And by that I mean whose ready for Thursday Night Football? And by that, what I REALLY mean is…who’s ready for Thursday Night Football EATS?!

ME!

You all know that while my brothers, my dad and basically all the men in my life love football, I can totally take it or leave it. Here is what I do love about football…

With the start of football comes the start of fall… cozy nights spent by the fire with the game on, the smell of a fall scented Yankee Candle (ok that really has nothing to do with football!) and of course all the tailgate food! I also oddly love the sound of football playing in the background on Sunday nights. It reminds me of being a kid, and for some reason it’s totally comforting to me.

What I don’t love about football?

Ahh, well, I don’t really have anything negative to say…but then as sad as this is going to sound, I really don’t know much about the game either. The players throw a ball around and getting a touchdown is a really good thing. That’s about all I got. I know, I know, so sorry to all the football lovers who just read that and are now completely disgusted with me. This fall I’m going to actually try to live life a little and possibly leave the kitchen for like and hour or two, so maybe I finally learn the game that everyone loves so much.

On a kind of random, but sort of related note, to this day my dad has always said that I can throw a ball better than any of his boys. Fastest baseball throw and perfect spiral on the football. He thinks I missed my calling…maybe in another life I’LL be the all-star athlete…

Ahh yeah, right.

My favorite!

One of my favorite foods are sweet potato fries. My dad used to make homemade sweet potato fries all the time… since mom my loves them. My brothers would never dare to eat anything orange, but I’ve always been a sweet potato fry fan as well. Spicy sweet flavors are so my thing, so these cajun fries have been on my list to make for a long while now.

These skinny cajun sweet potato fries are addictingly good on their own, but incredibly awesome with a little garlic cheese sauce for dipping. Yes please!

Perfect side dish to burgers, wings or even atop a salad, AND they’re pretty healthy too! Got to love when delicious food is also good for us!

OK and last up, I feel like since this is a super friendly space, and that I pretty much tell you guys everything (I mean, for the most part), that I should let everyone know that today I am another year older.

Ahh yes, today is my b-day and if I am being honest, it’s probably one of my least favorite days of the year. I know, how depressing is that? For some reason as I went through my teen years my birthday just stopped being fun and I began to kind of dread it. I really do not like having all eyes and all the attention on me. Is that weird? Especially since I write a food blog and create videos and talk to you guys pretty much everyday on Instagram stories and snapchat? I love talking about food and things, but turn the topic to me and I just can’t. Makes me so uncomfortable. Anyone else feel the same?

Anyway, it’s my birthday and I plan to just have a chill day and try to be happy and excited about it! Getting older is making me wiser, right? Thinkin so! 🙂

Oh, and yes, there will probably most definitely be chocolate.

Skinny Cajun Sweet Potato Fries with Garlic Cheese Sauce.

Ingredients

Garlic Cheese Sauce

  • 1 tablespoon olive oil
  • 1 cloves large or 2 small of garlic minced or grated
  • 1/2 cup milk + more if needed
  • 1 1/2 cups shredded sharp cheddar cheese or smoked gouda chese + 1 tablespoon flour
  • 1 teaspoon seasoned salt + pepper

Instructions

  • Preheat the oven to 425 degrees F.
  • Place the sweet potatoes on a large baking sheet and drizzle with olive oil. Add the flour, creole seasoning, thyme, paprika, cumin, cayenne, salt + pepper. Gently toss with your hands or two spatulas to evenly coat. Bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, but crisp. Serve with the cheese sauce (below).

Chese Sauce

  • Heat a skillet over medium heat and add the olive oil. Next add the garlic, cook for 30 seconds then add the milk. Toss the shredded cheese with the flour in a small bowl. Add the cheese to the warm milk and stir until melted and smooth, about 5 minutes. Season with salt and pepper. Keep warm until ready to serve. Serve over the fries.
