You know what is really weird?

My parents have been married since they were eighteen (while my mom was eighteen and my dad was twenty-one) and not one of their seven kids are even close to being married. I just asked my nineteen year old brother and three of his friends (sorry for those awkward conversations guys) if they had a serious girlfriend. Not one of them did – let alone a girlfriend at all. I have not a clue why I was thinking of this topic, but I just think it’s funny how different things seem to be. I think my mom would say that it wasn’t really typical then either, and apparently neither of my grandparents were too excited to see them get married at such a young age.

Actually, I was probably thinking about this topic because my parents 30th wedding anniversary was last week, but we didn’t really get around to celebrating it until my mom’s birthday on Sunday. It just got me thinking how freaking crazy they where to get married so young. And how it’s a miracle they are still together. Really, I could not even imagine being married at twenty-one, and by then my mom had two kids.

And now you probably find me rather insane for talking about such a random topic. Sorry, but I like randomness. In fact I am pretty sure I have been freaking my brother out with my latest texts…pretty sure he is wondering what the heck is wrong with me. I know the “do you have a girlfriend?” text really had to have freaked him out, I don’t usually ask those questions.

I have to say though, I’m sort of having fun messing with him. I’m telling ya, living on my own has made me a whole new and exciting person. Ok, while not really that exciting, I spent my Friday night placing a Williams-Sonoma order, but hey, baby steps.

ANYWAY, let’s talk about this coconut almond cream chia pudding.

I know this whole chia seed pudding concept may not be anything new for some of you guys, but I’m just now discovering it’s textured deliciousness. I knew chia seeds where magical little seeds, but whoa! I never knew that chia pudding could be so simple and tasty. All you really need is some type of milk and chia seeds and you’ll end up with a pretty good pudding. I of course added a little vanilla to mine, and some honey to sweeten things up a bit, but the flavor combos are endless!

Today I just went super easy and classic – fruits, nuts and seeds. I am really trying to keep recipes simple and not to fill them with a list of long crazy ingredients and flavors. I’m sure you have noticed, but I sort of like to keep building upon flavors and textures until I can’t go anymore. It’s mostly because I can’t make decisions on which ingredients I want to use, so instead I just use them all (assuming they taste good of course). It’s kind of an issue sometimes, but not today, today I went so simple!

In keeping with this whole healthy January thing, I thought this chia pudding would be perfect for today. There is nothing NOT healthy about this, and everything about this is so good, and I know I say this all the time, but it’s true.

This pudding is thick and creamy just like any other pudding, only you get to eat it for breakfast, dessert or snack. Gotta love that!

  • In a bowl, whisk together the coconut milk, almond milk, chia seeds, honey, vanilla and salt. Cover and place in the fridge for two hours or overnight. The next morning, spoon the pudding into 4 bowls or glasses. Top with sliced bananas, mangos, coconut, hemp seeds and pistachios, sprinkle with chocolate and drizzle with melted almond butter if desired.

As far as not being in a serious relationship when you’re young: to each their own…some peeps take a hot minute to acquire a taste for commitment, where some just know what they want right away. Sounds like you have a pretty kick A family, my dear! Loving this pudding and all your healthy and tasty add-ins!!

  4. Hi – new to this reply business. But I am definitely going to try this pudding with all sorts of fruits, nuts and dark chocolate – whatever I have on hand – it looks yummy!

    I can relate to your Mom – we have 7 children also and the last 4 have waited until they are all in their 30’s to get married! (not such a bad idea). I tell them that I didn’t think they would wait that long – why couldn’t they get married in their 20’s when I was working and had some $$’s – now retired and with 4 weddings in 3 years – you know that gest a bit expensive! But I do wedding flowers and decor since I have retired as a health education professor – so that helps them and me too.

I’ve yet to try the chia seeds and chia seed pudding….there’s something that just sort of creeps me out about those seeds….I think it from all those chia pets we played with as kids (whom am I kidding we did Kung fu panda in the office last year)…but if you say its good I may need to give it a try.

  12. First of all went back to look at the two cakes you made both were out of this world wonderful–but I would have had a piece of the chocolate–lucky mom!
    Second being over the hill–I had many friends get married young and thank God they are still married (I’m still waiting for someone to ask–ugh).
    Thirdly sorry to say I’m not a pudding person but I do like tapioca.
