It’s finally here! Friday, the weekend, and time for me to share my favorite peach recipe yet, the simplest old-fashioned peach cobbler. Oh, how I LOVE this cobbler. I spent days perfecting the recipe and have been dying to share the final version.

With today being the last Friday of July, I knew it was the perfect time for a peach recipe. The juiciest, sweetest summer peaches are all filling up the grocery stores, farmer’s markets, and roadside farm stands. And I know just what to do with them.

It’s prime-time peach picking season!

Before summer began, I knew I really wanted to share a peach cobbler recipe. It’s a recipe I haven’t played around with much because I just love the idea of an old-fashioned-style peach cobbler.

One with the sweetest peaches, a “self-made” caramel-like sauce, and vanilla cake-like biscuits on top. Oh, plus ice cream, of course.

This took me time to get just right, but the simpler I made the recipe, the better it became. This is the best peach cobbler.

The details

Start by melting the butter. I like to throw a baking dish with butter into the oven to melt and get a little browned.

While the butter is melting, mix up the batter. It’s simply, flour, brown sugar, baking powder, and a sprinkling of cinnamon. Then add in the milk and vanilla to create a pancake-like batter.

The rest is just assembly. You need to toss the peaches with some brown sugar, then layer half of them over the melted butter. Next, pour over the batter and then layer the remaining peaches over the batter.

No stirring is allowed, this is the secret, and what makes this cobbler extra special.

As the cobbler bakes, the butter bubbles up over the topping. This helps to create delicious, golden, crisp edges all while forming a caramel sauce underneath.

The peaches on top caramelize as they sink into the cobbler. Between the rich buttery caramel sauce, crisp edges, and sweet peaches, it’s truly magic.

While the cobbler bakes, I make the maple butter. Just butter, maple, and sea salt. This is not a must but it is really delicious when spooned over the warm cobbler with vanilla ice cream.

The one thing you must do is serve this warm, while the juices are bubbling up, and everything is smelling incredible.

This is a classic summertime dessert that really should be happening on a weekly basis throughout August. It’s dangerously delicious, dangerously addicting, and all-around perfection!

Instructions

  • 1. Preheat the oven to 375° F. Drop the butter into a 9×13 inch baking dish and place the dish in the oven to melt, about 10 minutes.
    2. To make the batter. Stir together the flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt. Add the milk and vanilla, mix until just combined.
    3. In a bowl, toss the peaches with 1/4 cup brown sugar and the maple syrup.
    4. Layer half of the peaches over the melted butter. Then, pour over the batter, do not stir. Layer the remaining peaches over the batter. Bake 50-55 minutes, until the center is just set and the edges begin to brown.
    5. Meanwhile, mix the butter and maple together in a pan. Boil 2 minutes, then remove from the heat.
    6. Serve the cobbler warm or at room temp with ice cream and maple butter drizzled on top.

    I’m sorry but this is a no. It’s hard to find anything that beats my grandma’s peach cobbler recipe. This batter is too thin and the whole thing just falls. I’m glad others have enjoyed it though.

    Wow!! I made this cobbler and then chopped it up and added it to a perfect vanilla homemade ice cream recipe! I toasted a brown sugar pop tart and warmed up the maple syrup sauce for what is surely one of my favorite desserts I’ve ever made! I’d love to share a pic but can’t figure it out!

    Sooooo yummy! Made it in 8×8 pan cut the batter recipe in half. Sweet as is without the maple butter sauce but definitely the vanilla ice cream!! Will be making this again!

    The reviewers mentioning too much butter obviously seem very sensitive to butter because this was so perfectly buttery and flavorful, the whole family enjoyed it! Even my picky toddlers!

    I made according to recipe using 3/4 c brown sugar & it turned out well – plenty sweet. No need to peel peaches. I prepared it earlier in the day & just kept it covered in the fridge until it went in the oven. I agree with others who suggest using more peaches or a smaller dish. Next time I may cut the butter in half just because 2 stick is a lot of butter!

    I made this recipe as per the instructions as best I could; as others have pointed out the brown sugar amount in the ingredients and in the directions don’t match up. I decided that to use 3/4 cup of brown sugar in total. I had what looked to be smaller peaches so I used 6 instead of “4 or 5”. The Instagram video was not up when I was making this…there has to be 7 or 8 large peaches in the demo. Half my peaches didn’t even cover the bottom of the 9×13 pan. When Tieghan put “half” of her peaches in, it looked like more than my total amount. The batter was super thin. I’m thinking this should have been done in a 9″square pan, if not 8″. It did taste good…but was more like peaches in pancakes consistency than a cobbler.

      Thanks so much for giving the recipe a try, sorry to hear you had some issues. I can assure you, I only used 5 peaches in the recipe, they definitely could be bigger than the ones you used. The great thing about this dessert, is you could really add more or less to your liking and it’s really not going to mess anything up. As for the brown sugar portion, that has been fixed…3/4 cup in step 2 and 1/4 cup in step 3 equally a total of 1 cup. I hope this clears things up for you!         Made this a second time…found some larger peaches! Our growing season is later than in the US. Using 5 peaches nearly filled the pan, compared to the last time using 6 didn’t even come half way up. In the oven now, but if it tastes as good as last time, it’s a 5 star…I did use 1/2 cup of heavy cream with 1/2 cup of milk to try and thicken the batter a little. Hopefully it turns out.

  8. Your recipe says 1 cup brown sugar but uses ½ cup for the batter and ¼ cup to toss with peaches. What about the remaining ¼ cup?

    This was so good! It was so easy and definitely a recipe that I will make again. I did put a 1/2 cup of brown sugar with the peaches and let them sit for over an hour because mine were hard and not as ripe as I wanted them to be, but I couldn’t wait to make this recipe.
