I knew my August recipe lineup had to include summer peaches. Every year, I wait as patiently as I can for those beautiful August peaches. It’s never easy. I always want to start baking with peaches the second they appear at the farmers market, but I’ve learned it’s worth waiting until they’re perfectly ripe, juicy, and at their sweetest.

I’ve wanted to share these cookies for a long time. Last fall, I made one of my favorites, my Iced Apple Cider Oatmeal Cookies. The minute I pulled them from the oven, I started thinking about how delicious they would be with fresh peaches instead. But it was apple season, so I tucked the idea away and waited until summer to start testing.

These cookies took a little work. Fresh fruit can be tricky to bake with, especially in cookies, but after plenty of testing, we finally landed on what I think is the perfect recipe.

Everyone on our team has been baking these all week, and we are completely obsessed. The sweet peaches paired with the rich, caramel-like flavor of browned butter are such a delicious combination, and the icing truly takes them over the top. The Steps

Step 1: Mix the Peaches

Stir together the peach jam and fresh peaches. Let the mixture sit while you brown the butter. This gives the peaches time to release some of their juices and creates even more flavor.

My Tip: Use ripe peaches that are still slightly firm so they hold their shape in the cookies. And don’t worry if the jam isn’t perfectly mixed in. Those little pockets and swirls of jam are exactly what you want.

Step 2: Brown the Butter

Cook the butter over medium heat until it’s golden and smells rich and nutty, about 3 to 4 minutes. Transfer it to a heatproof bowl and let it cool slightly before making the dough.

Brown Butter Advice: Keep a close eye on the butter during the last minute. It can go from perfectly browned to burnt very quickly. As soon as it smells toasted and you see golden brown bits on the bottom of the pan, it’s ready.

Step 3: Make the Dough

Whisk the brown sugar, eggs, and vanilla into the browned butter until smooth. Stir in the flour, oats, baking soda, cinnamon, and salt until just combined. Gently fold in the peach mixture, leaving ribbons of jam swirled throughout the dough.

Keep This in Mind: Less mixing is always better. Fold in the peaches with just a few gentle turns so you keep those beautiful swirls of peach jam throughout the cookies.

Step 4: Bake

Roll the dough into balls and bake until the edges are just set and the centers still look slightly soft.

My Tip: The cookies will look a little underdone when you pull them from the oven, and that’s exactly what you want. They’ll continue to set as they cool, staying perfectly soft and chewy. And don’t worry if every cookie looks a little different. Those swirls of peach jam make each one perfectly imperfect. I love that no two cookies are exactly alike.

Step 5: Ice the Cookies

Brown the butter, then whisk in the powdered sugar, vanilla, cinnamon, and enough milk to create a thick, smooth icing. Spread it over the cooled cookies while the icing is still warm.

My Tip: The icing sets quickly, so frost the cookies as soon as it’s mixed. If it starts to thicken, simply whisk in another splash of milk until it’s smooth and spreadable again.

Gifting Idea: These are such a fun cookie to package up and share. Stack a few in a bakery box or cellophane bag tied with ribbon, then tuck in a little jar of homemade peach jam or a few beautiful peaches from your favorite farm stand. Instructions

  • 1. Preheat the oven to 350° F. Line a baking sheet with parchment paper. Stir together the jam and peaches.
    2. Brown the butter in a skillet over medium heat, about 3 to 4 minutes. Cool for 5 minutes.
    3. In a mixing bowl, whisk in the brown sugar, eggs, and vanilla. Whisk in the brown butter. Stir in the flour, oats, baking soda, cinnamon, and salt until just combined. Stir in the peaches, leaving ribbons of jam throughout the dough. Try not to overmix it.
    4. Scoop the dough into 2 tablespoon-size balls and place 2 inches apart on the baking sheet. Bake for 10 to 11 minutes, rotating the pan halfway through, until just set around the edges. Cool on the baking sheet.
    5. To make the icing, brown the butter. Cool for 5 minutes, then whisk in the powdered sugar, milk, vanilla, cinnamon, and sea salt until smooth. Dip or drizzle each cookie in the icing, let the icing set up. Store in an airtight container for up to 4 days.
