I made us lunch. Yeah!

Actually, breakfast or dinner too! This is one of those meals that can be eaten at any given point throughout the day. Gotta love those.

Although, if you are my brother Creighton, basically ANY food can be eaten at any given point throughout the day. Whatever Creighton eats for dinner is fair game for another meal. Meaning that I am 99.9% sure that he has eaten lasagna, steak and chicken noodle casserole all for breakfast, multiple times throughout his life. He is so weird.

And he is also getting on my last nerve. I need my own house already. It is so time.

The barn could not happen fast enough.

Anyway, this is the toast I have been dying to share with you ever since I posted the Harissa recipe.

And the only reason the Harissa happened was because of this toast, and the only reason this toast happened was because I desperately needed another excuse to make avocado toast + eggs. I know I said this back when I posted this sandwich, but I make avocado toast all the time. Most of the time it includes a fried egg and some form of cheese melted over-top. Super simple, but I swear there is not a better quick meal than that.

Plus, we all know that eggs make everything better.  Pretty sure I could put fried eggs on most dishes and everyone would love it.

Well, obviously not on desserts because that would just be gross, but when in doubt I put an egg on it. If I am worried that whatever I made is just not that good, I put an egg it. If I took photos of a dish earlier in the day, but come dinnertime it is just not looking so good, I put an egg on it.  If I am trying to hide the beans, veggies and or parts of the dish I burnt (I do this more often than not when re-heating), I put an egg on it. So yeah, I think you get the point. Eggs dig me out of food problems… quite often.

Typically I fry my eggs and leave the yolk just a little runny. Ok well actually, I normally let my dad make the eggs, unless I am taking photos of them, because he makes the most awesome eggs every single time. But being the perfectionist that I am I have to make the eggs I photograph because I would probably kill him for every bad-looking dimple the egg had.

I have the hardest time making fried eggs not look totally disgusting, so I went with the poached egg for these. Also, my bread was tiny, and a fried egg would have covered up all the good stuff underneath. So poached it was.

You can do whatever kind of egg you prefer.

The rest is pretty simple. One important thing though? Good bread. You gotta have a good crusty bread for toast. I prefer a whole grain loaf with tons of seeds, but whatever you love will work.

Then you have to get some good Harissa. You can make it in under thirty minutes like I did or you can just get some from the store. I love the Mina Harissa Brand and think it is pretty good, but when you make it yourself you can customize it to your taste. This I personally love!

Obviously, you will need some good avocados. I also added some sun-dried tomatoes because I love those too.

Oh, and you need goat cheese.

AND a drizzle of honey. The honey helps balance out the spiciness of the Harissa. So dang good.

Even better if you have work off today and can enjoy this while catching up on all the TV shows you never have time to watch. Yes.

Ingredients

  • 2 slices whole grain bread toasted
  • 1 tablespoon homemade or store bought Harissa use more or less depending on how spicy you like it
  • 1/2 an avocado pitted + peeled
  • pinch of salt and pepper
  • 1 tablespoon oil-packed sun-dried tomatoes chopped or sliced
  • 2 ounces goat cheese crumbled (or feta)
  • 1 teaspoon honey
  • 1 teaspoon fresh lemon zest
  • 1-2 eggs cooked, using your desired method.

Instructions

  • Preheat the broiler to high.
  • Add the avocado to a small bowl with a pinch of salt and pepper and lightly mash using a fork.
  • Place the toast on a baking sheet and spread with a little bit of Harissa on both pieces. Be careful, this stuff is spicy and you can always add more if needed later. Next evenly spread the mashed avocado over the Harissa. Top that with the sun-dried tomatoes and a good sprinkle of crumbled goat cheese. I go pretty heavy on the goat cheese. Set aside.
  • Cook your eggs to your liking. Normally I fry mine and leave the yolks just a little runny, but any way you like your eggs will work! About 1 or 2 minutes before your eggs are done pop the toast under the broiler to get them all toasty and warm (WATCH CLOSE!!!). Remove the toast and then drizzle with a little honey.
  • When the eggs are ready, top each piece of toast with an egg. Zest some fresh lemon over top, sprinkle with salt and pepper. EAT.

    1. Hi there,
Happy Sunday!! So glad to hear you enjoyed this recipe, thanks a lot for making it and your review! xT

I also struggle with photogenic fried eggs (or any eggs, for that matter). I made the poached variety since I don’t care for the texture of fried eggs that much. Loved the blend of different flavors and the spice level. I used some extra spicy Tunisian harissa and liberal amounts of goat cheese. Heavenly!

Rock solid recipe, with quite a bit of wiggling room to satisfy the creative side. I use Sun Lion harissa, which is a bit more tangy & less spicy than others, and comes in a squeezable bottle with clean spout, and honey sticks, which are very easy to use for drizzling & contain just the right amount of honey. I haven’t tried gets, but the recipe is spot on with a mild goat cheese.

  3. Hi there! I’ve been trying a bunch of your recipes lately and have been loving them sooo much and have been sharing them with my friends!!! I see Harissa and burrata in a lot of your recipes. I have failed to find burrata where I live in Eastern Canada..what would you suggest instead?? Also, I was wondering: Is the Harissa you use a sauce or dried peppers? If it’s a saufe, what is your preffwred brand? Thank you so much! Keep doing what you’re doing!!!

    1. Hey Kat! You can use fresh mozzarella or ricotta cheese in place of burrata. Either is great!! I use harissa sauce. Brand below! Please let me know if you have any other questions. I hope you love this recipe! Thank you!! xTieghan

  4. fried eggs look good in photos, you told you have altered it so it’d look good on photos, but would they taste good? changing from yolk eggs to friend pouches is a HUGE difference in a recipe. are you sure you are capable of telling people what to eat?

  5. your relationship with your brother and father is strange. and do not add ingredients to your food just because you like them, explain if they are compatible or what.

  6. Truly, truly beautiful dish! Can’t decide whether I should share the recipe with friends or just make it for them and feel triumphant ?. Definitely going to look at what else you do. Thank you.
