Welcoming Tuesday with a new kind of cookie, Chewy Chocolate Chip Cookie Granola.
Not technically a cookie, but this granola tastes like an oatmeal cookie that’s been crumbled up, and you guys it is so good.
I took this cookie granola with me for a super quick trip to Aspen this past weekend for the X-Games, and even though I was there less than twenty-four hours, the entire batch had been devoured by the time I left. It’s that good. But then who wouldn’t enjoy a cookie-like granola to snack on, you know?
Also, speaking of Aspen, I’m realizing I never told you guys about my weekend. My younger brother Red was competing at the X-Games, so my family and I went to watch. I only came for finals, but it was fun to get to watch Red complete. I don’t normally make it to his contests since a lot of them are out-of-state, but I always try to make an appearance to the ones that are here in Colorado…yet everyone is always so surprised when I show up, hmmm. Red took fourth, which isn’t his best ever, but he was having some speed issues with the snow and what not, he’ll get em’ next time. Either way, I am always so impressed watching that kid fly through the air. He makes it look effortless.
Between the two plus hour drive to Aspen Friday night, and then back on Saturday night, that pretty much took up my weekend. I spent Sunday cooking and packing for a quick trip to Austin, Texas, which is where I am now. I flew in yesterday for a fun shoot with Camille Styles, but will be off again to LA tonight for a quick overnight stay, then back home tomorrow night. A busy three days, but also a fun three days! Hoping to catch a glimpse of Red while in LA before he heads off to Korea for the Olympics (…no big deal or anything).
And now that we’ve caught up on life stuff, let’s talk about the today’s recipe.
I got this idea from my Mom’s Oatmeal Chocolate Chip Cookie recipe that I included in the Half Baked Harvest Cookbook. Mom’s cookies are my absolute favorite, but they do tend to be on the crumbly side, which is a good thing. Trust me.

All the crumbs that are normally left behind by these oatmeal chocolate chip cookies made think about how good a cookie granola would be. Obviously, I immediately got to testing this recipe, because I mean, oatmeal cookie granola.
With CHOCOLATE CHIPS.
Clearly, I am very excited to share this recipe with you guys.
Seeing as this is a granola recipe, I wanted it to be much healthier than your average cookie, so I decided to load it with all the good things….old fashioned rolled oats, quinoa, nuts, seeds, and honey for sweetness. So a lot of your classic granola game players.
So what makes this a cookie granola?
The addition of a little butter, plenty of vanilla, and a very generous amount of chocolate chips.
Three simple but perfect ingredients that take this granola from being just like any other granola, to honestly one of the best granolas. Ever. Again, chocolate chips are involved.
They’re soft, chewy, sweet, and chocolatey. The best.
I’m recommending you make a big batch to keep on hand at all times. This granola is great for breakfast, snacking, and even dessert.
I love, love, love eating this granola with a little milk and sliced bananas. It feels like an indulgent treat, but it’s actually very much on the healthy, protein, and nutrient packed side. To make the recipe a smidge healthier, be sure to use organic, grass-fed butter, and extra dark chocolate chips. If you are vegan, you can replace the honey with maple and use vegan chocolate chips.
And lastly, I’m planning to pack a bunch of food for the plane ride over to South Korea next week. I’m thinking that this granola will need to be in my food bag. Feeling like snacks are going to be a must for the long 18 1/2 hour flight (omg. too long).
Chewy Chocolate Chip Cookie Granola
Servings: 6 cups of granola

- 1. Preheat the oven to 275 degrees F. Line a baking sheet with parchment paper. 2. In a large bowl combine the oats, quinoa, almonds, sunflower seeds, pumpkin seeds, sesame seeds, and chia seeds. 3. Melt together the butter and 1/2 cup honey. Stir in the vanilla. Pour the mixture over the oatmeal mix and toss well to combine. Spread in an even layer on the prepared baking sheet. Transfer to the oven and bake 20 minutes. Remove from the oven, stir, and drizzle the remaining 2 tablespoon honey over the granola. Return to the oven and bake another 10 -15 minutes until golden. Remove from the oven and let cool 15-20 minutes. Stir in the chocolate chips. Keep stored in an airtight container for up 1 month.
