Made with dark brown sugar, rich molasses, ginger, and the real secret…chocolate chips! These cookies are generously glazed with a sweet, thick, and creamy maple glaze that melts in your mouth. There’s really nothing not to love! The perfect holiday cookie to bake, share, and gift this holiday season!
I’ve never been someone who’s picked a ginger cookie over say a chocolate chip cookie. But I know so many of you guys love them, and I love to bake them around the holiday season. They’re perfect for gifting, and I will admit, they always smell delicious while baking.
Since I’m making ALL the Christmas cookies I can this December, I really wanted to figure out how to make a ginger cookie be extra delicious. Not just gingery and good, but gingery and really darn delicious, with perfect edges and chewy middles. These cookies are that. Soft, chewy, filled with molasses and a good amount of ginger, plus sweet and chocolatey.
And the vanilla maple glaze really makes them special, maybe even a little over the top.
These have been on my list since mid-November. I wasn’t sure I’d make them, but I’m so glad I did!
Beat the butter with dark brown sugar, then add the eggs and molasses. Next, add the dry ingredients and stir in some chocolate chips. That’s the dough…and as you can tell, it’s simple as can be.
Roll the dough into decently sized balls using buttered hands. The buttered hands are key, the dough is on the sticker side, so the butter helps to roll without drying the cookies out.
Then just bake. That’s literally it for the cookie. No fuss, but totally delicious.
This glaze is everything. I first used it with my maple cookies back in the fall and it’s been a favorite ever since. It’s what makes these cookies really melt in your mouth.
It’s simply butter, maple syrup, vanilla, powdered sugar, and salt.
Once you’ve finished the glaze, drizzle it over each cookie. You can eat them warm or allow them to cool, either way, they are delicious.
One thing that really sets these cookies apart from other molasses-based cookies is extra molasses (and chocolate chips). I like to use a bit more molasses than most molasses cookie recipes call for. I wanted each cookie to be extremely chewy and for the molasses flavor to really be pronounced. So, I upped the amount of molasses and added vanilla extract. This combo does a nice job of highlighting the molasses and ginger flavors. The result is a perfectly chewy molasses cookie with hints of vanilla and ginger throughout.
Then, of course, the chocolate. It’s not expected, but everyone loves the addition of chocolate…and the sweet mapley glaze on top.

These were excellent! Added a couple of tablespoons of brewed coffee as well, which made the dough a bit more sticky but were delicious when baked with good consistency. Big fan, and will be making again

These were overall tasty cookies, but they just tasted like chocolate chip cookies. If you are expecting a ginger snap type cookie these are not it! Not nearly enough molasses or ginger to make it taste like the delicious fall ginger cinnamon cookie I wanted it to be.
However it is a great recipe if you are wanting chocolate chip with a slight spice

I made these to add to my Christmas cookie platter last year and was thrilled with the recipe! It’s one of my favorite flavor combinations! Have you ever used store bought ginger snaps instead of Graham crackers in your s’mores? Well, you should try it and then you will know what ginger and chocolate go so well together!
Anyways, I made these again yesterday and can not stay out of them!
I double the chocolate chips, add fresh micro planed ginger and increase the flour by 1/4 cup.

If you want a less cakey and more chewy cookie could you use 1/4 cup less flour and 1/4 teaspoon less baking soda?
You could certainly try that, but I’ve not tested it so I really am not sure! Let me know if you give the recipe a try:) xx
The cookies were easy to make and tasted great, but the glaze did turn out quite right, not as white as yours and it didn’t seem to set at all. Not sure what I did wrong.

I love, love these cookies. Mine didn’t flatten though. They looked like domes. I wonder if it has to do with geography. I’m just at sea level in Nova Scotia and you are in Colorado! I don’t know. Just grasping at straws.

Although I have never gotten into baking, I’m lucky enough to have friends that do. Even more amazing is that some friends will take the hint and actually make the cookie or cake if I send them a recipe, as I did with this one. Lucky me! This recipe intrigued me because I love ginger and maple and chocolate chips. So I texted it to my good friend and she made them for me. Wow! These cookies are amazing! These are my FAVORITE! So easy and delicious. At first I was skeptical of adding chocolate chips, so I baked half of the cookies without them and added chips to the second half of the dough…the ones with chips were WAY better ?. I should have trusted you!
One question – my glaze turned out very transparent and not opaque and pretty like yours. Still tasted delicious, but not sure what I did wrong? It also took forever to set. I think I added the powdered sugar to the butter/maple syrup combo while it was still too warm? Idk.
