Since it’s Friday though, let’s just assume that everyone agrees: peanut butter + chocolate chunks = a cookie combo that never disappoints.

I made these cookies on a complete whim, simply because I was really just in the cookie baking mood. I had other things planned, but cookies pretty much took over my mind once the thought popped into my head. Cookies have a way of doing that .

I also really wanted to bake some cookie for back to school. Nothing is better than coming home from the first day of school to a batch of freshly baked cookies, and of course a glass of ice-cold milk. I mean, of course.

I may not be a school girl anymore, but I can still celebrate little Asher’s first day. Plus, it’s an excuse to make cookies, not that we need one around here.

Back when I was younger and my mom did all the baking in the house, cookies could appear at pretty much any given time. But the first day of school was a sure guarantee that there would be a fresh batch of her famous chocolate chip cookies when everyone returned home. Anyone who tastes her cookies knows they are the best.

No joke, the best. Even though I can make tons of desserts now, mom’s cookies are still my all time favorite. It’s the mother touch that does it for me.

But mom always just made chocolate chip cookies. She never ventured into the worlds of peanut butter, nutella, brown butter or funfetti, not even chocolate chunk. She is an awesome baker, but when it comes to cookies she sticks to what she knows. Me on the other hand? Well, I guess I am a little more daring than she is in the kitchen (which is weird since under any other circumstances she is the daring one).

Not that peanut butter cookies studded with chocolate chunks and Reese’s Pieces are anything bold or daring, but at least there is a little variation. Most importantly though?

They taste incredible. especially warm and right out of the oven when the chocolate is still melty. Oh my gosh, is there anything better? I think not.

The best part is that these cookies are sooo simple. Just ten minutes to prep and ten minutes to bake. No chilling time, minimal dishes (two bowls at most!) – nothing complicated.

Just the way a cookie recipe should be if you ask me.

Ingredients

Instructions

  • Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper.
  • Combine the flour, baking soda and salt in a small bowl. Beat the butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy, about 3 to 5 minutes. Add the egg + egg yolk and beat well. Beat in the peanut butter and honey.
  • Gradually beat in the flour mixture. Stir in the chocolate chunks and Reese's Pieces.
  • Roll the dough into scant tablespoon size balls. Stack two balls together and place them two inches apart on the prepared baking sheet.
  • Bake for 10-12 minutes, but no longer. Over baking them is never good! Allow to cool three minutes then eat warm or move to a cooling rack to cool completely.

  1. Ummm, just barely made these and….they are pretty much AMAZING! Let me just start by saying I could barely get them in the oven because I could not stop eating the cookie dough! OH MY GOSH that stuff was good. But, I finally got a tray of them in the oven and they just came out and they are so delish! I must say, when I put the two balls on top of each other, they came out looking nothing like the picture on this site (they didn’t seem to expand out at all, like it looks like in the pics), but that’s ok. They were still the perfect flavor and softness, which is all I really care about. I ended up only doing single balls on my next tray and they turned out fine. The only thing I did different with this recipe is that I used 1 cup of milk choc chips instead of the chopped chocolate chunks. Everything else was the same and this is a killer recipe!
