  • Roasted Garlic Butter Chicken with Lemon Olive Dressing. Sometimes the classics need an update, you know? This is roasted chicken, but better --> herby, garlicky chicken, roasted with pats of butter (yes. pats of butter), lemons (use Meyer lemons. so good) and served with a tangy + salty olive dressing. Add cheese (goat of feta, whichever you love). Simplest sheet pan dinner. I'd serve with crusty bread for scooping up the sauce...or french fries (see my stories).   • 30 Minute Coconut Milk Braised Chicken with Sweet Potatoes and Rice. It's cozy comfort food, but yet pretty healthy too. It's all made in ONE POT (or the instant pot or slow cooker). And? It is just another excuse to make homemade naan, which you know I am all about. Extra saucy curries need naan...plus rice. All the carbs basically :) If you haven't made this yet, it's time.   • Fried Buffalo Goat Cheese Balls. Nothing classy about these. Just addicting. Goat cheese, coated in breadcrumbs, pan-fried, and tossed in spicy homemade buffalo sauce.   • Fudgy Avocado Brownies with Chocolate Fudge Frosting. PLEASE do not let the avocado scare you, these brownies are insanely good...and a lot healthier than your average brownie. They're chocolatey, perfectly sweet, studded with chocolate chunks, and finished with the best chocolate frosting. The avocados only add richness, I promise you don't taste them. And? +gluten-free.
