1. Make the dough. In the bowl of a stand mixer fitted with the dough hook, combine the warm cider, yeast, and sugar. Let sit for 5–10 minutes, until bubbly. Add the butter, egg, flour, and salt. Knead until smooth, about 4 minutes. Cover and let rise for 1 hour, or until doubled.
2. Cook the Apples. In a skillet over medium heat, combine the apples, brown sugar, cinnamon, and molasses. Cook, stirring occasionally, until the apples begin to soften and the mixture is bubbly and syrupy, about 5–6 minutes. Cook for another minute, then remove from the heat. Transfer to a heatproof bowl, stir in the vanilla, and let cool.
3. Shape the fritters. Punch down the dough and roll into a large oval, about 1/2 inch thick. Spoon the apples over half the dough, sprinkle lightly with flour, then fold the dough over the apples and seal the edges. Gently press into a long oval. Make 10–12 cuts across the dough, then 5–6 cuts in the opposite direction to create a crosshatch pattern. Pull the pieces apart into individual fritters, tucking in any loose apples. This gets messy, don't stress! Place each fritter in a parchment baking cup. Cover and let rest while heating the oil.
4. Fry. Heat about 1 quart of avocado oil in a large Dutch oven to 350°F, filling the pot no more than one-third full. Working in batches, carefully lower the fritters into the oil with their parchment cups. Fry for 2 minutes, flip, and remove the parchment with tongs. Fry another 1–2 minutes until deeply golden and cooked through. Transfer to a cooling rack.
5. Make the glaze. Whisk together the powdered sugar, warm milk, maple syrup, vanilla, and instant coffee. Add a pinch of flaky sea salt. Thin with additional milk if needed.
6. Drizzle with glaze. Dunk the warm fritters into the glaze or drizzle generously overtop. Let the excess drip off, then enjoy. SO GOOD!
