Melted Havarti Avocado Sandwich with Spicy Mayo. Layered up tall with homemade spicy smoky mayo, melted Havarti cheese, roasted tomatoes, sprouts, avocado, and served with yummy chips on the side. Make this for lunch or dinner, or serve it up at your next afternoon picnic. This tasty vegetable cheese sandwich is precisely what our warm-weather days are calling for.

Look! It’s a sandwich! I almost never share sandwich recipes but I needed a change of pace. I’ve been sharing a lot of bowl recipes and I love them all but sandwiches are pretty great too! This charming, stacked cheese sandwich feels so perfect for these springtime days.

I’m in LA this week and this sandwich feels very LA with all the sprouts plus avocado layered inside. It’s so delish!

Yes, it’s rare that I share sandwich recipes, but it’s not that I don’t love a good sandwich, because I really do. It’s more the fact that I have a hard time photographing them. I knew I needed to push all my fears aside when I had this idea because this sandwich is fun and different!

I wanted to create something quick to put together, colorful, and vegetarian. A sandwich where the cheese and veggies are the focus.

Here are details

Start with the bread. Use a loaf of sourdough or rye, something with a little flavor of its own.

Now make that mayo. I love to use an avocado oil mayo. Mix it together with hot sauce, chipotle, and smoked paprika. It’s such a simple creamy sauce but has such yummy flavor.

We’re so into this spicy mayo sauce right now. It’s spicy, but not overpowering. It really adds something special to the sandwich. The smoked paprika is key so don’t skip that.

Ok, now it’s time to assemble. Switch the broiler to high. Layer the bread with the spicy mayo, Havarti cheese, and sliced cherry tomatoes. I like to season the tomatoes with salt and pepper. Then throw the pan in the oven to get the cheese melted and the tomatoes charred.

This only takes a few minutes – watch closely, as the broiler cooks fast.

Now, working quickly (you want the cheese to stay warm). Layer on sun-dried tomatoes, pickles and/or pepperoncini. Add a big hand full of sprouts, avocado, and if you’d like, some pickled onions.

Then I usually add a drizzle more of spicy mayo and finish with the top piece of bread.

Slice and eat! The sandwich is best when the cheese is warm and melty. Add some mayo on the side and go all out and enjoy with your favorite chips. I feel like chips really round out the sandwich experience.

So yummy! I love all the colors, the flavors, and the ingredients hidden within this stacked-up veggie cheese sandwich!! I’m thinking I need to start sharing more sandwich recipes. This one is so fun!

I will say, if you prefer to add meat, roasted chicken or deli-cut turkey would certainly be delicious.

Oh, and a little bacon added on would be amazing too!

Spicy Mayo

  • 1. To make the mayo. Mix all ingredients in a bowl and season with salt.
    2. To make the sandwich, preheat the broiler to high.
    3. Working on a sheet pan, spread the outside of each piece of bread lightly with butter. Spread the inside with spicy mayo. Place the cheese slices over the mayo, then add the tomatoes – cut side up. Broil 2-4 minutes, until the cheese is bubbling up and the tomatoes begin to char. Watch closely.
    4. Layer the sun-dried tomatoes, pickles, pepperoncini, sprouts, avocado, red onion, and jalapeños. Add the top piece of bread, cheese facing down. Slice and enjoy while warm with lots of extra mayo. YUMMMMMY.

    1. Hey Anne,
Happy Wednesday!! Thanks a bunch for trying this recipe and your comment, so glad to hear it was a hit! xx

So good! I added turkey to mine and it was nice.
As others have said, definitely toast the bread first. Mine was still buttery and soggy on the outside so I ended up having to toast the whole sandwich. Not ideal, but it was still delicious!

    1. Hey Kris,

I’ve tried several of your recipes and they are really unpalatable. This one, the havarti avocado sandwich, was a soggy mess by the time it was done. I’m not sure what you are doing to layer all the layers, maybe wax paper to keep the juices from soaking through everything. If you could offer some advice that would be awesome, but Ugh. And the amount of scrolling it takes to get to an actual recipe is criminal. Find another hobby.

    1. Hi Amy,
I’m so sorry to hear you haven’t been enjoying my recipes:) If you simply click “skip to recipe” at the top of the page, you can jump right to the recipe rather than read my blog. Also, this isn’t just a hobby, it’s my life. It’s how I survive and my passion. I hope you have the best Monday! xx

      1. Kudos for you and your response. I was appalled at how awful this post was. I know you deal with stuff like this all the time but I really was upset by this. Just don’t get what motivates someone to be so damn nasty. You took the high road, not sure I could have, but it just demonstrates what a nice, good person you are! The rest of us are so happy you have taken up this “hobby”<—lol. But truly, your recipes are AMAZING!

    2. I don’t get people like you. I, along with literally millions LOVE Tieghan’s recipes. If you don’t, why just stop following her? Why would you want to tear someone down and try to make them feel awful? Is it empowering? Were you having a bad day? You should be so lucky to have a “hobby” like hers. She has worked hard for YEARS to establish her extremely SUCCESSFUL business and though I don’t know her personally, she seems so authentic, a really honest and nice person all the way around. Shame on you for being so nasty.

I LOVE this recipe! I just made this and was hoping it looked as good as the photos and this recipe did not disappoint! Probably the best sandwich I’ve ever made! I didn’t have pickles but had coleslaw and that tasted great as a substitute. The mayo recipe is key!

Made it for lunch and I loved it. As viewers said toasted the sourdough bread first and broiled it with cheese and cherry tomatoes. Thank you Tieghan for the yummy recipe!!

    1. Hey Sunitha,

  5. I’ve made this 3 times now and it’s such a great sandwich to adapt to your liking and or what ingredients you have on hand. Tonight I toasted an Asiago cheese bagel from Panera, then broiled some pepperjack & manchego cheese on top, then used all of the other ingredients list in the recipe. Outstanding and the spicy mayo knocks its out of the ballpark.

    1. Hey there,
Fantastic!! I am thrilled to hear that this recipe turned out well for you, thanks for making it and sharing your review:)

  6. The sandwich is very tasty! I do feel, though that you must pre-toast the bread with butter before you assemble the sandwich. Great recipe!

This is a delicious, fairly easy sandwich recipe! I absolutely loved the pickled flavor of the onions with the smoky flavor of the mayo. I will be making this again and again. Thank you for this!! 🙂

This was delicious! I think I’ll have to pr-etoast my bread before the broiler to get it crispier, but the flavors were amazing. Definitely recommend this one!

What a mess! The outside remained buttery and not toasted. The cherry tomatoes never charred, but the bread burned. I cut the burnt top off. The taste was good. We had to eat it with a fork and knife.

Sounds like user error. You seem to be a terrible cook. This is a sandwich. It’s not rocket science, yet you still screwed it up. Give yourself zero stars.

Fantastic sandwich, we loved all the flavors packed in there. I took a few suggestions from other commenters and toasted my bread first (still got a little soggy but not too much) & grilled the onions (do this!) The spicy mayo is a must! Can’t wait to make it again!

Amazing sandwich! My husband is not a fan of veggie sandwiches and he loved it! We used the Famous Dave’s Sweet & Spicy pickles and those were delish. Thanks Tieghan!
