Chewy, crisp Chocolate Dipped Sesame Oatmeal Bars. Everyone will love these easy, wholesome chocolate bars! Sweet and salty with just the right amount of CRUNCH, these oats n’ honey sesame bars are mixed with old-fashioned oats, nutty sesame seeds, brown rice crisp cereal, sweet honey, and vanilla. They’re baked until crisp, then cut into bars and dipped, dunked, or drizzled with chocolate. Toasted sesame seeds go on top. So delicious!
It’s the first Friday of the new year, and some things never change – we’re again talking all things chocolate! I could have shared a handful of other recipes today, but I couldn’t let the first week of the new year pass without sharing something on the sweeter side.
These are the perfect chocolate bars to indulge on this year. They still satisfy your sweet tooth, but instead of being packed with white flour and processed sugars, like our beloved December cookies, these bars are made with nutrient-rich ingredients: ground flax, sesame seeds, oats, and dark chocolate!
After a couple of months of sharing nothing but sugar-filled cookie recipes, I’m excited to embrace less sugar. January allows me to be super creative with the sweets – sometimes even healthier desserts can be our favorites!
Recipe favorites like my maple banana bread, these peanut butter “Twix” bars, and these tahini oatmeal chocolate chip cookies are LOVED year-round.
Today, we have a new kind of bar, one with a bit more crunch. I already know I’ll be making these often this winter. Those toasted sesames on top are the secret to a delicious, healthier chocolate bar!
Here are details
Step 1: mix the dry
A combination of old-fashioned oats, sesame seeds, almond flour, and ground-up flax seeds. The sesame seeds are not your usual dessert ingredient, but just like peanuts, they’re delish when used in sweet chocolate recipes.
Step 2: mix the honey
Take the honey, warm it together with coconut oil, and then add vanilla. Now, pour this sweet mix over the oats and stir everything together until all the oats and seeds are coated.
Step 3: bake
Just two steps in and we’re already baking. Woohoo!
Press the cookie dough into a square brownie pan. Be sure to pack the dough into the pan firmly. Now bake until you smell the bars getting toasted, about 20 minutes.
Let the bars cool in the pan. Then, I like to cut these while they’re still soft. I think it’s easier this way.
Step 4: dip/dunk/cover in chocolate
Once the bars are fully cool, you can dip, dunk, drizzle, or even cover them in chocolate. It’s totally up to you!
Personally, I like to mix and match. I dip some, drizzle others, and then completely cover some in chocolate for the people who really love a chocolatey chocolate bar.
Before you let the bars set, sprinkle the melted chocolate with toasted sesame seeds. These are what make the bars feel indulgent and taste so delicious!

Ingredients
- 1 1/2 cups old-fashioned oats
- 1/2 cup sesame seeds
- 1/2 cup brown rice crisps cereal
- 1/4 cup almond flour
- 3 tablespoons ground flax seeds
- 1/4 teaspoon baking soda
- 1/2 cup honey
- 2 tablespoons melted coconut oil
- 2 teaspoons vanilla extract
- 12 ounces dark chocolate, melted
- 2 tablespoons toasted sesame seeds, for topping
Instructions
- 1. Preheat oven to 350° F. Line an 8×8 inch square pan with parchment paper.2. In a bowl, mix the oats, sesame seeds, brown rice crisps, almond flour, ground flax seed, and baking soda.3. Warm the honey and coconut oil together in the microwave, then pour over the oats. Add the vanilla and mix well. Press the dough into the prepared pan. I like to use the back of a measuring cup to firmly pack the dough into the pan. 4. Bake for 20 to 25 minutes, until golden on top. Let cool for 10-15 minutes, then cut into bars. Cool completely before dipping. 5. Cover/dip each bar in chocolate and sprinkle with toasted sesame seeds. Freeze for 10 minutes to set the chocolate. Eat or store in the fridge.
These are so yummy! I melted some chocolate chips with a little coconut oil and poured the chocolate on top of the baked mixture once cooled. I let the chocolate set before cutting and they came out great! This is the perfect sweet treat! I may add a little but butter next time for some added richness.
Hi Hannah! I’m so so glad you enjoyed this recipe! Thank you for trying it out! xT
I had high hopes for these but they just did not work for me. Followed the recipe exactly and baked for 25 minutes until golden brown. After cooling for 15 minutes, I cut them into bars then let them cool completely. When they were cool, I tried to separate the bars and they all fell apart. The only ones that held together were the corner pieces. Dipping in chocolate was not an option. The mixture tastes good so I will just sprinkle some into my morning greek yogurt.
Hi Louann! I’m so sorry these didn’t turn out for you! Thank you for letting me know! xT
Delicious and healthy! I used white chocolate to drizzle on top and whole flax seeds instead of ground and it still worked a treat! I’m going to have a play around adding dried apricot or other options too.
Hi! I’m so so glad you enjoyed this recipe! Thank you for trying it out! xT
would you enhance the flavor by toasting the sesame seed that you put into the bar mixture? Or is it better to leave those untested?
Hi Carlene! You could definitely do that if you’d like! xT
Could you use regular rice crispies?
No, you cannot.
Great recipe! The only change I made was I just drizzled the chocolate on the bars because I didn’t have enough to dip. They still tasted delicious.
Thank you so much Leah! xT
I just made these, but was too lazy to go to the store so I made 2 small adjustments that a couple people just asked about, so I am hoping this comment will be helpful. I only had half the amount of honey, so I replaced the other half with date paste. I only had GF AP flour, not almond flour, so I used that. I really like how they turned out! Healthy(ish) and delicious!
Hey Diane! Thank you so much for trying the recipe out! Love to hear that it was enjoyed! 🙂 xT
YUM! Trying these this week!
Hope you love these oatmeal bars! xT
Can you leave out or sub the sesame seeds? Will it effect the consistency if I leave them out? Looking forward to trying these today
Hi Tara! I haven’t ever tried that before so I’m not sure! So sorry! xT
Do you think I could add a protein powder in? Thank you so much!
Hi Sam! I haven’t ever tried that before so I’m not sure! If you do add in protein powder I would just add it in a bit more honey or coconut oil! xT
Hm, I don’t think I would like this. Sorry!
Don’t give a recipe a poor rating just because you don’t “think” you would like it. That’s not right.
Crazy that even needs to be said.
Then why comment and leave a bad review? Lord.
No offense, but I also see a five-star rating by someone who hasn’t tried it. Why aren’t you criticizing them too?
Hey Marica! No worries at all, feel free to skip this recipe if it doesn’t look good to you 🙂 xT
What are the flowers sprinkled on top? Did I miss something in the recipe? Thank you!
Hi Kenna! They’re just little dried rose petals that I sprinkled on top for fun! 🙂 xT
This sounds delicious!! Do you think the amount of honey could be reduced and some date paste used instead?
Hi there! I haven’t ever tried that but that sounds like it would work well! 🙂 xT
Can I substitute with a different flour? We have a tree nut allergy in the house!
Hi there! I haven’t tried this with a different flour before so can’t say for sure! xT
This sounds like a WIN! I am definitely going to try these.
Thank you Paula! Hope you enjoy! 🙂 xT
