Half Baked Harvest At Home

20+ new recipes for wholesome comfort food made with everyday ingredients. Pre-order today! HBH At Home will be released on Tuesday, February 23rd!

A little Tuesday sweet treat today! If youโ€™ve been following for a while, like a long while, you may recall that back in the early days of HBH Nutella was a recurring ingredient that I used in many of my dessert recipes.

Honestly, itโ€™s kind of a special ingredient. Way back whenโ€ฆthink 19-year-old me or even youngerโ€ฆwhen I was still living with my family. Every day when Asher came home from school Iโ€™d make her a Nutella sandwich using flour tortillas. She was absolutely obsessed.

Itโ€™s special because it was kind of our thing. Now every time I see a jar of Nutella I always think of Asher.

These days I rarely use Nutella. I try to create sweets that are made more with natural sugars, like maple syrup, dates, and honey. But sometimes you just have to give in to the things you love. Or go for the things you wouldnโ€™t normally enjoy every day!

So thatโ€™s what weโ€™re doing today!! And trust me, this Nutella cookie recipe is worth every sweet decadent bite!

The details

First things first, brown the butter. Every dessert is made better with a little brown butter. I think it really highlights the hazelnut flavors and rich vanilla in the Nutella.

Brown the butter in a medium skillet. Just let the butter cook until it bubbles up and foams on top. This is when I turn the heat off and continue to allow the butter to cook in the pan.

Little brown bits will form and thatโ€™s when you know the butter is browned.

From here add the browned butter to the bowl of a stand mixer. Itโ€™s going to smell amazing with nutty notes of vanilla.

Let that cool for just a few minutes. Then in goes all the wet ingredients: brown sugar, granulated sugar, eggs, and vanilla.

Next, mix in the dry ingredients: flour, old-fashioned rolled oats, baking soda, and salt. Then fold in the semi sweet chocolate chips.

All the usual oatmeal cookie ingredients.

Now comes the Nutella. Scoop the cookie dough into pretty big dough balls, about a 1/4 cup in size. Then cut each ball in half. Flatten out the dough and add Nutella to the center. Use the other round of dough to enclose the Nutella.

Then place the cookie dough balls on a baking sheet, flatten the balls down gently, because theyโ€™ll be a little thick, and bake!

Theyโ€™ll come out with melty chocolate and wonderful smells of sweet butter, sugar, and vanilla baking away. Itโ€™s pretty hard not to break into one immediately!

Ingredientsย

Instructionsย

  • 1. Preheat the oven to 350ยฐ F. Line a baking sheet with parchment paper.
    2. Add the butter to a skillet set over medium heat. Cook until the butter begins to brown, about 3-4 minutes. Remove from the heat and transfer to a heatproof bowl. Let cool 5 minutes or so.
    3. To the brown butter, mix in the brown sugar, granulated sugar, eggs, and vanilla, mixing until smooth. Add the flour, oats, baking soda, and salt. Gently fold in the chocolate chips.
    4. Roll the dough into 1/4 cup balls and place 2 inches apart on the prepared baking sheet. Cut each dough ball in half, then flatten the dough down to make room for the Nutella. Add 1 rounded teaspoon to the center of each cookie, then cover with the top cookie half, enclosing the Nutella. Gently flatten each dough ball down. Bake 8 minutes. Remove from the oven, rotate, and tap the baking sheet on the counter 1-2 times to flatten. Bake another 4-6 minutes or until the cookies are just beginning to set on the edges.
    5. Let the cookies cool on the baking sheet. They will continue to cook slightly as they sit on the baking sheet. Sprinkle with sea salt, eat warm or store in an airtight container for up to 4 days.ย

These are starred as a permanent in my cookie recipes! They are perfect exactly as the recipe is written, minus the fact that I doubled the cookie size! What can I say? I love cookies!!

Delicious! I did find that it was easier to roll the halves separately instead of cutting in half! And the Nutella is kind of messy but so good!

These were a hit at work, everyone loved them! I had a bite myself and I appreciate that they are not overly sweet. I saw reviews before making these that their cookies came out cakey. I made sure to spoon the flour into the measuring cup and not to over-mix. And for the tapping, I find that I have to tap more than once or twice. When youโ€™re tapping the baking sheet youโ€™ll see the cookies get flatter, so just keep tapping until theyโ€™re flat enough for your liking. Definitely adding to the rotation!

    1. Tieghan says:

That’s awesome!! Thank you so much for making this recipe and your feedback, love to hear it was enjoyed! xx

These were delicious! Iโ€™ve never made cookies with brown butter before and wow that makes such a difference! The cookies are thicker than I prefer but but still very very good!

A very delicious choc chip cookie ๐Ÿ˜Š
I made mine with biscoff spread instead of Nutella and it was yummy!
Iโ€™ll try the dark choc and Nutella next time.

These turned out picture perfect and were soooo delicious!! Perfect treat to add to a dinner to drop off at a friendโ€™s with a new baby! Definitely making these again. I think the tapping the pan part mid-bake is key to make them flatten a bit.

    1. Tieghan says:

Thanks so much Sarah!! Love to hear that this recipe turned out well for you and I appreciate you making it:) xT

A bit cakey. Maybe reduce the flour. I also tried this recipe by making a thumb print, placing the Nutella in the middle. You’ll get more Nutella.

    1. Tieghan says:

Thank you for trying out the recipe Jeri! xT

To make these same cookies without oats, is it as simple as replacing the 2 cups of oats with flour? Or would it be better to use a different chocolate chip cookie recipe and just fill with Nutella?

    2. Tieghan says:

Thank you so much! Sooo happy to hear you enjoyed this recipe! ๐Ÿ™‚ xT
