Yes, this is totally happening right now and I am so exited about it! It’s true what they say, sometimes the simplest things are the best, and this bread is simply the best.

I mean, come on do you see all that brie? What’s not to love about that? No joke, this bread is full on amazing. I might just eat it over turkey. No, I would totally eat it over turkey. Cheese and carbs for the win…my mom would be so proud! But guys, in all seriousness this is truly a great recipe to have on hand during the holiday season. I’ve already made it twice and definitely plan on making it again on Thursday as Thanksgiving appetizer. Even though we’re missing a few family members this year, we still have a large crowd and appetizers are a must.

Speaking of Thanksgiving, did you all spend your weekend planning and prepping? I know a lot of you might not be cooking, but those of you who are, are you ready? I should have been planning and prepping, but I totally did not. My game plan is not one I recommend to others, I’m going to cook everything on Thanksgiving Day.

I know, I know, how stupid is that? STUPID. But I’ve got lots to do leading up to Thanksgiving. That leaves me with just one day to prepare food. It’s totally cool though because I actually look forward to this kind of cooking day all year-long. I was telling my mom the other day that Thanksgiving is what I call a “fun, no pressure” cooking day. Normally I’m on the clock trying to get recipes tested and photographed before the sun sets, trying to be creative and plotting out how make my recipes look their absolute best. But on Thanksgiving, I’m just cooking dinner for my family. We listen to Christmas music, bake pies with mom, and Asher usually joins in to help with the sweets…along with making a giant mess…oh well. Now don’t get me wrong, I want to create a delicious meal for my family, but as long as they have turkey, gravy, rolls and mashed potatoes they’ll all be very happy. They are simple, nothing too fancy, kind of people, so it’s not a crazy hard meal to cook. Plus, I think I’ve said this before, but we always get our Christmas tree on Thanksgiving so that makes the day extra fun!

Not that you needed to know all that info, but that’s basically my Thanksgiving day in a nutshell. What do you guys do? I’d love to know your family (or friend) traditions!

Ahh ok, so back to this cranberry brie pull apart bread!

I am sure you guys know about pull apart bread, but have you have seen it with cranberries and brie? When this concept came to mind, I was way too excited about it. Cranberries and brie have got to be one of the best combos. For one, who doesn’t like brie? I feel as though it’s got to be one of the most loved cheeses out there. And with good reason, it’s buttery, and so gooey when warmed.

Perfect for pull apart bread!

Here’s how this works. You cut your bread in a cross hatch type of way, then stuff it with butter, brie, pecans and cranberries – bake, pull apart and eat. Yes, it’s truly as simple as that.

People go crazy for this. When I presented it to my family it was gone in minutes. There’s really nothing not to love. It’s excellence in every which way, and the perfect appetizer for both Thanksgiving and Christmas festivities. <–truth.

PS. these are personal size cheese breads right….yeah right, JUST KIDDING…but not really. 🙂

Cranberry Brie Pull Apart Bread.

Instructions

  • Preheat the oven to 350 degrees F.
  • Slice the bread horizontally and vertically to create 1 inch cubes, being careful not to actually slice all the way through the bread.
  • In a small bowl, combine 2 tablespoons butter, the pecans and brown sugar. Use your hands to mix the butter into the pecans to create a crumble. Take the remaining 2 tablespoons butter and insert thin slices into the loaf of bread.
  • Place the loaf on a baking sheet and stuff the brie inside the bread, filling in all the spaces in between the cuts. Add the cranberries and pecans. Transfer to the oven and bake for 15-20 minutes or until the brie is melted and gooey. Serve immediately.

    Now this was good! Served this as an appetizer for Christmas and everyone loved it! We are big fans of Brie so we knew we were already going to love this recipe. Keeping this and definitely planning to make this again.

    I love this recipe!! I’ve made it four different time for holiday parties and it’s a huge hit. This last time I used cranberry sage chutney instead of the dried cranberries and was very nice. Thank you!

  3. I had all the fixings to do the Brie Cranberry Tarts for Thanksgiving but never got to it. So when guests arrived unexpectedly on Saturday, I took those fixings and made a version of this. Rolled out the puff pastry and spread some fig jam on it, placed the wheel of brie on top. Tossed the cranberries with the melted butter and brown sugar as directed but did not have cinnamon, so used a touch of Fireball whiskey. Placed this combo on top of the brie, wrapped it all up in the puff pastry and applied an egg wash. Baked at 350 degrees for about 20-25 minutes until it looked golden and gooey. It was devoured in minutes. So popular that I made it again for daughter’s graduation celebration and again scarfed right down is guess what is on the menu for Christmas drop in guests.

    I made this last night and unfortunately it looked nothing like the picture. We could not get the Brie yo melt. I finally took it out of the oven at 25 minutes due to the bread getting hard.
    I read later that I could have tried putting foil over the top. I was also thinking I should have removed the rind on Brie. I also thought that maybe I should have let the Brie get to room temp before cooking. All I know is it was not gooey and pretty like the pics and I had chunks of Brie instead of melted Brie. Could be a user problem. The nuts were very good with the brown sugar though.

    1. HI! What brand of brie did you use? Was if very soft or was it hard? I have never, ever had my brie not melt so my guess is that maybe it was the Brie you used?     Oh my! I made this last night for a house party and when it came out of the oven, it looked gorgeous. I was going to take a picture to post on IG. In between putting it down on the food table and quickly greeting someone, I turned around and it was being devoured. This was a HUGE hit! Wow! I was so happy to get in a few pieces and it is indeed delicious! I’m making it again for an apres ski party we have this Friday. Merry Christmas! I have a strong suspicion that your new cookbook will be under our tree tomorrow! I’m so excited! Oh – I’ll make sure to capture a photo of this deliciousness next time!

  6. We have a nut allergy in the family – what do you suggest as a substitute for the pecans? or if removing the pecans should i still mix the butter and brown sugar and put it in the bread with the cranberries?

  7. Do you think it could work to stuff the bread earlier in the day, and keep in fridge, then pop it in the oven when ready? Trying to see what I can make ahead for Thanksgiving so I’m not stressing last minute 🙂

    This was a huge hit at my daughter’s 1st birthday – Santa Baby – party. Next time I think I’ll cut the bottom crust off before doing the cuts almost all the way down, as it was a little difficult for people to pull apart (I used sourdough loaves). Also, I had cranberry sauce to use up and a guest with a nut allergy so I used the sauce instead of dried cranberries and left out the nuts. Excited to try it different ways. I also like the concept for different flavors too…maybe a spinach and artichoke pull apart bread? Thanks for the great idea!

    Okay – I just made this for Thanksgiving, with 16 guests…it was CRAZY GOOD. Everyone went wild for it. A few adjustments, for large number of guests and nut-allergic guest: I bought a long loaf of bread, and crammed every nook and cranny with everything but the pecans (so in the step where you coat the pecans with butter and brown sugar, I just did butter+brown sugar). A total delighter, it was gone in minutes.Everyone wanted the recipe too. Thank you for this!
