Happy (Christmas) Cookie Friday!

I’m pretty excited the weekend is here. I have grand plans of doing some serious online Christmas shopping (I am horribly behind and stressing about how close Christmas is…yikes!), and having a “Christmas day” with Asher on Sunday. She is the cutest, and she text me on Wednesday night asking when we could have our annual Christmas day. Obviously, I can’t let being busy, and the hustle that comes with the end of the year, come between spending time with this girl, so Sunday afternoon it is!

Pretty excited. Asher want’s to make homemade lotions and sugar scrubs, decorate cookies, and watch Christmas movies. Anything else we need to add to out list? Would love to know what holiday things you guys love doing.

I’ll be spending a good part of Saturday over in Breckenridge watching my younger brother Red compete in the 2017 Dew Tour Men’s Slopestyle finals. It’s a pretty big competition, as it’s one of the last Olympic qualifiers. He’s currently the youngest rider competing, he qualified in first for the US team and second overall. To say that I am a little proud would be an understatement. I don’t even care how he does tomorrow, just so happy and excited for this kid. Only seventeen and living his life to its best.

Since we have so many things to celebrate today, I thought we would talk cookies!

Guys…these snickerdoodles? They are extra special snickerdoodles.

Side Note: please excuse all the shouting in today’s post. I am just way too excited.

Oh these cookies. If Christmas had a cookie, I do think these would be it. Okay, maybe they would be reindeer or santa cookies? If I had the skills I would have attempted those instead of snowmen, but straight up? I am not the cookie decorator type. Snowmen are my kind of thing, and you know what? I think they’re pretty freaking cute.

The bestest part? Aside from taste of course? These snowmen are EASY. I’m talking no rolling out dough, no weird food dyes, no fancy (and tasteless) frosting, no dough chilling, no special tools, no hair pulling, and no tears.

Nope, none of that. Just cute, yummy, delicious cookies.

The cookie base is pretty simple. I like to use a little cream cheese in my dough to keep the snickerdoodles extra soft and extra doughy. I rolled each dough ball in my homemade chai sugar and then simply placed one smaller dough ball on top of a larger one to create a snowman. Yes, just one on top of the other.

Again, nothing fancy or complicated here.

I frosted each cookie with eggnog buttercream and decorated with Reese’s and chocolate…so all the yummy things.

For the snowman’s hat, I used half of a mini Reese’s and then crushed Reese’s Pieces for his nose. I built his buttons out of chocolate and used a little red sanding sugar for his scarf.

I finished each cookie with a sprinkle more of chai sugar and done.

Simple, fun, and delicious. The way all cookies should be.

Also, the combo of chai sugar on the cookies, plus eggnog in the frosting? THE BEST.

These are the perfect cookie to bake with friends, family, young kids, anyone really. Everyone has fun making them and putting their own personal touches on their snowman.

Planning to surprise Asher with these on Sunday as part of our Christmas day. She has been begging me to make snowman cookies all month long. Actually, she has been begging me to make snowman cookies since October, so I know that she is going to LOVE these and have fun decorating them…and then eating them…along with a mug of hot cocoa while watching The Santa Clause (our favorite). Sounds perfect, right?

It will be!

Eggnog Frosted Chai Snickerdoodle Snowmen

Instructions

  • 1. Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
    2. In a medium bowl, combine the flour, baking soda, and baking powder. 
    3. Using an electric mixer, in a large bowl beat together the butter, cream cheese, and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until combined. Gradually add the flour mixture, mixing until just fully combined.
    4. To make the chai spice sugar. In a small bowl, combine the sugar, cinnamon, ginger, all-spice, and cardamom.
    5. Roll the dough into two sizes of balls. 16 (1 1/2 inch, about 1 tablespoon) size balls, and 16 (3/4 inch, about 2 teaspoons) size balls. Then generously roll through the chai sugar. 
    6. To make the snowmen, place 1 smaller baller and 1 larger ball together with the edges touching on the prepared baking sheet, spacing the cookies 2 inches apart. Repeat with the remaining dough balls. Transfer to the oven and bake for 8-10 minutes or until the cookies are just starting to set around the edges. Let cool completely. 
    7. To make the frosting, beat together the butter and sugar until creamy. Add the eggnog and nutmeg, beat to combine. 
    8. To frost the cooled cookies. Place half a mini Reese's atop the snowman's head. Decorate as desired with candies and melted chocolate.

    I love these chai spiced eggnog snickerdoodle snow people! Haha I just baked my mom some eggnog chai spiced snickerdoodles, last week, and she said they were some of the best cookies yet! ? I agree that the eggnog is perfect for making a fluffy but chewy cookie, and I like your idea of making two cookies into one. I hope Asher has a wonderful time on Sunday and you both enjoy the time together. Maybe you could go for your walk together, then come back to some cinnamon rolls or stew (while making your lotion and scrubs)? I also go for a walk every day and love when my mom is able to join when I visit. Also, maybe you can make smores or bark while watching your Christmas movies? I hope Red does well this weekend and you have a nice time! 🙂
