Celebrating summer with this Frosted Watermelon Rosemary Frosé. Fresh watermelon juice infused with rosemary and lemon and blended with sweet frozen Rose wine. This frosty frosé is so easy to create. Simply freeze the rosé overnight, then mix everything together in a blender for a summertime cocktail that’s perfectly icy, sweet, and so delicious! A sweet frosted rim keeps everyone coming back for a second round.

Happy cocktail Saturday guys! I’m back for a special post to celebrate the start of warm weather with such a summer cocktail. I wasn’t planning on this post, but sometime mid-week I had a very, very strong desire to make watermelon frose. Did I have the time? NO. Not even close, but we have a special weekend, so why not.

This frosé is simple but made with a slight twist. I froze everyone’s favorite rosé in ice cubes. The wine doesn’t fully freeze in the freezer of course, but it’s close enough. I like to freeze the cubes overnight. Then I make a quick watermelon rosemary juice with a small squeeze of lemon. If you have the time, I’d freeze some of this mix into either ice cubes or popsicles. This step is optional, but the icy popsicles are a fun, delicious way to keep the drink icy without watering it down.

When you have the wine frozen, you can blend and enjoy! Just add all the frozen cubes of rosé to a blender. Add the watermelon juice and blend, blend, blend until the mix is a yummy slushy consistency.

I top my drinks off with a watermelon popsicle and fresh mint. SIMPLE, delicious, and so pretty too.

Made this for July 4. It was amazing. Only problem was I needed more. Will remember that next time.

Hi! This sounds delicious!! Are there any issues with freezing the frose? I would like to make individual servings the night before a bachelorette party and freeze them. Then let them thaw in the cooler throughout the day to drink in the evening. I won’t have access to a blender or fridge / freezer at the bachelorette.

    1. Tieghan says:

      Hi Katie,
That should work well for you! I hope you love the recipe, please let me know if you give it a try! xx

I’ve made these cocktails 3 times, one version with alcohol free rose so my daughter could be included. I used 2 tbsps honey in each recipe. The no alcohol were slushy enough to use a spoon, the others drinkable. Two of the red ice cube trays (from Amazon) took one bottle perfectly. They were outstanding!

    1. Tieghan says:

Can’t wait to make these for my upcoming barbecue! Where did you get those ice cube molds from?

Any other fruit you’d also recommend using?

    1. Tieghan says:

      Hi Jenn,
Are you referring to the popsicles? Those are Dixie cups and the instructions for making them are listed above:) You could use berries as well! Let me know if you give the recipe a try, cheers! xx

  9. Kate E says:

Made these tonight and the crowd loved them. Didn’t strain the watermelon because our vitamix can get the chunks out, and we liked the thickness of having the whole fruit in there. Loved the hint of Rosemary! Would make again. Nice and fresh!

I was going to ask the same question. An AF version sounds perfect! I’m going to try freezing the watermelon juice and then blending them and adding a splash of club soda

    1. halfbakedharvest says:

Thanks! I hope you love the recipe! You could use sparkling water in place of the rose. xTieghan

      1. Kate E. says:

Is there a reason for straining out the watermelon juice? Is it negatively impacted by having the slurry of watermelon purée? Thanks!

        1. halfbakedharvest says:

          Hey Kate,
I prefer not to have any clumps in the drink, but if you don’t want to strain it that would also be okay. I hope you love the recipe. Cheers! xTieghan
