1. Preheat the broiler to high with a rack in the top third of the oven. 2. In a large oven-safe skillet, heat a drizzle of olive oil over high heat. When it shimmers, add the tortilla to the skillet. Sprinkle with herbs, spread on the tomatoes, add the provolone cheese, artichokes, and pepperoni. Remove the skillet from the heat and add the mozzarella. 3. Transfer the skillet to the oven and broil for 1 to 2 minutes, or until the cheese is melted and bubbling—watch closely, this will cook fast! Remove from the broiler and carefully slide the pizza out of the skillet onto a plate. 4. Top with arugula, red pepper flakes, and a drizzle of hot honey (below).
