This Creamy Balsamic Mushroom Chicken Marsala makes for the best any night of the week dinner that feels extra special. Lightly breaded chicken seared until golden with nutty browned butter. The chicken is finished in a simple marsala wine pan sauce with caramelized balsamic mushrooms. It’s delicious, especially when served over creamy, herby mashed potatoes or pasta. Every bite is layered with delicious, hearty flavors and caramelized mushrooms. The perfect way to spend a relaxing night in the kitchen with family and friends.

Mondays should be all about thirty-minute skillet dinners like this, especially during these short December days. This is one of those recipes that looks and tastes like it took time to prepare, but really it’s the simplest.

This recipe started out completely different, but I’m so happy with where I landed. This is delicious guys.

When I started working on this recipe, there wasn’t any kind of marsala sauce involved. I was working on creating a creamy balsamic chicken, and while the idea sounded good, the outcome was a very dark and odd-looking dish with very little visual appeal.

Since I’m all about presentation and food that looks as delicious as it tastes, I decided to forget about the recipe, it didn’t feel that special to me. And I, of course, want everything I share with you guys to be overly delicious and pretty.

So I left it alone for a couple of days. But then, someone in my family mentioned chicken marsala. This got me thinking, what if I combined the balsamic chicken and the chicken marsala into one dish.

I could caramelize the mushrooms in balsamic vinegar, then toss the chicken in a creamy marsala wine sauce. It sounded even more delicious than my original idea, so I gave it try, and now here we are.

A balsamic and marsala chicken hybrid! It’s crazy what few tweaks in a recipe can really do to make something DELICIOUS.

I am excited about this one. I love when recipes form and develop over time, they always end up being my favorites.

The simple details.

If you love a good chicken marsala, you’ll love this slight twist even more. It’s all about those caramelized balsamic mushrooms.

Start with the chicken. If you’ve made chicken parmesan this is very similar. Just dredge the chicken through a mix of flour, then pan-sear it in a hot skillet. This allows the chicken to form a nice golden crust on the outside. Using thin chicken cutlets is key. The thin chicken cooks evenly and browns nicely in a short amount of time.

Tip: if your grocery store does not carry chicken cutlets, as a swap, try asking your butcher to pound out chicken breasts for you. This is super easy to do at home, but truthfully…it’s just not that much fun. The butcher can quickly pound out the chicken and save you the trouble…and the mess.

Also, you can easily make this chicken gluten-free by replacing the flour with almond flour. Or use your favorite gluten-free flour blend (I like cup4cup).

Pan-sear the chicken, then add in the butter. The butter browns around the chicken creating an even more delicious flavor.

Now the mushrooms, the best part! You want to thinly slice the shrooms, then let them crisp in a little olive oil. Once they’ve cooked down, just add a splash of balsamic vinegar and let the sauce caramelize over the mushrooms. It’s so simple but so delicious.

Once caramelized toss in a bit of butter, shallots, garlic, and lots of thyme. Again, allow that butter to brown, creating an even more delicious flavor.

At this point, just add in the wine, simmer until reduced, then stir in the cream. Allow everything to simmer and thicken into a delicious creamy sauce.

What to serve this creamy balsamic mushroom chicken marsala with…

Well, you guys know me, I love my carbs. I served this saucy, creamy chicken over my slow cooker mashed potatoes. Twas’ delicious.

Other sides that would be great? Definitely any kind of pasta, steamed rice, or if you are looking for something on the lighter side, spaghetti squash is always a delicious, healthy option.

You can’t go wrong either way. The sauce makes just about anything you serve alongside it great. One thing that is a must? Crusty bread for moping up the extra sauce. You just have to do it.

  • 1. Season the chicken with salt and pepper. Place the flour and garlic powder in a shallow bowl and dredge the chicken through the flour mix, pressing to adhere.
    2. Heat 2 tablespoons olive oil in a large skillet set over medium-high heat. When the oil shimmers, add the chicken and sear on both sides until golden, about 3-5 minutes per side. Add 1 tablespoon butter and allow the butter to brown around the chicken, about 2 minutes. Remove the chicken from the skillet.
    3. To the skillet, add 2 tablespoons olive oil and the mushrooms. Cook undisturbed for 5 minutes or until golden. Add 2 tablespoons butter, the shallots, garlic, thyme, and a pinch each of salt, pepper, and red pepper flakes. Cook 4-5 minutes, until fragrant. Add the balsamic vinegar. Cook another 2-3 minutes, until the mushrooms have caramelized. Spoon half the mushrooms out of the skillet and onto the plate with the chicken.
    4. Pour in the wine and broth. Cook 10-15 minutes until reduced slightly, then pour in the cream. Add the chicken to the skillet and simmer for 5-10 minutes or until warmed through and thickened slightly. Spoon the reserved mushrooms over the chicken.
    5. Serve the chicken and sauce over mashed potatoes, pasta, or steamed rice. Top with fresh thyme or parsley.

