as well as any peaches you happen to have on hand. Not sure about you guys, but every time I see peaches, I tend to buy way more than I actually need because my eyes are bigger than my stomach will ever be…

Oops.

The good news is that peaches can be used in so many recipes, and as you know, I have a lot of fun thinking outside the peach pie box and going on the sweet and savory route. In fact, I’d take this cheesy, buttery sandwich over pie any day of the week.

Bottom line? If you’ve snatched up one too many peaches from this week’s farmers market run, step outside the box and make this panini for an easy Monday lunch or dinner.

I’m feeling very confident that it will not disappoint.

Plus, all Mondays need something fun and delicious to look forward to. This is the sandwich that will fill that void.

  • 1. To make the bacon butter. In a small bowl, stir together the butter and bacon.
    2. Heat a Panini press or large skillet over medium high heat.
    3. Spread the outside and inside of each piece of bread with butter. Evenly layer the cheeses and peaches. Drizzle honey over top and sprinkle with thyme. Add the top piece of bread.
    3. Place the sandwiches, one at a time, into the Panini press and cook until the cheese is melted. Serve each sandwich with a drizzle of honey and fresh thyme. EAT.

    This is one of the best sandwiches I have ever made! I have been hunting for non-dessert peach recipes for my gorgeous Peach Truck peaches and this was wonderful.     Amazing! I omitted the butter and just used bacon grease for the pan and slices of bacon in the sandwiches. We will be making these all summer long and subbing apples in the fall.

    Wow! This tasted divine! Just made it for breakfast but did not have bacon on hand so just used butter..I’m sure it’s even better with the bacon! This is a combination I never would’ve thought of!
