But then it’s just so good that I can’t not share it. I mean, we’re talking crispy, salted, slightly crunchy potatoes, tossed in buffalo sauce, topped with cheese and well…more cheese. Then you simply melt the cheese, top it with fresh cilantro, green onions and a little drizzle of buttermilk ranch, and…EAT.

Simple.

Delicious.

Perfect.

The best three words ever. I could not be a happier girl.

With today being NFL kickoff day, I thought these nachos were spot on. They’re fast, easy and like I said above, DELICIOUS. They’re something that pretty much anyone from picky eaters to health nuts will eat. Well, ok maybe not health nuts, seeing as there is cheese and butter involved, but I don’t know, maybe.

I say live a little!! Bikini season has come to an end anyway. Cheese is back in style (as if it ever went out). Time to take in that calcium and build up those bones!

Don’t you guys just love my thinking? I can pretty much rationalize anything in my head so that I can see it the way I really want to see it. I swear, it’s a true talent. A gift even.

But you know what I can’t seem to do?

Rationalize this whole me getting a pet thing. You remember last week how I was talking about getting a cat? Yeah, well the mice have been gone for a good six days, so the cat talk has died down and the dog talk is back. The only thing is, every time I think I am ready, like literally ready to hop in the car and head to the animal shelter, I freak myself out with my thoughts. My thoughts of, “but what if the dog is incredibly hard to train… and what about all the time and attention he will need… and what about all the food I have all over the place – ALL DAY LONG… and what about my sleep… what about everything”. These are just SOME of the thoughts running through my head every hour for the last few days!

I want a dog SO bad. Like it’s someone to keep me company, take on hikes and snuggle with in bed, but it’s this first year that I am concerned about. I honestly have zero time to spare at the moment and if I do get a dog, I want a well-trained dog. One who will actually listen to me, so I am worried that I won’t have the proper time to actually spend training it.

The other thing I could do is get an older dog, but then I worry we just won’t have the some bond.

UGH. The decisions.

But umm, if I do get a dog, he has got to be BIG and FLUFFY. I just could not have it any other way.

Ok, sorry for the major detour there.

I’ve got myself back together and I’m ready to talk crispy buffalo cheddar potato nachos.

These nachos are just not your typical nachos. First things first, instead of tortilla chips I used thinly sliced potatoes. That may seem weird, but I promise it’s the best thing ever. The potatoes are not fried, but they do get coated in olive oil, salt + pepper and then baked to perfection. I sliced my taters pretty thin so the taters on the outside of the pan got a little crispy and the ones towards the middle stayed a little softer. It was just the way I wanted. YUM!

Wait though, that’s not even the best part. After the potatoes get baked, they get tossed with buffalo sauce. My homemade buttery buffalo sauce. Yes, yes, yes.

And then obviously, the cheese. The cheese is everything. I used a combo of sharp cheddar and gorgonzola. Really? It does not get better.

Crispy Buffalo Cheddar Potato Nachos.

Ingredients

  • 4 slice russet potatoes in 1/4 inch rounds
  • 4 tablespoons olive oil
  • 1 teaspoon seasoned salt divided
  • salt+ pepper to taste
  • 1/2 cup butter melted
  • 1/2 cup hot sauce I like to use Franks Hot Sauce
  • 6 ounces sharp cheddar cheese shredded
  • 4 ounces gorgonzola or blue cheese crumbled
  • 1 avocado sliced
  • chopped cilantro + green onion for serving

Instructions

  • Preheat the oven 425 degrees F. Line 2 baking sheets with parchment paper.
  • Divide the thinly sliced potato rounds among the baking sheets. Drizzle the potatoes evenly with olive oil. Sprinkle with 1/2 teaspoon seasoned salt and then season the potatoes to taste with salt + pepper.
  • Place in the oven and bake for 20-25 minutes, watching closely to make sure none of the rounds are burning. I found it helpful to rotate the pans and toss the potatoes around half way through cooking to ensure even baking.
  • While the potatoes are baking, whisk together the butter, hot sauce and remaining 1/2 teaspoon seasoned salt.
  • When the potatoes are crisp and lightly golden, remove them from the oven and drizzle with the buffalo sauce. Add the cheddar and blue cheese. Return the pans to the oven and bake for 5 minutes or until the cheese is melted. Remove and top with fresh cilantro, green onions and sliced avocado. Serve with ranch.

Notes

*To make this heartier, feel free to add shredded chicken and or bacon. *You could also make this healthier buy adding roasted broccoli to the mix!

    Getting a pet is a huge decision and a huge responsibility, but, and I mean this in the nicest friendliest way, I think you’re overthinking it 😉 Pets are definitely work, but you will find the time for them because they love you unconditionally and bring you so much joy. With as much time as you must spend on your own, I think a dog or cat would be some pretty awesome company. I’ve got a kitty in my lap as I type this!

    We got our dog from a rescue organization when she was 6 months old, which meant we got to skip pretty much all of the potty training. She was still young enough that she looked and acted like a puppy and we felt like we were her first family, but old enough that she had already learned plenty of things.

