You guys, I love peaches!
And nectarines. Actually, maybe nectarines more, but today is about peaches. I mostly just love them just as they are, but this summer I have really gotten into baking with them. I will still take a fresh peach from the tree over baked, fried or grilled any day… yes, even if there is butter and bourbon involved. But why not jazz up your breakfast with a little tastier (and prettier) sweet caramelized peaches?
Yeah, it is pretty much a no brainer. Peaches all summer long.
So that’s where this super easy, make ahead peaches and cream breakfast bake comes in. Let me just tell you, it is so good. The peaches get a little love from some brown sugar, butter and vanilla and then the rest is just a basic pancake mix. Promise, it comes together in no time and is perfect for entertaining. Come fall I am totally going to be swapping in my favorite honeycrisp or pink lady apples. Mmm…so good either way.

I can not believe you loved my cake so much!!! I have been so jealous of your climate right now and all the peaches you have. I could eat that skillet for dinner with a big scoop of ice cream too and not feel an oz of guilt.

I love peaches too! I seriously ate like 10 donut peaches this morning that were so juicy and ripe!

Just got home today from getting 5 boxes of South Carolina peaches. Not all for us though. That is my favorite fruit. Peach cobbler, peach crisp, peach scones, peach bread, peach muffins, peach butter, peach jam, peach ice cream, peach upside down cake, peach shortcake. Did I miss anything?? HAHAHA!!!

Nectarines and peaches have been vying for my affections all summer long. I can’t choose a favorite… So I just eat huge quantities of both! This might have to be breakfast this morning!

Nope, it needs to be perfectly ripe white peaches for the win. Which reminds me, it is a crime I’ve only squeezed one peach recipe onto the blog this Summer (Monday!), so I need to work on rectifying this…