    Wow. I made this with your Slow Cooker Cheesy Garlic Herb Mashed Potatoes and everyone loved it. Even my kid who doesn’t like mushrooms! It’s even delicious with just the chicken and the sauce. I didn’t split the chicken breasts because it was a week night and I didn’t want to take the time. I just cooked them a little longer in the pan both times- the sauce was so thick and creamy. The balsamic vinegar added some beautiful depth and the cream a nice richness, which sets it apart from other marsala recipes. I deglazed the pan with a little of the marsala after I took the chicken out to not waste any of that lovely frond from the chicken as well.

  13. The ingredients note 3 T olive oil but the instructions have 2 T olive oil two different times. If the recipe instructions are not correct then I’m not sure I want to make it. I think to myself what else is wrong with the recipe.

    Hello! I love Cheesecake Factory’s Chicken Marsala dish and this tastes almost exactly like it!! I will say, getting that distinct flavor comes from getting the Marsala wine, but Im sure the dish would be delish using another wine. Thanks so much for this easy dish!

    A note to others making it the first time – step 3 says to add a pinch each of the salt and the peppers to the sauce. If you’re using Marsala, it can be very sweet and you’ll need more salt and pepper to compensate. So yummy!

    We really liked this recipe. It not only looked delicious it tasted yummy. We used shiitakes and coconut cream (instead of heavy cream) and served with some plump roasted asparagus. It took 1 hr of cooking to complete the browning and reduction steps. So needed about 1.5 hrs, plus clean up for this special meal.

    This was fantastic! I had a carton of baby bellas I needed to use & this was perfect. I had all the ingredients except the Marsala, so I substituted cooking sherry & added a couple tablespoons of pomegranate molasses. This gives me an excuse to get some Marsala.     I chose this recipe over the others because it uses less cream, and it has the balsamic. It was very good. I made a couple small changes. I never flour the chicken because I think it is unnecessary. I brown it in the oil and or butter alone. I also left all the mushroom mixture in the pan. I assumed the ones not incorporated in the sauce and added later was just for esthetics, and its Wednesday so nothing fancy tonight. I added one teaspoon of cornstarch dissolved in some of the broth to thicken slightly because it would be too thin without the flour. Consistency was perfect and flavors were good. Pretty much your basic chicken marsala.

    I love one-pan meals and this one was very satisfying. Simple prep, love the ingredients, wonderful aromas filled the first floor. Milestone event, my husband said he loved the sauce and used a slice of bread to soak up what remained in the bowl. I put fresh baby spinach at the bottom of bowls, poured the sauce over to slightly wilt/cook the spinach, then topped with the chicken. Delicious all around; perfect as recipe lays out.

    This was AMAZING! I added slightly more mushrooms than was called for (but also ate almost half of them while cooking). I used my cast iron skillet for it and swear it made it taste and turn out better. The combination of balsamic with marsala is amazing.     This recipe tasted good, but I take issue with the prep and cook times. This recipe says it takes 10 min to prep and 20 minutes to cook for a total of 30 min. It took me 90 minutes. I could see, maybe, someone very quickly, could prep this all in 10 minutes, but the 20 minute cook time is false. If you add all the times listed in the recipe, it takes 34-50 minutes of cook time (plus ~2 min to dredge your chicken). While the recipe tasted good, my mood was bad because eating dinner so much later on a school night with young children was not enjoyable.

    Changes I made: I used onion instead of shallots (half as much), added some spinach (I just steamed it in the microwave and then plated it between the pasta and the chicken/mushrooms) highly recommend, and I used unsalted butter (don’t recommend that but I was out of salted butter).

  48. This recipe sounds great and I was really looking forward to adding another quick one to my list, since it lists 10 minutes prep and 20 mins cook time. But according to the instructions, adding up the MINIMUM cook time brings you to almost 35 minutes, not including any prep and if each step takes the higher estimate.

After I made this recipe, everyone (including my mom) agreed, this recipe was, hands down, more flavorful than the fancy Italian restaurant version. I made it with mashed potatoes–HIGHLY recommend.

    I also live in Texas, where you can’t buy alcohol over 17% on Sundays. Well Marsala wine apparently has a very high alcohol content, so I wasn’t able to get actual marsala wine. But the cooking marsala wine worked just as well!

This might be true for you who makes a recipe half a dozen times to perfect it but you must consider that we readers are constantly following the long list of ingredients and instructions. The end results are always great but please be realistic in the prep/cook time for those of us who are making these dishes for the first time! When I have dinner guests I need a realistic time line.

  63. Superb! But the timing is way off. If you just add up the lowest numbers, it’s close to 40 mins of cooking time, apart from the prep time. If you are in altitude and need to higher cooking time, this is close to an hour. I’d do it again, it’s sublime, but 30 mins total time is not even adding up the recipe numbers. Had a WONDERFUL dinner five star. You might consider changing the cooking time so people know what to actually expect.

