Caramelized Shallot and Bacon Goat Cheese Pizza. Homemade pizza dough topped with fresh summer tomatoes, tangy goat cheese, crisp bacon, basil, lots of melty cheese, and sweet and delicious caramelized shallots. Oh, and some fresh thyme and chili flakes too. Once the pizza is just out of the oven, finish with fresh basil. If you love a cheesy pizza, this is about to become a new weeknight dinner staple. Serve this cheesy pizza right out of the oven for a truly simple dinner that everyone will love.

With all the dark days and rain we’ve had, I can’t help it, I’m slightly excited for fall. Am I ready for it? No, I really haven’t had nearly enough of summer. But still, part of me is excited for cozy days and pumpkin spice.

But not anytime too soon. We’ll ease into cooler temps with simple, slightly richer, recipes like today’s pizza. I wouldn’t say this is specifically a fall recipe. But the cheesy factor definitely makes it comfort food, which I love, all year-round.

This brings me to this pizza.

It’s a combination of all the things I’m loving right now. Summer produce, fresh herbs, simplicity, and apparently lots of carbs and cheese!

Here are the details

It’s no secret that I love shallots. I think they work so well in so many recipes. They add a subtly sweet flavor that’s never overpowering, but also complimentary. They’re less intense than an onion. I love to use them with recipes that are deeply savory but could use a touch of sweetness, like pizza.

I also love balancing their sweetness with saltiness, enter the bacon. The caramelized shallots and crisp bacon are a wonderful flavor combination that’s always unexpected, yet so delicious.

Start with caramelizing the shallots. It’s way easier than you’d think. We’re going to allow the shallots to cook undisturbed in olive oil with fresh thyme. The shallots will get a nice caramelization on the bottom and soften all around.

They smell delicious as they cook. They taste slightly sweet, salty, and just a little bit buttery. You will love them.

The rest is assembly. Fresh pizza dough topped with fig preserves. I know this is not a usual pizza topping, but very delicious with the salty bacon, sweet shallots, and pinch of chili flakes. Trust me.

Then fresh summer tomatoes. For the tomato, I like to grate it on a box grater to really break it down into a sauce. Then toss it with garlic and salt, simple. Just let the flavors of the tomato shine.

Next, add the goat cheese, then layer on fresh basil, and crisp bacon. Top with mozzarella and add the shallots last. I like to leave the shallots for the top of the pizza. This allows them to get crispy in the oven.

Throw the pizza in the oven and cook until the cheese is bubbling up and the crust is golden.

Top with lots of fresh basil, slice, eat, and enjoy!! This is definitely one of my favorite pizzas right now. It’s honestly good for any time of year. It would be especially fun for upcoming game nights! So crazy that football season is about to start back up soon!

    1. Hey Whitney,
Happy Saturday! I love to hear that this recipe was a hit, thanks for trying it out! xTieghan

  2. Just made it and I just took my first bite. First words out of my mouth – “Oh my God! This is so good!” And the hubby agreed whole heartedly! Another winner Tieghan! Will definitely be making again!

    1. Hey Diane,
Amazing!! I am so excited to hear that this recipe was enjoyed, thanks for making it! Have a great weekend☀️

  3. And this is why I love you so much. I knew as soon as I saw this recipe, we had to make it tonight for Friday night pizza night – every detail sounded right up our alley. Layers on layers on layers of flavor. This pizza is RIDICULOUS. In the words of my husband, “This is a whole new pizza experience… who thinks of this!?!?” But he knows who thinks of this, the woman I refer to as “my girl” that I get almost all of my recipes from. I prepped, while he cooked it on a pizza stone in his smoker, The Big Green Egg. Dare I say my favorite pizza of all time, and potentially one of the best things I have ever eaten… You’ve outdone yourself with this one, Tieghan. Bravo!!!?

    1. Hey Erika,
LOL this made my day! Thank you so much for trying this pizza and so glad it worked in the big green egg! Hope you are having a great weekend! xTieghan

My husband is a pizza dough maker and not adventurous until the last few years. This pizza has so many textures and flavors and is so delicious!

The only deviation I did was we always grill our pizzas, as my husbands dough is amazing. Second no fig jam in my atmosphere, but I do have medjool dates so a little research and 12-14 of these with about 3 tablespoons of hot water and 1/2 teaspoon of vanilla extract in a nutribullet ….Walla… jam! Third my garden is overflowing with tomatoes but I choose to course chop grape & cherry tomatoes instead of grating.

Needless to say another winner and even my minimalist pizza man loved it! Going to share with my daughter-in-laws! Thank you Tieghan!

    1. Hey Sharon,
So glad to hear this recipe was enjoyed! Such a great idea to grill this, I bet it was so good! And I love that you used dates in place of the fig jam, so creative! Thanks for giving this a try! xxT

I saw this and immediately wanted to make it. While I was doing all the steps I thought “oh no, what have I done.” I don’t generally love figs and thought I’d ruined dinner. But holy smokes was this ever good! Slightly more effort than a regular pizza but also tastes way better than a good regular pizza. Will make this again and again!!!

    1. Hi Hilary,
Happy Saturday!! Thanks a bunch for trying this pizza, I love to hear that it was a hit! xTieghan

Made this for lunch! Substituted leftover carne asada for the bacon and burrata for the goat cheese! It was great! My husband loved it!

Amazing!! I am so excited to hear that this recipe was enjoyed, thanks for making it! Have a great weekend☀️

    2. Hi Perri,
I wouldn’t undercook it, you will want the bacon to be cooked, just don’t crisp it, it will crisp up on the pizza. Please let me know if you give the recipe a try! xx

    1. Hi Kristi,
Yes, my pizza dough recipe is in the HBH Super Simple cookbook:) Please let me know if you have any other questions! xTieghan

  7. I have the same question/ concern as another reviewer. What kind of goat cheese did you use in your photo? I’ve never seen goat cheese able to be shredded like your photo, but I’d love to use the original recipe. Thanks!

    1. Hi Dina,
The recipe also calls for mozzarella cheese so that is the super melty cheese that you are seeing in the photos:) Please let me know if you have any other questions! xx

  8. I can’t wait to make this this weekend. Did you make your own pizza dough? If you purchase it at the store, do you mind sharing details? It just looks really good! Thank you in advance. I am obsessed with all your recipes and make a few every single week!!

    1. Hi Jenna,
I love making my own pizza dough, the recipe is in the HBH Everyday Cookbook, but Whole Foods also has a great homemade option. Let me know if you give this recipe a try! xx

    1. Hi Katie,
Wonderful!! I love to hear that this recipe was enjoyed, thanks so much for making it! Happy Friday! xTieghan

Just made this for dinner. I used naan bread and abricot jam because I didn’t have fig preserve and cooked the bacon in maple. It was amazing!! Will definitely make again!

    1. Hi Valerie,
Happy Friday!? Thanks a lot for trying this recipe out, I love to hear that it was a winner! Thanks for sharing what worked well for you! xx

  10. I just cannot seem to find a way for my pallet to like goat cheese. What would be a substitute. The pizza looks wonderful. Thank you

    1. I have found that feta or cream cheese works as a great substitute for goat cheese. In this pizza, I am going to sub the goat cheese for feta.

        1. Hi Corrianne,
Honey will work well in place of the fig preserves. Please let me know if you give this recipe a try, I hope you love it! xx

    2. Hey Karen,
Really any cheese you like would work here! Blue cheese would be another great option! Please let me know if you have any other questions, I hope you love this recipe! xx
