My Chopped Buffalo Chicken Skewer Salad just might become your new summer dinner staple. Spicy, saucy buffalo chicken grilled up on skewers and tossed together with fresh greens, grilled corn, avocado, cheddar cheese cubes, and crispy bacon. Be generous with the creamy jalapeño ranch dressing, it’s extra delicious on top of this spicy-sweet honey buffalo chicken. A perfectly balanced summer dinner salad everyone will love.
I always think of buffalo chicken in the fall. It feels very much like a game day recipe to enjoy during the fall football season. But buffalo chicken is such a favorite that I thought, why not serve it up in the summer too?
I started thinking about a buffalo chicken salad and thought it sounded so yummy! I wanted it to be on the lighter side, so I knew grilling up the chicken on skewers was the way to go. Super fun for summer and we get to skip that tedious breading and frying process. Gotta love that!
Step 1: make the honey buffalo sauce
I always make my own buffalo sauce, which is just hot sauce, melted butter, and seasoned salt. Mix up your own or use store-bought buffalo sauce. Then mix with a few drizzles of honey.
The honey makes this buffalo sauce so special. It adds the slightest bit of sweetness to balance out all the spice!
Step 2: season the chicken, skewer, and grill
I like to cube the chicken, then season it with seasoned salt and black pepper. Now is when I toss the chicken with a bit of the honey buffalo sauce.
Once the chicken is on the skewers, grill each skewer until lightly charred and cooked through.
Step 3: the dressing
This is a creamy jalapeño ranch with yogurt, mayo, and lots of pickled jalapeños. I blend everything up in a blender until creamy.
You can taste and then adjust the salt and pepper from here. The dressing is obviously key, it adds not only creaminess but flavor.
Step 4: toss the salad
In a big bowl, toss together everything for the salad with the dressing. Then, when the chicken is ready, I place one 0r two skewers onto each salad. Add extra dressing and extra honey buffalo sauce. So delish.
Once everything comes together – the greens, avocado, bacon, cheese, dressing, and chicken, it becomes a big beautiful summer salad.
Every bite is special, and the skewers make it even more fun…exactly how all of our salads should be!

I made this last night and my husband and I loved it! I marinated the chicken in the hot sauce for about an hour. I ended up stir frying the chicken chunks instead of skewering them because it was raining.
Hey Nancy,
I am thrilled to hear that this recipe turned out well for you, thanks a lot for making it! Have a great holiday weekend! 🇺🇸🎆 xT
This was one of my favorites! I did everything BUT the bacon. I am weird like that. I never say “let’s have a salad.” Yet, when I saw this picture, I instantly wanted to make it. It was so good. I will make it again. Thank you!
Lol thanks so much Jen!! So glad to hear that you enjoyed this recipe and thanks a lot for making it! xT
Wow, this was delicious. Great for a summer evening. I used store bought buffalo sauce and added the honey. The salad dressing is outstanding. Thank you for another great dinner.
Hi Ellen,
I am thrilled to hear that this recipe turned out well for you, thanks a lot for making it! Have a great holiday weekend! 🇺🇸🎆 xT
Hi Tieghan – quick question; is there any potential substitute for the honey?
Hi Elizabeth,
Sure, maple syrup would also work well for you! Please let me know if you have any other questions, I hope you love this recipe! xT
Absolutely fantastic recipe and will be on the weekly rotation for sure in our household. It was quick and easy to make (and most of the recipe I made in advance so all we had to do was grill when it came to dinner time!).
The jalapeño ranch was so good with the Buffalo. My ranch was a little thick, so I thinned it out with the brine from the pickled jalapeños and it ended up so tasty. The basil in it was delicious!! Thank you, Tieghan, for sharing such delicious recipes – about 90% of our “go to” recipes in our household are all HBH!