  66. Made this tonight and it was absolutely delicious. HOWEVER, your 20 minute cook time has to be a typo. If you add up the cook time in the instructions it’s almost an hour. So other than that this was fantastic just make sure you allow enough time!

    This was soooo delicious! I paired it with the slow cooker mashed potatoes and wow – what a combo! Easy, delish and fairly quick although I feel like it took me a lot longer than 30 minutes, but maybe because I needed to wash/chop the mushrooms. I put the shallots and garlic in my mini food processor. In the future, because I’ll definitely make this again, I’ll buy more chicken. I only got a 4-pack of cutlets and I wanted more and feel like there’s enough sauce to support more chicken. I think I’ll try 8 cutlets next time. I’ll have to cook it in batches, but I think it’ll be worth it.

  113. This was a stellar recipe. For anyone interested, this can also be made via an Instant Pot (my new favorite friend). I used the “sauté” mode on the Instant Pot instead of using a regular skillet (steps #2-#3). After I poured in the wine and broth (step #4), I put the chicken back in and set the pot to pressure cook for 8 minutes. When done, I released the pressure, took the chicken out with tongs and set aside (covered) to keep warm. I then used the “sauté” mode again to reduce the sauce (5 min) before adding the cream and letting it reduce further (5 min). You could either add the chicken back in the pot to heat it up but I simply poured the hot sauce over the warm chicken and there were no complaints. My toughest critic / two-year old son, when asked if he liked the dish mommy had made, he shook his head vigorously and said, “YES!” So thanks, Tieghan, for helping my mommy status soar today.     This was okay. I was a little let down that it didn’t really taste like marsala or balsamic. It was also a little runnier than I would have liked, but I could have cooked it longer to thicken it up. We have a chicken marsala recipe that is our go to but I wanted to try something different, and I love balsamic so this one sounded great. I think maybe all the chicken broth diluted the other flavors and didn’t seem necessary. I’ll make this again but either skip the broth or do significantly less.

    So this was really good, but it took me an hour and 40 minutes from start to finish! My boyfriend was even helping me. It takes a while to chop everything and then the simmer time took a while. We ended up eating pretty late because it took so long. Just a heads up to others! Also, we made it with pasta so I’ll probably make a little bit more sauce next time.

    Just made this and it was delicious. Only critique is that the cook time is far more than 20 minutes. The last couple of steps alone take 20 minutes. The sauce was a little thinner than I intended, so I added a bit of cornstarch to thicken it up.

    This was amazing! My only suggestion is to double the sauce (maybe triple it as it is that good!) because it was so yummy and didn’t make enough for my family. The balsamic mushrooms gave it an extra flavor usually missing from this dish.

    Made this for dinner tonight. I had chicken legs in the fridge but followed your directions and it turned out beautifully! I subbed basil for thyme because I prefer basil. I had 8oz of sliced mushrooms and because my husband loves mushrooms, I’ll use more next time. I used rotini and immersed the cooked noodles into the sauce. Perfect although rice or mashed potatoes would be awesome, too. I was too lazy to make potatoes tonight. Would sub coconut milk in a heartbeat. I’ve found the sauce in similar recipes curdles using milk or yogurt. What is it about browning chicken pieces floured and fried in olive oil? I have another recipe Pollo Contadino where chicken thighs are floured and browned in olive oil.     My hubby and I made this together last night. It came out great, but a little sweet – this was my fault because I accidentally bought the sweet marsala wine instead of the dry. Used 2 packages of mushrooms (baby bella and shiitake) and thin sliced Purdue chicken, so did not need to pound. We deliberately made enough for 2 nights and at hubby’s urging, made it in 2 separate pans. A bit more work, but the result was 2 separate dishes. Wanted to make the slow cooker mashed recipe you had posted recently, but did not get around to it. So instead served with asparagus and a nice roasted garlic bread I had bought along with truffle dipping oil. It was all so yummy and I think I will make the mashed for the second serving of the marsala that we’ll have tonight! Thank you, once again, for a creative and delicious recipe!!

    I love chicken marsala and even went so far to pound down chicken thighs for this recipe. However I do feel it was far too much butter and cream being used in this recipe! The richness was almost an overkill adding the cream and so much butter to the otherwise lovely thyme and marsala with the mushrooms. Served over wild rice but next time a slimmed down version for sure!

    I made this for dinner tonight, and it was delicious. I served it with the instant pot potatoes from the HBH Super Simple cookbook (the only way I make them now!). I think I could have let the mushroom mixture reduce a bit more because my sauce was a tad watery (I also added more mushrooms, which may contributed to the water). It took me a bit longer than expected to make, but I didn’t prep ingredients. If I had prepped them, it would have been super easy. My husband enjoyed it, too.     This dish was so darn delicious. I liked the added touch of balsamic vinegar. This is definitely a winner in my house. The only thing that I did different is that once I browned my chicken breasts, I put them in the oven to bake a while longer while I made my sauce.
