So who’s game for a little chocolate??
I know that many of you are trying to swear off sweets as a New Year’s resolution, but well, I am here to tell you that you MUST make these .
Let me explain. You see, these are actually very healthy food disguised as what appears to be “forbidden fruit”. Pun intended, these little bites have ZERO added sugar, are full of protein, fiber and healthy antioxidants. So you see what I’m saying?
Think of these as the ultra healthy version of a Buckeye (chocolate peanut butter balls). Meaning that these are beyond perfect for all your upcoming football playoff parties! YESSSSS.
Speaking of football, is everyone getting excited for the Super Bowl? I know it’s still a few weeks away, but Super Bowl food is the BEST. What do you guys think? Should I go for a healthy Super Bowl this year or go all out and put cheese on EVERYTHING? I know, tough choice, but think about it and let me know!
Over Christmas I made A LOT of sweet treats, but once we got through Christmas Day, I had to put on my “healthy January” thinking cap. So I chatted with my cousins and decided that even though this recipe is really simple, its still a recipe I NEEDED to tell you all about.
Unfortunately for my cousins, they had to leave before I had a chance to make these, but this will show them that they better stay through New Year’s next year!
Yesterday we recapped Christmas, so maybe today we can go over the start of 2016, ok?
Honestly, my week between Christmas and New Year’s was not all that eventful. My girly partner in crime and Starbucks hoarder, Caitlin (brother Kai’s girlfriend) headed off to spend a couple of days with her family in Crested Butte, so I was left with the boys once again. Thank God I have my own place to shut the door and get away. I swear, I don’t know how I put up with them all those years.
We did have an issue with our water where my parents had zero water for and entire day. We have well water where we live, and well… things can break, lines can freeze… basically life happens. Luckily it was just a pump that broke and not frozen lines. Fortunately, I had a full tank and the water was fixed before I could run out. I know, LUCKY. Think of all the dirty dishes?? YIKES.
What else? Kai and I filmed a couple of videos for January, which honestly was SO HARD. I don’t know what was going on, but man I was struggling in front of the camera, those videos should be real interesting. New Year’s Eve was very low-key. I tried to take a seriously long shower which was cut short by MY water tank running out (long story). I was freezing and had to go up to my parent’s house to get the soap off (in -13 F temps). Lets just all cross our fingers that our water issue is now fixed for good! The boys partied… I went to bed.
Clearly I am the grandma of the family, but it’s cool, I like it that way.
On New Year’s Day, I made these dates and then we all ate them. Seriously, that was my day.
Kicking off January right I’d say.
As the title states, these dates have just four ingredients, dates, peanut butter, chocolate and coconut oil. The toppings are all up to you, you can add them or not. I am into the toppings though, I think my favorite was the shredded coconut or the cacao nibs. Either way, these are going to be SO good, as long as you have good plump dates, thick peanut butter (or really any nut butter you prefer) and seriously dark chocolate.
So here’s how this goes. You slice the date and remove the pit, but be careful not to slice fully through the date itself since you want to stuff the peanut butter inside. Once you have the dates pitted, you just take a spoonful of peanut butter and stuff it right inside. I made most of my dates with peanut butter and then made a handful with almond butter, but all of my family agreed that we really like the peanut butter best. That said, we’re all peanut butter freaks, so use whatever nut/seed butter you love. Just use a thicker variety of nut/seed butter, as that will be easier for stuffing the dates. When all the dates are stuffed, just throw them in the freezer to chill out (this makes the chocolate dipping process go a lot faster and smoother), then dip, top with toppings, chill a little longer (until the chocolate is set) and EAT.
Could not be easier…or more delicious. Trust me on this one, you guys have to give these 4-Ingredient Dark Chocolate Covered Peanut Butter Stuffed Dates a try!! Please, please, please! 🙂

- 16 plump medjool dates
- 16 tablespoons creamy peanut butter OR other nut/seed butter
- 8 ounces dark chocolate or vegan chocolate chips
- 1 tablespoon coconut oil
- chia seeds hemp seeds, cacao nibs, toasted or raw coconut flakes, flaky sea salt, for topping (optional)

- Line a baking sheet with wax or parchment paper.
- Slice the dates in half lengthwise, being careful not to slice the date all the way in half. Remove the pits of the date. Stuff each date with 1 tablespoon of peanut butter and place on the prepared baking sheet. Repeat with the remaining dates. Place the dates in the freezer and freeze for 15 minutes.
- Meanwhile, melt together the dark chocolate and coconut oil in a double broiler or in the microwave stirring every 30 seconds until melted and smooth.
- Once the dates are well chilled, dip in the chocolate using a fork. Allow any excess chocolate to drip off the dates and then place the date back on the baking sheet and sprinkle with your desired topping. Repeat with the remaining dates. Chill the dates in the fridge for 30 minutes or until the chocolate is set.
- Keep stored in an airtight container in the fridge. Enjoy...preferably with cold milk! 🙂
