Hey, hi! Happy day before Thanksgiving!
I hope everyone is taking the day to maybe chill out…or maybe you’re prepping for the feast, either way, I hope you’re having a great day! I am cooking…of course, but thankfully my younger brother is in town, and we’ll be filming videos for you all to see throughout the month of December, very excited about this!
I’m also excited about this Thanksgiving leftovers recipe. It’s one that at first, well let’s just say…I was a little unsure about. But after making it, and enjoying it with the fam, I am now so excited to share. It’s absolutely as simple as can be! It’s also a fun way to turn leftovers into something totally new. Plus, there’s croissants, turkey, gravy AND tater tots involved. Yes, yes, YES. Totally serious. It’s indulgent, but I couldn’t think of a better Black Friday dinner!
So, while this recipe is Thanksgiving inspired, my true inspiration was something entirely different. If you are a regular reader, then you’re well aware of just how excited I am for the return of the Gilmore Girls this Friday on Netflix. I literally cannot wait, and am slightly stressing about how I will find the time to watch them all. I mean, four ninety minutes episodes is a lot of time for someone who rarely to never watches TV. I dunno how, but I will figure it out, because my favorite mom and daughter team are back! To celebrate, I obviously had to create some Gilmore Girls inspired food for our day of TV watching and food consumption.
If you’ve ever watched the show, then you already know all about the deep appreciation for food that the girls share. Especially Pop Tarts, diner food, Chinese takeout, pizza, tacos, and yes, tater tots! While I had a million and one ideas for some serious Gilmore TV watching junk food, this dish felt the most in-season and fitting. Plus, when are tater tots ever a bad idea? Answer – they’re always a good idea!
So here’s how this Thanksgiving turkey hot dish works. The concept for this dish is pretty simple, a layer of croissants, turkey, gravy, cheese, and crispy prosciutto, all topped off with a layer of tater tots. Then just bake and dinner is done in under an hour…simple and delicious! I mean, all we’re really doing here is recreating Thanksgiving dinner by baking everything together in a casserole and adding tater tots. You can use whatever kind of leftover rolls you have on hand as your bottom layer. If you’d like, you can even add your leftover roasted veggies. Heck, you can even throw a little cranberry sauce in there. It’s all about what you love, and then just basically adding it to a skillet and topping with tater tots.
I was worried about posting this because it feels a little, well unsophisticated, but let’s be real, it’s delicious, and the Gilmore Girls are anything but sophisticated…and that is why I love them, duh. 🙂
Now please tell me I am not the only one crazy excited for this show to return? If so, I am so sorry for this little rant, but whether you love the show or not, I know you’re going to love this hot dish – trust me!
So this is a must for Friday, right? RIGHT! I am so excited to be spending the holiday with my family, but sad a couple of them will be missing. My youngest brother, Red is in Korea for a competition. We were all a little freaked out Monday. The earthquake that hit southeast of Tokyo, seemed a little too close to South Korea, where Red was about to land. But Red arrived safely, and so far all seems good were he is in Pyeongchang. Just can’t wait till he arrives home at the end of the month, and his 40 days of travel are over and he is back in the states! I call him the long-lost brother!
I am excited though that my oldest brother Creighton is flying in, and my cousins too! This Thanksgiving I am so thankful for my family, our health, and our happiness. This feels more real than ever after a couple sad things happened around here in the last week. So take some time on Thursday (and really every day) to spend time with the ones you love and enjoy every minute you can!
I will be taking tomorrow off from posting…cause it’s big day for food, family and Christmas tree decorating! But I’ll be back Friday with a killer breakfast, and then Christmas Drink Saturday this weekend…whoop, whoop!

Thanksgiving Turkey Hot Dish.
Servings: 6 Servings

Ingredients
- 4 croissants halved
- 4 tablespoons butter
- cup leftover turkey warmed (at least 1 )
- cup leftover gravy warmed (at least 1 )
- 1 1/2 cups shredded sharp cheddar cheese
- 3 ounces prosciutto torn (optional)
- 2 cups tater tots
- leftover cranberry sauce
- fried sage for serving
Instructions
- Preheat the oven to 375 degrees F. Grease a square baking dish or 10 inch skillet.
- Line the croissants, cut side up, in the baking dish and place a small pat of butter on each. Add the turkey in an even layer and then drizzle the gravy overtop. Top with a layer of cheese and then add the prosciutto. Arrange the tater tots in an even layer. Transfer to the oven and bake for 30-40 minutes or until the tater tots are crisp. Serve!

Delicious and decadent all rolled up together! A little indulgent but definitely necessary. Gilmore Girls you say? We can’t get enough!! Love watching this show with my teenage daughters. We are on season 4 and moving through as quickly as we can between work, school, cooking, cleaning, and all the other fun things that life demands of us. We will save this dish for when we finally get to the last 4 episodes or maybe I’ll just throw caution to the wind and whip this dish us tonight. A perfect way to say, “I will not participate in Black Friday! I will stay in my pjs all day and hunker down with some delish food and a Gilmore Girls marathon!!” Thanks for your creative recipes and your beautiful blog. Love to see a young woman doing what she loves and what makes her happy. You are a great role model for my daughters. I always tell them to follow their passion because that is the path to happiness.

You know, it’s funny that you mentioned your brother being in Korea to compete! I’ve followed your blog for several years. I used to live in Japan (actually pretty much right where the earthquake earlier this week happened…), and I moved to Korea this past September. Now I’m actually living just a half-hour or so from Pyeongchang, and I’m heading to the Big Air competition that Red’s competing in this weekend. HBH is my faaaavorite food blog, and I’m an avid boarder, too. So funny to think that I’ll be watching my favorite food blogger’s brother compete in my favorite sport in some random corner of South Korea…