  2. You are right: dogs are a lot of ongoing work, and the training never stops. That said, it is extremely rewarding, and sometimes your dog is the only thing that seems to understand. It’s very much like kids. Like, we can all tell you love Asher like crazy, but still, there are things she doesn’t understand, she probably makes some poor choices sometimes, or does something a little naughty, etc. but that doesn’t mean you love her less…if it’s anything like my relationship with my siblings ( 🙂 ), being around her simultaneously stretches you, teaches you things about yourself, challenges you, enriches your life, makes you glad to be a alive and overwhelmed with love and gratitude all at the same time. In my experience, this is very similar to my experience with my dog. I cannot imagine my life without having gotten her, but I have to always be on-call, aware to what she is doing and ready to intervene at a moment’s notice (and she is 11 :O ). It’s just a personal decision, about what you need in this place in your life right now. I think you’re doing a very wise thing to consider both the love/work sides of the dog issue, and the only thing further I think I would recommend is to research, read, research, read all you can, especially if you are getting a mixed breed, so you can go in with your eyes wide open, knowing what to expect from the dog’s personality, trainability, etc.

  3. I would suggest adopting a slightly older dog- 3-5 years old. That way you can skip the training and mischevious puppy years. And its easier to see their personalities when you adopt a bit older. I hope you rescue!

  4. Adopt! Puppies are cute and all, but if you get a dog that’s already a year old you get to skip all the pooping-in-the-house and most of the training! It totally will be ready to bond with you and be your BFF. Truly, most people get puppies and then realize they are too much work and get rid of them, which leaves a lot of dogs out there who need someone to love. Shelters are full of dogs who need a good home like yours.

    1. Seriously, adopting a dog will create a bond between you and your furry friend. Shelter dogs look for love even more than normal dogs; they seem to be able to sense your interaction with them and the love between the two of you. I just adopted a dog there weeks ago and she’s changed my life for the better. She’s half Lab, half basset hound and the most adorable snuggly creature you could imagine. You can always go to the Humane Society and visit with the dogs to see how they act and interact with you and your family before adopting. A lot of adoption places also have a 30 day “guarantee” that you can bring them back in if you aren’t getting along for whatever reason, but I don’t see myself using that one. 🙂 Good luck!

    She is so fluffy and so much fun! Yes it is work, that’s for sure. I guess what feels like the most work is potty training her and all the clean ups of the accidents she’s had. But having said that, you’ll probably manage to fit her into your life and I can say it’s also healthy having a puppy around. I spend a lot of time by myself as well, and it’s so nice to have them keep you company. They inspire you to be healthy cause they’ll make you get out and go for walks… etc. And they bring so much love and playfulness into your life. I think it’s a big commitment (we were scared of this decision as well) and comes with work, but they definitely give a lot back. And I’m looking forward to the time when she is potty trained, which I’m sure will happen yet. In the beginning when we would walk her with a leash, I was thinking, my goodness, will she ever get how to do this. Now she’s doing great! So that gives me hope that the potty training will get better too. Anyways… that was my long rant… I hope that helped a little. Good luck making a decision. 🙂

    Things will work out when you get a dog, try not worry so much.
    The hubby and I went to the animal shelter for one dog, came home with three! 6 weeks, 3 months and 6 months. All very different and all with different personalities. They are all so precious….the baby was a ball of fluff and fitted in my hand ! we had no idea what she would turn out like, the vet had no clue either, but she is now medium-sized, fluffy and scruffy and need I say they are all spoilt and loved so so much.
    Happy dog hunting, you won’t regret it.

  8. I always grew up with cats but getting a dog was the best thing ever. It is a TON of work though even though she’s 7 years old now. We just recently went through a personality change for seemingly no reason that freaked me out. $250 vet visit later all blood work is good and we’re adjusting to a new normal for our walks in the morning and keeping the TV on during the day to keep her company. Still her kisses when I get home from work every day make it all worth it.

    I would highly recommend reading the book The Art of Raising a Puppy. It has great chapters on how to prepare and what to think about when picking a dog. Even if you don’t get a puppy it’s a great resource.

  10. These nachos are happening…I’m going to throw some chicken in and call it dinner in front of the tv while football is on!!! As for a dog….get one..my dog passed in October and I waited a whole week to get a puppy because I could be without a dog…now I have an 11 month old black lab that will be one in two weeks and he’s perfect…well trained (didn’t take a lot of effort) and loves playing, walks and snuggling..perfect for long cold winters…get one.

  11. Go for the dog! I had the same concerns about a puppy but my family won over and now we have a sweet border collie pup who is full of it, but a great addition to our lives.

  12. If yesterday was the onion rings today is the nachos don’t think I will survive until I get home aghh!
    Dog’s are definitely more fun and well trained even better, and with food everywhere you definitely need to have a well trained one. I don’t think you need to worry about not bonding with an old dog, if you love them, they love you back even more! There’s so many old dogs waiting to be adopted.. 🙁
