A new summer grilling favorite, Chipotle Cheddar Chicken Burgers. Smoky, slightly spicy, chipotle-seasoned chicken burgers grilled until crispy with melty cheddar cheese. The burgers are then sandwiched between toasted buns and topped with creamy, spicy-sweet, smoky mayo. These yummy chicken burgers are simple to make and full of so much flavor. Friends and family will love them!
If you scroll through the 3000+ recipes on this website, you will only find a handful of burger recipes. I’m not going to lie, I never make burgers. My thinking is that a good burger is a good burger. You need high-quality beef, cheese, and really good buns. Add any and all extras that you enjoy. Could be pickles, bacon, mayo, or nothing. A good cheeseburger is just that, simple and delicious. It doesn’t need anything too fancy, especially when you’re making them at home.
That said, I still have ideas, just not really for beef burgers, as those are yummiest just as they are.
But a chicken burger? Well, that needs some additional flavor. I have loved the idea of this burger for the longest time. And with the 4th of July being tomorrow, the time to share was now or never.
So here we are, these are my chipotle cheddar chicken burgers. I don’t love the photos (I hate shooting burgers!), but I do love the recipe.
Step 1: mix the burger ingredients
Working in a bowl, mix together everything needed for the burger patty. Panko bread crumbs, chopped chipotle in adobo, smoked paprika, chili powder, salt, and pepper. Simple seasoning, but so yummy.
And the panko bread crumbs help the burgers hold up nicely while cooking.
Step 2: form the burgers
Now divide the meat into four pieces and then shape them into four burgers. I like to make mine thinner to ensure even cooking.
You can grill the burgers on an outdoor grill, in a grill pan, or in a skillet. I prefer a skillet, but do what’s most convenient for you.
Step 3: cook up the burgers
The key to cooking these is low and slow over medium heat. This ensures they cook evenly all the way through. Then add the cheese slices and let them get nice and melty.
During this time, I also toast up my buns.
Step 4: make the herby corn + mayo
Mix cilantro, grilled corn, chili powder, lime juice, and sea salt.
The mayo comes next, it’s a spicy/smoky/sweet mayo. So mayo, chipotle, and sweet Thai chili sauce. I’m telling you this sauce is so addicting. I just know you’ll love it.
Step 5: now assemble
Keep it simple. Take the toasted buns and spread them with a good slather of mayo. Then the cheesy burgers, avocado (I recommend a little sea salt on top), and corn.
Finish with the top bun and serve with extra mayo on the side. And I wouldn’t say no to some ketchup too, I do love me some ketchup.
A great burger recipe for summer, and of course, the 4th. Everyone’s going to really enjoy these. And we just love how easy they are too!

This is wonderful. So flavorful and not dry at all. My toddlers loved it, too. Your chipotle chicken tacos are my husband’s favorite meal, and these have a very similar flavor profile, so I knew it would be a hit. And the sweet mayo – oh my goodness. I’m not even a mayo fan, but this stuff makes me weak in the knees. I want to eat it on everything. I ran out of chipotle chilis in adobo, so I used chipotle chili powder to taste as a replacement in the mayo. It was all wonderful together, and the burgers reheat well for leftovers, too.

10/10 will definitely be making these again! They were delicious! I went easy on the chipotles knowing that I didn’t want to make them too spicy and they turned out great! I also did not grill the corn, but would like to try that next time along with getting some nicer buns!

How is the cook time 10 minutes if burgers need to cook for 8-10 minutes each side (and cheese presumably needs 1-2 minutes more)? These were pretty good, but the cook time guidelines were off. The chipotle chilis in adobo I got were extremely spicy (seems like this can vary a lot by brand, because I don’t remember this being the case with previous ones) and 2T would have made it inedible, glad I tasted it first. Corn doesn’t really stay on the burger – maybe mixing it into the mayo would have worked better, or just as a side dish.

I really enjoyed this recipe. It was super easy to put together. I’ll admit I didn’t grill the corn and put it on the burger, I just made some and ate it on the side.
The sweet chipotle Mayo was a great switch up from the usual spicy Mayo.
I ate the burgers on Texas toast and that was another great way to elevate the dish.

Every part of this delicious recipe was incredible! I was timid with the chipotles, so went on the lower side, but feel I can turn up the heat next time without being overwhelmed. So, so yummy! I’ll be making these again soon, especially where fresh sweet corn is in season.
