Thanksgiving 2026 is here, and our recipes are rolling out! I have so many favorites this year, some of my best recipes yet. And I think it’s because of their simplicity, ease, and, most importantly, flavor.

I’m not sure which dish is my favorite this year, but this casserole is definitely a top contender.

I make sweet potato casserole every single Thanksgiving. Depending on the year, I’ll make my Nonnie’s Sweet Potato Casserole or try something new. I often make my crispy sweet potato stacks, too. We really love sweet potatoes!

This casserole is one of my brothers’ favorites. It’s not overly sweet, but instead more savory, with the perfect balance of sweet, spicy, and cheesy flavors. It’s so delicious.

The potatoes are roasted first, not boiled or from a can. Roasting them in their skins is the secret. As the potatoes bake, they soften and naturally caramelize, bringing out even more of their sweetness. It’s such a simple step, but it makes all the difference.

Once roasted, the potatoes are whipped. I love using the food processor to really whip them until light and creamy, but a hand mixer works great too.

Add brown butter, a touch of maple, cinnamon, a little spice, and plenty of parmesan cheese. I know the parmesan might sound funny, but you have to trust me. Trust the recipe! It adds the perfect savory, salty flavor that balances the sweetness of the potatoes.

These really do have the perfect balance. And the best part? You can make them ahead, then bake just before serving. You can even keep them warm in the crockpot, which is so helpful on Thanksgiving when oven space is limited!

A simple sweet potato casserole that’s not overly sweet, full of flavor, and one of my family’s favorites.

The Steps

Step 1: Roast the sweet potatoes

Start with fresh sweet potatoes. Poke a few holes in each one, then roast until very soft and tender. I like to roast them right in their skins. Roast them longer than you think, the softer the better! This allows the potatoes to naturally caramelize and become even sweeter. It’s the easiest thing, but makes such a difference in flavor.

Once they’re cool enough to handle, scoop out the flesh and save those skins!

Step 2: Brown the butter

While the potatoes roast, brown the butter in a skillet until golden and nutty. Add the fresh thyme and let it fry in the butter until crispy. It smells SO GOOD.

Save some of the brown butter and crispy thyme for serving. This is what makes the casserole extra delicious!

Step 3: Whip the potatoes.

Add the roasted sweet potatoes to a food processor with maple syrup, vanilla, cinnamon, chipotle, cayenne, milk, bourbon, parmesan, and some of the brown butter. Whip everything until smooth and creamy, then mix in the eggs.

I love using my food processor because it makes the potatoes extra light and fluffy, but a hand mixer works great too!

And please don’t skip the parmesan. I know it sounds different, but the salty cheese with the sweet potatoes and brown butter is such a delicious combination.

Step 4: Bake and serve.

Spoon the whipped potatoes into a buttered baking dish. You can make little swirls on top with the back of a spoon. Bake until the casserole is set and lightly golden.

Just before serving, warm the remaining brown butter and spoon it over the casserole with all that crispy thyme. Finish with flaky sea salt and black pepper.

It’s simple, but so delicious!

A Few Notes, Tips, and Thanksgiving Ideas

Don’t toss the sweet potato skins!

This is a fun little extra, especially for Thanksgiving. If your roasted sweet potato skins are still in nice pieces, save them! Make sweet potato skin chips! Fry in a shallow layer of hot oil until crispy and golden. Sprinkle with flaky salt.

You can crumble the crispy skins over the finished casserole along with the brown butter and thyme. They add the best little crunch! Or serve them on the side for snacking like a potato chip. Just make sure the skins are nice and dry before frying so the oil doesn’t splatter.

Make this ahead!

This is one of my favorite things about this recipe. You can prepare the entire casserole a day ahead, cover, and keep it in the fridge. On Thanksgiving, simply bake until warmed through and set. Add the brown butter and crispy thyme just before serving.

One less dish to worry about!

Crockpot Serving

I know how crazy Thanksgiving cooking can get, especially when the turkey is taking up the entire oven.

You can bake this earlier in the day, then transfer it to a slow cooker on the warm setting to keep it hot. Add a splash of milk if the potatoes need loosening up. I would save the brown butter, crispy thyme, and crispy potato skins until just before serving.

A few things that make this extra good.

Roast the potatoes, don’t boil them. You want all that natural sweetness without adding extra water.

Use freshly grated parmesan. It adds just the right amount of salty, savory flavor.

And don’t be afraid to adjust the spices. I love a little heat from the chipotle and cayenne, but you can use less if your family prefers things mild.

For Thanksgiving serving.

I love serving this right in the baking dish, with the brown butter spooned over the top just as everyone sits down. The crispy thyme makes it look so pretty, and you really don’t need to do anything fancy.

If you have extra crispy sweet potato skins, scatter those over the top too!

This is especially delicious alongside turkey, stuffing, and all the classic Thanksgiving sides. It’s sweet, savory, buttery, and just a little spicy. The perfect balance.

And unlike a traditional sweet potato casserole with marshmallows, this one isn’t overly sweet. Which is why my family loves it so much!

Ingredients

Instructions

  • Roast the sweet potatoes. Preheat the oven to 400°F. Poke a few holes in each sweet potato with a fork. Bake for about 1 hour to 1 hour 20 minutes, always go a little longer, until very soft and tender. Let cool slightly, then scoop out the flesh, reserving the skins if desired.
  • Brown the butter. In a skillet over medium heat, brown the butter until golden and nutty. Add the fresh thyme and cook for 1–2 minutes, until crispy. Remove from the heat, reserving some of the brown butter and crispy thyme for serving
  • Whip the potatoes. Reduce the oven temperature to 350°F. Add the roasted sweet potatoes, maple syrup, vanilla, cinnamon, chipotle, cayenne, milk, bourbon, parmesan, and 5–6 tablespoons of brown butter to a food processor. Season with salt and pepper. Blend until smooth and creamy, then mix in the eggs. Alternatively, use an electric mixer.
  • Bake and serve. Spoon the whipped sweet potatoes into a buttered 9×13-inch baking dish or a similarly sized dish. Bake for 35–40 minutes, until set. Spoon the remaining warm brown butter and crispy thyme over the casserole. Finish with flaky sea salt and freshly cracked black pepper. Serve warm.

Notes

Make Ahead: Assemble the casserole up to 1 day ahead, cover, and refrigerate. Bake before serving, adding a little extra time as needed until set and heated through. Reserve the brown butter and crispy thyme for topping just before serving.
Tip: Roasting the sweet potatoes brings out their natural sweetness without adding extra moisture. They caramelize in the oven and become SO DELICIOUS!
