My Chopped Buffalo Chicken Skewer Salad just might become your new summer dinner staple. Spicy, saucy buffalo chicken grilled up on skewers and tossed together with fresh greens, grilled corn, avocado, cheddar cheese cubes, and crispy bacon. Be generous with the creamy jalapeño ranch dressing, it’s extra delicious on top of this spicy-sweet honey buffalo chicken. A perfectly balanced summer dinner salad everyone will love.
I always think of buffalo chicken in the fall. It feels very much like a game day recipe to enjoy during the fall football season. But buffalo chicken is such a favorite that I thought, why not serve it up in the summer too?
I started thinking about a buffalo chicken salad and thought it sounded so yummy! I wanted it to be on the lighter side, so I knew grilling up the chicken on skewers was the way to go. Super fun for summer and we get to skip that tedious breading and frying process. Gotta love that!
Step 1: make the honey buffalo sauce
I always make my own buffalo sauce, which is just hot sauce, melted butter, and seasoned salt. Mix up your own or use store-bought buffalo sauce. Then mix with a few drizzles of honey.
The honey makes this buffalo sauce so special. It adds the slightest bit of sweetness to balance out all the spice!
Step 2: season the chicken, skewer, and grill
I like to cube the chicken, then season it with seasoned salt and black pepper. Now is when I toss the chicken with a bit of the honey buffalo sauce.
Once the chicken is on the skewers, grill each skewer until lightly charred and cooked through.
Step 3: the dressing
This is a creamy jalapeño ranch with yogurt, mayo, and lots of pickled jalapeños. I blend everything up in a blender until creamy.
You can taste and then adjust the salt and pepper from here. The dressing is obviously key, it adds not only creaminess but flavor.
Step 4: toss the salad
In a big bowl, toss together everything for the salad with the dressing. Then, when the chicken is ready, I place one 0r two skewers onto each salad. Add extra dressing and extra honey buffalo sauce. So delish.
Once everything comes together – the greens, avocado, bacon, cheese, dressing, and chicken, it becomes a big beautiful summer salad.
Every bite is special, and the skewers make it even more fun…exactly how all of our salads should be!

Totally YUM. Perfect for summer and easily adapted for my vegetarian…..no bacon, chicken on the side, give haloumi or tofu or paneer the “buffalo treatment.” There is plenty of dressing so you can have the salad again without making more dressing.
Hey Karen,
Happy Sunday!!🍋☀️ I appreciate you trying this recipe out and your comment, so glad to hear it was a winner! xT
LOVE this salad! Perfect amount of spice and creaminess. I love a salad full of all the things. I’m a big fan of Buffalo sauce so I tossed my chicken in the sauce again after cooking/searing.
Highly recommend this recipe. Great for dinner and leftovers the next day!

Hi Emily,
Happy Wednesday!! I am thrilled to hear that this recipe turned out well for you, thanks a lot for making it! xx
Very delicious. My whole family really enjoyed it. I didn’t know the peperoncini would be so hot and wouldn’t have bought them if I’d known (I put them on the side after I tested one and no one wanted them). Perhaps indicate that in your recipes?
Hi Clare,
Happy Sunday!! I am thrilled to hear that this recipe was enjoyed, thanks for making it and your feedback! Sorry to hear you found the peperoncini to be spicy, are you sure that’s what you bought? They are pickled so really don’t have that much heat to them:) 🌼🥑 xx
Love, love, LOVE this salad! I just finished it and can’t wait to make it again!

Tiegan, Clo here my mistake I reread it’s the extra Buffalo sauce on the side. Thank you
Hi Tiegan, hope to make this in the next couple days. I happen to have all the ingredients fresh and ripe avocado. I noticed the dressing is pinkish/light orange. Did you add some buffalo sauce or perhaps the dressing, also thought smoked paprika? Thank you. Looks amazing!
Hi Clo,
That’s just a side of some ranch mixed with buffalo sauce:) Let me know if you have any other questions, I hope you love this recipe! xT
This was delicious! It was such a hearty and satisfying dinner salad. I did swap out the corn for sweet potato (didn’t have corn on hand). Sweet potato worked really well!

I JUST MADE THIS! And yep, I’m putting this into rotation. The flavors are amazing – especially because I love spice, but of course, that can be adjusted for all spice tolerances. Thanks Tieghan for another winner winner chicken salad summer dinner. (Sorry, I had to.)

Wanting to make this for my parents when they come home from traveling on the fourth… wondering if I can make the dressing in advance and store in the fridge?
Thank you!
