Sesame Asparagus Quiche

Buttery crackers, eggs, cheese, asparagus, and bacon. And mmm, more cheese.

Ingredients

Sesame Cracker Crust:

  • 2 cups Sesame Crackers Crumbs about 25-30 crackers
  • 6 tablespoons Butter melted

Filling

  • 4 large eggs
  • 3/4 cup Heavy whipping cream or half and half
  • 1 1/4 cups Havarti Cheese shredded
  • 3/4 cup Cheddar Cheese shredded
  • 1 1/2 cups chopped asparagus
  • 1 teaspoon olive oil
  • 6 pieces Bacon optional
  • 1/2 teaspoon salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Red Pepper Flakes
  • 1 teaspoon dried Dill

Instructions

  • Preheat the oven to 375 degrees. To make the crust mix the sesame cracker crumbs and melted butter until well blended . Press mixture into an 9 inch pie plate or tart pan.
  • Bake at 375 degrees F for 7 minutes. Cool.
  • Grease a roasting pan and add the asparagus, pinch of salt and pepper and olive oil. If using bacon, line a baking pan with foil. Arrange bacon on a cooling rack or slotted baking sheet and place on the foil line backing pan. place both dishes in the oven and bake to crisp, 15-18 minutes.
  • In a bowl, whisk together the eggs and cream, add 3/4 cup of the havarti cheese and 1/2 cup of the cheddar cheese. Then stir in the remaining ingredients. Top with the remaining cheese.
  • Pour the filling into the cooled pie crust. Top with the remaining cheese. Bake for 50 minutes or until golden and cooked through (the center shouldn’t jiggle).
  • Allow to sit for 5 to 10 minutes before cutting.
