You guys, want to know why I love the weekend??

And why Monday pretty much always gets a big thumbs down???

It’s because on the weekends, no one sends emails…meaning I actually have a chance to catch up on all of the emails I have yet to respond to from the week. It’s a great thing, I try to clear my inbox (which almost never fully happens, seems like there is almost always 1 or 2 emails that I just can’t figure out how to respond to yet) and then feel all organized again…

But then Monday happens, and all those emails I responded to now have answers, and well, I feel all un-organized again. UGH.

Don’t get me wrong, I love reading the personal emails, it’s just the rest of the stuff…my inbox is semi insane lately. Remind me to unsubscribe from all email subscriptions to like every magazine and online retailer. Their emails take up all my space…and yeah, I am aware that I probably buy way too much stuff (I am looking at you Anthropologie…and ok Williams-Sonoma).

Feeling like I can’t be the only one who feels this way though??

And yes, I am also aware that it’s actually Tuesday and not Monday. Although, these creepy dreams of animals crawling on me while I sleep are certainly not helping. The days are starting to blend together a bit…

But I swear, I am well aware that today is Tuesday and that I should be talking about Tuesday things. It’s just that I was thinking about this yesterday, so you get to hear about it today. It’s just kind of the way it works.

But umm, now let me tell you about this chocolate almond milk.

First off, how awesome is chocolate milk in general?? I mean, it’s sort of healthy, it’s obviously got milk (healthy) but it’s also got chocolate (can be healthy – depends on the type of chocolate). It’s also great to drink post workout to replenish tired muscles. Really? Honest, it has double the carbohydrates and protein of sports drinks and is great for rehydrating.

Ok, so I’m not a fitness expert or anything, but there are plenty of articles on it. For me it was always more of something that I just drank with my meal, or at least that’s the way I did it growing up. It’s still the way my brothers do it…but I won’t drink the chocolate milk they drink, cause they like the umm, for lack of a better word “bad” stuff. Meaning they only drink the chocolate milk with corn syrup. Eww.

So the other day I basically freaked them all out and made chocolate milk with almonds. They didn’t even know what to think. They just looked at me with a disgusted look and said, “that’s weird…where’s the cow’s milk at”?

Amateurs.

Really though, this almond milk is SO good, my parent’s loved it! It’s actually such a healthy sweet treat or snack (a more grown up way to drink it). I used dates to sweeten it and cacao powder for an extra dose of antioxidants.

Oh, and if you’ve never made almond milk, don’t be scared, it’s so easy. You can make it with just almonds, water and a tea towel. It really doesn’t get any simpler.

SO you can totally just stop at the chocolate almond milk and call it a day, BUT, you kind of have to make the coffee ice cubes. Like you have to!!

They are creamy, malty and packed with a good punch of coffee flavor. When you add them to the almond milk it makes the PERFECT iced mocha. Trust me on this on. DO IT.

And yeah, clearly enjoying this cold drink outside in the green summer grass is the way to go.

Chocolate Almond Milk with Creamy Malted Coffee Ice Cubes.

Ingredients

Chocolate Almond Milk

  • 1 1/2 cups raw almonds + 4 cups water for soaking
  • 4 cups water
  • 4-6 dates depending on your sweetness level
  • 1/3 cup unsweetened cacao powder may also use unsweetened cocoa powder
  • 1 tablespoon vanilla bean seeds removed (or 1 vanilla)
  • pinch of salt

Creamy Coffee Ice Cubes

  • 1 cup coconut milk (canned or from the carton but I used canned for the thickness)
  • 3 tablespoons malted milk powder omit if vegan or if you just don't want the malt
  • 1 tablespoon vanilla bean seeds removed (or 1 vanilla)
  • 1 cup strong black coffee I used cold brew coffee

Instructions

Chocolate Almond Milk

  • Add the almonds to a 4-cup glass measuring cup or bowl and cover with around 4 cups water. Allow the almonds to sit overnight or in a pinch, at least 1 hour.
  • The next morning, drain the almonds and rinse well under cold water. Add the rinsed almonds to a high powdered blender or food processor. Add 4 cups of water and the dates. Puree until the almonds are very finely ground, about 2 minutes.
  • Line a bowl or glass pitcher with a double layer of cheese cloth, a [nut milk bag | http://www.amazon.com/Pro-Quality-Nut-Milk-Bag/dp/B00KLT6X9W/ref=sr_1_1?ie=UTF8&qid=1434324091&sr=8-1&keywords=nut+milk+bag&pebp=1434324099048&perid=A7A2AF63021E4ED6937A] or a thin cloth kitchen towel (I just used a kitchen towel). Slowly pour the almond milk mixture into the cloth (or bag). Gently squeeze the bottom of the cloth to release the milk. This with take about 3-5 minutes to get all the milk out.
  • Rinse out blender and pour the milk back in. Add the cacao powder, vanilla bean seeds and a pinch of salt. Blend on high until smooth and creamy, about 1 minute.
  • Pour into a glass jar to store in the fridge for up to 1 week. Shake well before drinking and serve with the creamy coffee ice cubes (recipe below).

Creamy Coffee Ice Cubes

  • In a blender, combine the coconut milk, malt powder and vanilla bean seeds. Blend until smooth. Pour the mixture among 15-18 ice cube molds, leaving at least half the mold for coffee. Pour the coffee over the coconut milk. Freeze for 4 hours or overnight. Serve with the chocolate almond milk

  1. I was making almond milks 30 years before it was instyle. My son had milk allergies and his Naturopath send blend on high 1/4 cup of almonds with 1 cup cold water, pour through sieve to get out any remaining pieces, chill and drink. But now I see all these recipes for soaking the almonds and then blending and squeezing through cloth. Does anyone know why you do this?

    1. Soaking the almonds helps them blend up quicker and easier. Straining the milk removes the almond pulp. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
