This classic, old-fashioned cobbler is layered with blueberries tossed with real vanilla bean, bubbling beneath a tender buttermilk biscuit topping. The brown sugar caramelizes around the edges, creating a golden, crisp crust. It’s best served warm with a scoop of ice cream on top!.

Whenever I have a lot of people around me—especially those I’m closest to—I find the most inspiration for new recipes. I say this often, but it’s true: I love to cook because I love creating beautiful, delicious meals to share.
I’m a gift-giver at heart. I love giving physical gifts, but feeding family and friends feels even more special. It takes more thought, more care, and a deeper understanding of what someone really loves.
I know my family’s tastes better than they do—it’s true.

My youngest brother, Oslo, is especially fond of sweet, vanilla-forward desserts. Vanilla ice cream and chocolate chip cookies are his favorites. He also loves lemons and limes and will happily eat just about any berry. It’s safe to say he’s a sweet-and-sour kind of guy.
I try to introduce him to new foods whenever I can. He’s a typical 5-year-old who would happily live on Kind Bars and ice cream, but if you slow him down, he’s usually open to trying something new.
I told him I baked this cobbler just for him and made sure he was nearby while the berries bubbled in the oven so he could smell how good it was going to be.
All it needed was a scoop of vanilla ice cream. He happily enjoyed bite after bite. Since blueberries are his favorite, I kept this simple with mostly blueberries and a touch of blackberry jam—but you can use any berries you love.

Special Tools
Nothing fancy – just a baking dish and a couple of mixing bowls. You don’t even need to do any chopping for this berry cobbler!

Steps
Step 1: Melt the butter
Preheat the oven. While it heats, place the butter in a 9×13-inch baking dish (or a 10–12 inch skillet) and set it in the oven to melt. Keep an eye on it—you want it fully melted, not browned.

Step 2: Mix the batter
While the butter melts, stir together the flour, baking powder, and a pinch of salt. Add the milk and brown sugar, mixing until just combined. The batter should be thick but scoopable, similar to a soft biscuit or thick pancake batter.
Step 3: Prep the berries
Carefully remove the hot dish from the oven. Add the blueberries, brown sugar, jam, vanilla bean paste, and flour directly to the melted butter. Toss gently to coat. This will help create a thick, jammy filling as it bakes.

Step 4: Assemble and bake
Spoon the batter over the berries—don’t worry about covering everything evenly. Sprinkle the top with granulated sugar for a crisp finish.
Bake for 45–55 minutes, until the center is just set and the edges are golden brown. The berries should be bubbling and the top lightly crisp.

Step 5: Serve and enjoy
Let the cobbler cool slightly, about 10–15 minutes. Serve warm with scoops of vanilla ice cream or a dollop of whipped cream. It’s simple, classic, and perfectly cozy—the kind of dessert just about everyone goes back for!
