If there was ever a cookie that screamed Christmas, itโ€™s these Eggnog Frosted Chai Snickerdoodle Snowmen.

Happy (Christmas) Cookie Friday!

Iโ€™m pretty excited the weekend is here. I have grand plans of doing some serious online Christmas shopping (I am horribly behind and stressing about how close Christmas isโ€ฆyikes!), and having a โ€œChristmas dayโ€ with Asher on Sunday. She is the cutest, and she text me on Wednesday night asking when we could have our annual Christmas day. Obviously, I canโ€™t let being busy, and the hustle that comes with the end of the year, come between spending time with this girl, so Sunday afternoon it is!

Pretty excited. Asher wantโ€™s to make homemade lotions and sugar scrubs, decorate cookies, and watch Christmas movies. Anything else we need to add to out list? Would love to know what holiday things you guys love doing.

Iโ€™ll be spending a good part of Saturday over in Breckenridge watching my younger brother Red compete in the 2017 Dew Tour Menโ€™s Slopestyle finals. Itโ€™s a pretty big competition, as itโ€™s one of the last Olympic qualifiers. Heโ€™s currently the youngest rider competing, he qualified in first for the US team and second overall. To say that I am a little proud would be an understatement. I donโ€™t even care how he does tomorrow, just so happy and excited for this kid. Only seventeen and living his life to its best.

Since we have so many things to celebrate today, I thought we would talk cookies!

Tis the season, right!?!

RIGHT.

Guysโ€ฆthese snickerdoodles? They are extra special snickerdoodles.

Say hello to eggnog frosted, chai scented,ย snickerdoodle SNOWMEN.

Side Note: please excuse all the shouting in todayโ€™s post. I am just way too excited.

Oh these cookies. If Christmas had a cookie, I do think these would be it. Okay, maybe they would be reindeer or santa cookies? If I had the skills I would have attempted those instead of snowmen, but straight up? I am not the cookie decorator type. Snowmen are my kind of thing, and you know what? I think theyโ€™re pretty freaking cute.

The bestest part? Aside from taste of course? These snowmen are EASY. Iโ€™m talking no rolling out dough, no weird food dyes, no fancy (and tasteless) frosting, no dough chilling, no special tools, no hair pulling, and no tears.

Nope, none of that. Just cute, yummy, delicious cookies.

The cookie base is pretty simple. I like to use a little cream cheese in my dough to keep the snickerdoodles extra soft and extra doughy. I rolled each dough ball in my homemade chai sugar and then simply placed one smaller dough ball on top of a larger one to create a snowman. Yes, just one on top of the other.

Again, nothing fancy or complicated here.

I frosted each cookie with eggnog buttercream and decorated with Reeseโ€™s and chocolateโ€ฆso all the yummy things.

For the snowmanโ€™s hat, I used half of a mini Reeseโ€™s and then crushed Reeseโ€™s Pieces for his nose. I built his buttons out of chocolate and used a little red sanding sugar for his scarf.

I finished each cookie with a sprinkle more of chai sugar and done.

Simple, fun, and delicious. The way all cookies should be.

Also, the combo of chai sugar on the cookies, plus eggnog in the frosting? THE BEST.

These are the perfect cookie to bake with friends, family, young kids, anyone really. Everyone has fun making them and putting their own personal touches on their snowman.

Planning to surprise Asher with these on Sunday as part of our Christmas day. She has been begging me to make snowman cookies all month long. Actually, she has been begging me to make snowman cookies since October, so I know that she is going to LOVE these and have fun decorating themโ€ฆand then eating themโ€ฆalong with a mug of hot cocoa while watching The Santa Clause (our favorite). Sounds perfect, right?

It will be!

Ingredients

Chai Spice

Eggnog Frosting

Instructions

  • 1. Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
    2. In a medium bowl, combine the flour, baking soda, and baking powder.
    3. Using an electric mixer, in a large bowl beat together the butter, cream cheese, and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla and beat until combined. Gradually add the flour mixture, mixing until just fully combined.
    4. To make the chai spice sugar. In a small bowl, combine the sugar, cinnamon, ginger, all-spice, and cardamom.
    5. Roll the dough into two sizes of balls. 16 (1 1/2 inch, about 1 tablespoon) size balls, and 16 (3/4 inch, about 2 teaspoons) size balls. Then generously roll through the chai sugar.
    6. To make the snowmen, place 1 smaller baller and 1 larger ball together with the edges touching on the prepared baking sheet, spacing the cookies 2 inches apart. Repeat with the remaining dough balls. Transfer to the oven and bake for 8-10 minutes or until the cookies are just starting to set around the edges. Let cool completely.
    7. To make the frosting, beat together the butter and sugar until creamy. Add the eggnog and nutmeg, beat to combine.
    8. To frost the cooled cookies. Place half a mini Reese's atop the snowman's head. Decorate as desired with candies and melted chocolate.