Thanks so much Annie!! I love to hear that this salad turned out well for you! Thanks so much for making it and your comment! Happy Friday! xT
Looks amazing. Dumb question, how long do you grill corn for? I’ve never done it before 😅. Also for everyone upset about basil/how many steps…you do know you can just buy ranch, right? It’s a fantastic, FREE recipe. Sheesh.
Hi Lanee,
Not dumb at all!! I would say it really depends how hot your grill is, but about 15-20 minutes:) Once you get some nice grill marks you’re good to go! Let me know if you give this recipe a try, I hope you love it! xx
Oh my goodness- this was so incredibly delicious!! Such a great combination of flavors & I love that it’s customizable! Will be making this all summer!
Hi Renee,
Happy Friday!!🇺🇸🫐🍒 Thanks a bunch for trying this recipe out and your comment, I love to hear that it was a winner! xx
What’s in the little jar? Like a buffalo ranch sauce? Looks amazing I want to try!!!!
Hi Marcy,
That’s the dressing:) Let me know if you have any other questions, I hope you love this recipe! xT
The sauce the previous commenter is talking about in your photos is orange – it looks like a buffalo ranch or something like that? The dressing you refer to in the recipe is green. What is in the orange sauce in the ramekin pictured with the dish in all of your photos?
Ohh, that’s just some ranch mixed with buffalo sauce:)
Yay! That is the answer I was looking for!!!! thank you! Making it tonight!!!!
She’s referring to the orange dressing which doesn’t include a recipe. Is it possible to get that recipe?
I don’t have a recipe for that, it’s just ranch mixed with some buffalo sauce:)
Absolutely delish but curious what the orange dressing is in the pics above. I thought it was the Buffalo sauce but it’s creamier than that. Looks like it would be a good addition to the salad.
Hi Amy,
It’s just some ranch mixed with buffalo sauce:) xx
Made this for dinner tonight. It is DELICIOUS! The dressing is so fresh and yummy! I love how easy and full-proof your recipes are. Can’t wait to try another one!
Hi Mary,
I love to hear that this recipe turned out well for you, thanks so much for making it and your comment! xx
Hi Tieghan – this was a winner for me! I’m going away tomorrow so had to make some mods to use up refrigerator ingredients and not have leftovers. I used chicken thighs because we prefer them. Added a cucumber. Made blue cheese dressing with ranch. Added pickled red onion and Trader Joe’s Crunchy Jalapeño Pieces which rocked this salad! Will definitely be making this again.
Hi Pam,
Awesome!! I’m so glad to hear that this salad was a hit, thanks a lot for making it and sharing your review! xT
The flavors were spot on. I used pickled hot jalapeños and might not next time, but my son came back for second helpings.
This recipe has tons of steps and takes quite some time to make. I even used pre-shredded Romain and omitted the avocado (because I forgot). That may have cooled down the dressing. I wish your recipes portrayed the true reality of prep and cook.
Thanks so much for trying this recipe Carol! I love to hear that it was a winner and appreciate you making it! Sorry this took longer to make than expected! xx
Okay, this is very good without the chicken for us; keep the salad with everything in it and the dressing is fine minus the mayo (don’t have anything to do with that stuff) and we’re good to go.
Great! So glad to hear you enjoyed this recipe without the chicken:) Thanks for making it! xx
Your BIG summer salads are giving me life! MORE PLEASE!!!!!
Lol thanks so much Salma!! More to come:)
Love the basil in the dressing. That’s summer! Thank you Tieghan for another wonderful recipe!
Thanks Amy!! Let me know if you give this salad a try, I hope it’s a hit! xT
I want to challenge you to post a full week of savory recipes that DO NOT include basil. This Jalapeno ranch does not need basil. All your dressings taste the same because of the basil.
For every basil hater, there’s a basil lover with an overflowing summer garden ready to use! Leave out the basil if you wish and keep it moving!
Yeah, I mean…Deb makes a good point. You can leave the basil out and/or sub for something else. Like why would you “challenge” someone to cater to your bizarre, narcissistic demands? Nobody is interested in appeasing you.
