Thai Grape Quinoa and Peanut Salad.

Ingredients

  • 2 tablespoons [Smucker's Natural Creamy Peanut Butter | http://www.smuckersnaturalpeanutbutter.com/?utm_source=halfbakedharvest&utm_medium=blogpost&utm_campaign=mand]*
  • 1/3 cup sweet thai chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce optional
  • 1 tablespoon rice vinegar
  • 3 cups cooked quinoa
  • 1 1/2 cups red grapes halved
  • 1/2 cup fresh basil + cilantro
  • 1/2 cup roasted salted peanuts, chopped
  • fresh mint for garnish

Instructions

  • In a large salad bowl, whisk together the peanut butter, sweet thai chili sauce, fish sauce, soy sauce and rice vinegar until smooth. Add the quinoa, grapes, basil + cilantro and toss well to combine.
  • Garnish with peanuts and fresh mint. Serve warm or cold.

Notes

*It is VERY important that you really mix your peanut butter well before adding it to the recipe. You want to make sure you mix any oil at the top of the jar with the peanut butter below so that it is smooth and spreadable.
