Heyy! Happy mid-week!!
So I have been sitting here for the past 30 minutes just kind of brainstorming about what I should chat with you guys about today and so far I got, nottah.
Other than the fact that I received this crazy mean email. Plus a few other not so awesome and or unfriendly things have happened recently and it’s totally got me wondering how people can be so mean sometimes. I mean, like high school is over. Let’s just be grown ups and keep our mouth shut if we’ve got nothing nice to say, you know? No one is forcing anyone to do anything here.
Whatever. That’s life, it can be a tad cruel at times, but it’s mostly awesome, so I am going to try to stop stressing about the email.
And since, my life is on the boring side today and I have nothing to ramble on about, let me tell you about this fast and easy chicken and grilled pineapple stir fry.
I love a good stir fry, but I especially love them in the summer. This is mostly because it’s what my dad used to make us in the summertime when I was a kid. Nights where pretty hot and humid living on the lake in Ohio, so oftentimes my dad would just throw a bunch of veggies in a skillet, add some chicken and soy sauce and call it a stir fry. Of course there would be rice and cashews for topping because that’s just how this family does it, but the point is, stir fry was always my favorite.
I really just liked the veggies doused in soy sauce. I’d eat all the red peppers and broccoli and the boys would eat the chicken. It worked out well.
When I began taking over family meals, our stir fry’s got a little more creative and the sauces a little more complex…which means I didn’t just douse everything in soy sauce…not that I have an issue with that because I kind of love salty food (it runs in the family), but I thought it might be nice, and a bit healthier, to get a bit more creative.
Today’s stir fry is sweet Thai peanut chili with a side of grilled pineapple.
It. Is. PERFECT. Like the best light, fast, simple and healthy weeknight, summertime meal.

Gah, I hate getting those emails, I think people that do that are just unhappy. Anyway, this is a fun reicpe and I love the sauce.
Those colors! This stir fry looks killer, I love the grilled pineapple :).
So sorry about the mean email – I find that when people are rude, it’s more of a reflection of them than of you ;). Hope your day gets better!
Tieghan, “mean people do suck”. Your recipes, photos and blog brighten up my day and my tummy! Keep doing what you do! You have a gift! Carpe Diem!!
This looks so yummy!!!! Cannot wait to try this out. The husband loves stir-fry and I love pineapple so it’s a win win!

Ohh I remember those hot and humid Ohio nights! And bugs! I yi yi! But, don’t you worry about that nastygram you received…as T Swift always says: haters gonna hate 🙂 haha!
Oh yum yum yum! I love Thai flavors!
I forget to read the words because I can’t take my eyes off the pictures.
The grilled pineapple looks AMAZING!! I’m sure it goes beautifully with the peanut sauce. Thanks for sharing!
Hi Tieghan,
I’ve been meaning to write you. I start my day with opening your beautiful posting. I don’t consider myself a good cook but I am trying to be more creative with flavours.
I love your photography and now my two sons (14 and 19) also want to see what “Tieghan’s been cooking”.
I’m making the almond pops and shrimp tacos for father’s day this weekend – I’ll take some pics and send them along.
As for the mean people, remember, they’re more to be pitied than blamed.
Thanks for all your wonderful inspiration!
Karen
Hey Karen!
Thank you so much for taking the time out to comment. Your kind words put a smile on my face tonight!! Cannot wait to see your pics, THANKS!!
I’m printing this recipe and making ASAP! This looks fantastic! Oh and Tieghan – those emails, use the delete button and be done with it.
Oh why is grilled pineapple so good?! Its seriously an addiction.
And I hate how others can feel like they can be so mean to others. I believe it makes them feel better. The hard part is, you can’t let that get you down and just realize mean people are so unhappy with their own life they try to bring others down to their level. Happy Wednesday, Tieghan!
Helllllloooooo party in my mouth, wholly moly this looks scrumptious. Put me in coach, I’m ready to play! Never grilled a pineapple before. Using my favorite peanut butter, Peter Pan for this baby.
Grilled pineapple is MY LIFE. And that is not even an exaggeration! I am all about a good stir fry in the summer, and that Thai Sweet Chili goodness is calling my tastebuds! pinning!
Oh no, I hate it when people are deliberately mean on the internet… It is so unnecessary! Just so you know, you also have a lot of fans 😉
Lots of love from the Netherlands <3
This looks TOTALLY amazing. Stir fry is one of my favourite things to make, but this looks SO full of flavour. Definitely going to be trying that out!
As for mean things… yep. People suck sometimes but it’s life. Your blog is awesome and you are doing awesome things so just be confident in that 🙂