What do you mean by putting balls on top of each other? Like literally and then theyโ€™ll flatten themselves out into that Susie in the oven or what exactly?

  2. Courtney Gray says:

Hi there! Should the butter be room temperature for the frosting, too?

    1. Tieghan says:

      Hey Courtney,
Yes, that works best! Please let me know if you have any other questions, I hope you love this recipe! xx

  3. priscilla says:

Can the dough be made ahead of time and chilled, say a few days? Would it still be okay as long as it’s brought to room temperature?

    1. Tieghan says:

      Hey Priscilla,
Yes, that would be just fine for you to do! I hope you love this recipe, please let me know if you give the recipe a try! xx

I made these with 2 special little girls 5 and 7 for a cookie exchange. We made 100 so they could take some home. They had a BLAST decorating, rolling the balls in the chai sugar and OMG they taste so amazing. I will say some of the heads didn’t stick to the bodies (maybe too much chai sugar) and they were not easy to frost – the frosting was a bit thick and I am not a baker so I didn’t know how to change it. BUT Oh they tasted SO good. These are our new favorite!!! Fluffy and sweet. thank you! I have some pictures if you want them ๐Ÿ™‚

These cookies are as delicious as they are cute! I made them ahead of our upcoming cookie exchange and per what I read below, freezed them in carefully laid out layers. Iโ€™ve been using the excess Chai sugar mixture in my coffee and oatmeal! I love the little kick you get at the end of the flavor profile from the ginger.

      1. Tieghan says:

Will the cookies stick together once frosted?

    1. halfbakedharvest says:

      Hi Robin,
If you plan to stack these, I would put parchment or wax paper in between the cookies. I hope you love the recipe, please let me know if you give it a try! xTieghan

  6. Melissa says:

I use this recipe, but I tweak it a little. I make normal snickerdoodles, but I use the frosting. My family absolutely loves the frosting! Thank you!

I’m wondering how you store them. Do they freeze after decorating?

      Hey Amber,
You can freeze or store these in an airtight container. I hope you love the recipe, please let me know if you have any other questions! Happy Holidays! xTieghan

What did you use to decorate these? I canโ€™t figure out how to make the noses!

    1. halfbakedharvest says:

      Hey Maddie,
I used an orange M&M for the nose. I hope you love the recipe! Happy Holidays! xTieghan

Fantastic cookies! I was nervous that the chai would be overpowering, but they are actually a bit milder than normal snickerdoodles and not as sweet….which I love! Very easy recipe and so delicious! I actually just made as regular snickerdoodles, not the snowmen, and didnโ€™t frost (not everyone wanted the frosting) and I loved them this way! Will absolutely make again!

    1. halfbakedharvest says:

      Hey Lindsey,
Thanks so much for giving the recipe a try, I am so glad it worked out for you! Happy Holidays! xTieghan

  10. Emily says:

We made these last night and the taste is awesome! Our home smelled amazing all evening. So flavorful with a lovely soft cookie texture and not of crunch from the sugar&spice mix. The eggnog frosting is crazy good but the recipe makes so much of it that we have a lot of leftover – Iโ€™m going to whip up come plain sugar cookies to slather it on.
Two issues we had were that this is a pretty sweet cookie, esp with frosting on top so I will experiment with reducing the sugar. Also, despite following directions out cookie balls didnโ€™t adhere to each other for 80% of the snowmen. Not too sure why, they were right beside each other but the sugar coating almost seemed to prevent them from adhering to make the snowman head and body. All in all a fun, unique recipe that we will tweak a bit and continue to make for the holidays.

      Hey Emily,
Thanks so much for giving the recipe a try, I am so glad they worked out for you! Happy Holidays! xTieghan

I was really excited to try this recipe but was bummed because they were a little bit dry.
The chai spices were tasty and I might try it again and modify the flour ratio the next time.

    1. halfbakedharvest says:

      Hey Jaime,
So sorry these cookies were dry for you. Is there anything I can help with? Let me know! xTieghan
