I’m finally sharing one of our favorite dishes of the month: my creamy ranch chicken! I’ve made this what feels like a million times at this point. It’s become a favorite with my family, it’s just simple, delicious food.

It’s not fancy, it’s not complicated, and it’s definitely not the prettiest dish in the world. But it sure is yummy!

Honestly, I have no idea what really inspired this chicken. I’ve been making a lot of Asian dishes and spicy soups so far this year. But lately, I’ve really been feeling a need to change up my recipes.

I thought hard about dishes I hadn’t made in a while. Then, I had the idea to create a dinner with my favorite homemade ranch seasoning mix. It’s sounded so yummy!

Growing up, ranch dressing was always my favorite. I often snacked on carrots and ranch dressing after school. It’s the yummiest!

The details

Step 1: mix the chicken

Use either chicken breasts or thighs here. Either one is great. My mom loves chicken breasts, but my brothers enjoy the thighs. I’ll usually use a mix of the two!

Now, toss the chicken with cream cheese and my homemade ranch seasoning spice mix. Then add dried parsley, dried chives, dried dill, garlic powder, and paprika. Toss well to really coat the chicken. Make sure the cream cheese is at room temperature or it will not mix easily.

Step 2: add everything else

Next, add the onion, then salsa verde, pickled jalapeños, and cream. Or try using canned coconut milk, yum. Mix in the parmesan, then put the broccoli on top.

The salsa verde is the secret here. It adds just the right amount of spice to the sauce. We love the flavor!

Step 3: bake

And now you bake. In about 30 to 40 minutes, you’ll have perfectly cooked spicy ranch chicken and broccoli in a very deliciously creamy sauce.

All you have to add is steamed rice. Orzo pasta would be really nice too. I also love serving this with my honey beer bread on the side.

How are the leftovers?

They taste even better the following day. The flavors have time to mend, and the sauce is that much more intense.

You could even add some crispy bacon to the top. I’m sure that would be so great too!

  • 1. Preheat the oven to 400°F.
    2. In a baking dish, toss together the chicken, cream cheese, parsley, chives, dill, garlic powder, and paprika. Season well with salt and pepper.
    3. To the chicken, add the onion, then pour over the salsa verde, jalapeños, and cream/milk. Add 1/2 cup parmesan. Stir until creamy and well-mixed. Arrange the butter, then broccoli on top. Bake for 30-40 minutes, until the chicken is cooked through. Gently stir to combine. Top with 1/2 cup parmesan.
    4. Serve the chicken and sauce over steamed rice or orzo for a complete meal. Enjoy!

    This was delicious! It took a little longer to cook but I had some big pieces of chicken. The sauce was a little runnier than it looked in the video/pictures but was still good. I didn’t sauté the onions like others suggested and they still came out soft. This was a big hit with my family and will definitely be added to our list of recipes.

    I made this with chicken thighs, but omitted the optional pickled jalapenos since my family aren’t into anything with “heat”. It is certainly an easy recipe and very creamy. I think I would blanch the broccoli before putting the dish in the oven – it was a little too crisp even after 40 minutes in the oven. I liked the spice mix, but it seemed like the flavor was overpowered by the creamy part of the sauce. Overall it is a good recipe but l would look for a way to kick up the ranch flavor a little more.

    Everyone in my family said this one is a keeper! We served it over orzo and the sauce was YUM. It was easy to assemble and made few dishes to clean up, which I love. And I get to take the little bit of leftovers to work with me tomorrow. Yum!

    In a word? Yum!
    Used chicken breasts that I did halve – in the X direction – to make sure they were thin enough. Softened the cream cheese and mixed in all the spices before coating the chicken. Thought the sauce was perfect for serving over rice. Omitted the onion bc they are not enjoyed by my kids. Whole family wants it again. High marks for the broccoli being cooked but firm, which is far superior to mushy. Thanks, Tieghan! 👍🏼

    So good! Caramelized the onion first and doubled the amount of broccoli but otherwise followed the recipe as written. Served over mashed potatoes. My husband, 10mo old, and I all loved it!!

    Cooked for over 40 minutes and was running but I used dairy free options. I would say 1 hour or 1 hour and 20 mins for cooking time. Add broccoli in the last 30-40 mins. Next time I will make this in a cast iron and get a creamier sauce using flour. Good concept but I will adapt next time.

    Flavors were great but cooking method had a lot of issues, probably 80% of what i cook are her recipes though I should have known better. I will be making in the slow cooker next time. The onion was still half raw and I cut it up really small, cooked for an hour it was extremely runny I wouldn’t add any cream/milk until it’s almost done cooking because chicken makes a lot of juice of its own. The flavors are great but I ended up with a runny mess with raw onions, all of which could be resolves by just cooking in the slow cooker. And I used 6% milk not heavy cream DEFINITELY just use the cream and I’ll probably drain some of the chicken liquid, use it to cook my rice in that I serve with it. A lot of her recipes I find extremely runny and the onion I almost cooked for 10 mins first on the stove, definitely should have. But next time I’ll just use the slow cooker and the broccoli a little later, and cream at the very end.
