Hello perfect Superbowl snack!
Or salad topper (um, I totally did this for dinner last night! Buffalo fried goat cheese, buffalo chicken, avocado, french fries, broccoli. Oh and ya know lettuce + spinach!), or quick bite from the fridge, or as a compliment to your Sunday morning eggs or even as a late night cheese craving!
This buffalo fried goat cheese is goooood. Like really, really good. I mean they’re fried goat cheese, rolled int buffalo sauce. And it’s not just goat cheese in those cute little balls of deliciousness. Nope, I added just a tiny bit of blue cheese crumbles because in my opinion you can’t do anything buffalo without some blue cheese! But, if for some crazy reason blue cheese is not your thing don’t worry, it is totally optional. Oh and the best part – they’re not really fried! Nope, I baked those suckers to golden cheesy perfection! So you know, you don’t have to feel so bad about eating straight cheese (I mean cheese has it’s place on the food pyramid) and buffalo sauce (great for keeping colds…and flu at bay)!
When I was making these I had one thought in mind………Superbowl Sunday!
Yes, I know, the Superbowl is not until February 3rd, but with the holidays over, the Superbowl is the next best thing! Gotta have something to look forward to, you know!
But in all honesty, I know absolutely nothing about football! Well, except the fact that the Denver Bronco’s just had a huge upset last night. I mean, what the heck they were the number one seed in the NFL…crazy! Guess I know a little more than I thought – to many guys (I am talking family) in my life!
Anyway, the Superbowl means lots of bite size foods and a whole lot of buffalo sauce. Oh, and for most people probably a whole lot of beer! I mean, we are talking about a football game here.
Oh and guys, these are quick and easy! Just roll your cheese, pop in the oven to “fry” and toss with your buffalo sauce. Done. These can even be prepared ahead of time and either eaten at room temperature, warmed back up the in the oven for just a few minutes or even straight out of the fridge! Just a note about the blue cheese. If you do decide to use it (um if you like blue cheese this is a must!) I must note that they are a bit more crumbly than if you were to just use goat cheese. When the blue cheese is warm it does not hold its shape as well the goat cheese. But if you let the balls cool and serve them cold or at room temperature they hold their shape pretty well! And the they are delicious hot, room temp or cold!
