The most frustrating thing happened while writing up this post.

It disappeared! Like everything, gone in the blink of an eye! My reaction? OMG! What jut happened? Where did my recipe go? No please it has to be somewhere, where is it?

Yeah, it was not a pretty site. I was a little dramatic to say the least. In the end I did what I assume many bloggers (at least I hope I am not they only blogger who has made this mistake. Or am I?) have had to do. I rewrote the whole thing for you guys. Simply because you are too awesome to not have a post waiting for you bright and early in the morning to enjoy with your coffee or maybe your hot chocolate. Nope I just could not leave you hanging.

National Lampoons Christmas Vacation. It has absolutely nothing to do with this post, but can we just talk about it for a sec? Ok, good. I love this movie and I have to watch every year! So you can imagine I was pretty excited when I saw this Oldnavy commercial. How awesome is this commercial? I mean that movie was made over 20 years ago! I love that it is the original cast and not some creepy look a likes trying to imitate them! Totally put a smile on my face.

Ok, my crazy talk is over now. I know, I know, I know I am such a nerd. At least I own up to it.

About those wraps you see up there. Those beautiful mouth-watering wraps. They are good. Crispy, peanuty and slightly spicy. I know a lot of wraps are eaten cold, but not these. See cold food does not really fly over here. Unless of course it is ice cream in which case it is topped with hot fudge sauce. Of course. No we like our food hot! And with a nice little crunch as well. So I toast these guys up in the skillet right before serving. Trust me you will want to do this, you will never go back to eating cold wraps again. Really.

These are a much welcomed break from all the cookie testing and other cheesy and delicious holiday food coming out of my kitchen. Dip in the extra peanut sauce and you are set.

Crispy Thai Chicken Wraps

  • Heat your grill, pan or skillet to medium-high heat.
  • Combine the chicken with 1 tablespoon sesame oil and 1 tablespoon soy sauce. Grill for 5-7 minutes on each side. Allow to cool and then cut into thin strips.
  • Heat 1 tablespoon of sesame oil in a medium skillet add the carrots, red peppers and 1 tablespoon soy sauce. Stir fry for 5-10 minutes or until just slightly soft. Just to cook the veggies a little.
  • In a medium mixing bowl combine the chunky peanut butter, coconut milk, 4 tablespoons soy sauce, brown sugar, hot chili sesame oil, rice wine vinegar, cayenne pepper, 1 tablespoon sesame oil, sesame seeds and garlic. Mix until combined thoroughly and then remove about 1/4 of the sauce to a small bowl for serving. Add the chicken to the remaining sauce and toss to combine.
  • Working with two tortillas at a time heat them in the microwave for 30 seconds. Add a good amount of the chicken and sauce to the top of one tortilla. Top with some veggies and then tuck in the sides and roll tightly. Repeat with remaining ingredients.
  • Heat a skillet with a little oil. Lightly crisp each wrap, turning to get all sides.
  • Serve warm with extra sauce.

  4. I’m pinning these, they look so good. One of the keys to a good wrap, sandwich, etc.. for me is to always have a yummy sauce, and the creamier, the better!

    BTW…I love the Old Navy Commercial, too!
