Look! It’s a sandwich! I almost never share sandwich recipes but I needed a change of pace. I’ve been sharing a lot of bowl recipes and I love them all but sandwiches are pretty great too! This charming, stacked cheese sandwich feels so perfect for these springtime days.

I’m in LA this week and this sandwich feels very LA with all the sprouts plus avocado layered inside. It’s so delish!

Yes, it’s rare that I share sandwich recipes, but it’s not that I don’t love a good sandwich, because I really do. It’s more the fact that I have a hard time photographing them. I knew I needed to push all my fears aside when I had this idea because this sandwich is fun and different!

I wanted to create something quick to put together, colorful, and vegetarian. A sandwich where the cheese and veggies are the focus.

Here are details

Start with the bread. Use a loaf of sourdough or rye, something with a little flavor of its own.

Now make that mayo. I love to use an avocado oil mayo. Mix it together with hot sauce, chipotle, and smoked paprika. It’s such a simple creamy sauce but has such yummy flavor.

We’re so into this spicy mayo sauce right now. It’s spicy, but not overpowering. It really adds something special to the sandwich. The smoked paprika is key so don’t skip that.

Ok, now it’s time to assemble. Switch the broiler to high. Layer the bread with the spicy mayo, Havarti cheese, and sliced cherry tomatoes. I like to season the tomatoes with salt and pepper. Then throw the pan in the oven to get the cheese melted and the tomatoes charred.

This only takes a few minutes – watch closely, as the broiler cooks fast.

Now, working quickly (you want the cheese to stay warm). Layer on sun-dried tomatoes, pickles and/or pepperoncini. Add a big hand full of sprouts, avocado, and if you’d like, some pickled onions.

Then I usually add a drizzle more of spicy mayo and finish with the top piece of bread.

Slice and eat! The sandwich is best when the cheese is warm and melty. Add some mayo on the side and go all out and enjoy with your favorite chips. I feel like chips really round out the sandwich experience.

So yummy! I love all the colors, the flavors, and the ingredients hidden within this stacked-up veggie cheese sandwich!! I’m thinking I need to start sharing more sandwich recipes. This one is so fun!

I will say, if you prefer to add meat, roasted chicken or deli-cut turkey would certainly be delicious.

Oh, and a little bacon added on would be amazing too!

Instructions

  • 1. To make the mayo. Mix all ingredients in a bowl and season with salt.
    2. To make the sandwich, preheat the broiler to high.
    3. Working on a sheet pan, spread the outside of each piece of bread lightly with butter. Spread the inside with spicy mayo. Place the cheese slices over the mayo, then add the tomatoes – cut side up. Broil 2-4 minutes, until the cheese is bubbling up and the tomatoes begin to char. Watch closely.
    4. Layer the sun-dried tomatoes, pickles, pepperoncini, sprouts, avocado, red onion, and jalapeños. Add the top piece of bread, cheese facing down. Slice and enjoy while warm with lots of extra mayo. YUMMMMMY.

    Super delicious!! The only changes I made was using arugula in place of the shoots, as that was all I had, and I didn’t add the dill pickles. But followed the recipe for the rest and it all worked together beautifully!! 👌

    Very tasty sandwich. I had to modify it a bit and used lettuce instead of sprouts and Munster instead of havarti. Also recommend toasting the bread before broiling to get it crispy otherwise my broiler didn’t crisp the outside of the bread. The sauce is what brings this sandwich to life. So good.

  6. After seeing the gorgeous photo of this sandwich in the newsletter, I decided to make it. I It was a bit time-consuming but I tell you it was absolutely delicious!! I mean delicious delicious!!

    I did add a couple of ingredients to the mayo like Korean red chili flakes and a pinch of creole seasoning which made it taste do good. I also deleted the juice from the peppers. I also deleted the pickles from the sandwich and added a few leaves of basil.

    Toasting the sourdough bread added so much texture to the sandwich and helped contrast all of the soft ingredients. And the cheese (I added pepper Jack)!! Heaven!

    This sandwich was divine! Only issue I had was with the butter. It was not room temperature so made the sandwich soggy! Otherwise best sandwich I’ve had on my life!

  10. I made this today and it tasted amazing. I only had one issue and I don’t know how to fix it. I did exactly as you said with the butter on the outside and when I broiled the bread, I got the cheese nice and crispy on the edges, which I love, but the bread never toasted not even slightly. It’s kind of soggy and I did a very thin layer of butter. How do you get yours crunchy?

  13. I made this yesterday, and wow! Great recipe and absolutely delicious! Substituted a few things because I did not have the ingredients — paprika and smoked paprika (instead of chipotle chili powder); sautéed onions (instead of pickled); garlic pickles (instead of dill pickles or pepperoncini); and shredded romaine lettuce (instead of microgreens).   14. Can everyone please just take a breath and stop with the vile attacks and comments? If people’s comments seem harsh to you, can you just let it slide and let T handle it…or not? She can fight her own “battles” I would think. Angry, aggressive and vulgar comments are really not a great look for this blog, honestly. People are allowed to be critical or ask questions, without being labelled hateful or snarky or worse. I’m not saying that all comments are coming from a place of genuine concern or interest, but you’re not doing anyone any favours by being so nasty. Some of these comments are really vile!! Sheesh!

    1. Nice try. You already said that on the sewer site. But no. As soon as the vile attacks on HBH stop, the responses (rightly) defending her won’t be necessary anymore and they will stop too. Not before.

    2. Maybe try lecturing the abusive t.r.o.l.l.s. who are starting all the trouble and coming here everyday to attack. They are the only ones who need to stop what they are doing. The responses they get are more than called for, but like Shelley mentioned, they wouldn’t happen if the attacks never took place to start with.

      I disagree. The responses are a much better look than the attacks that prompt them. Plus, the replies aren’t angry aggressive or vulgar. They’re hilarious, well-written, clever as all get-out, and much more entertaining than all the negative complaining.

They are being called out for being absolutely horrendous and abusive. Let’s be truthful here, Kay. Being labeled hateful, snarky or worse is way too kind, actually, but still 100% appropriate. But yeah, by all means, be “critical”… but don’t start crying when you get owned after.

      Seems now the only ones screaming for everyone to calm down are the t.r.o.l.l. supporters. Probably because they end up getting so badly humiliated by the genuine HBH fans, and now they regret ever opening that can of worms. Should have thought of that before. 😉
