Frozen Peach Rosé Slushy

1. To make the peach thyme syrup: Bring 3/4 cup water, the fresh peaches, honey, and thyme to a boil in a small pot. Simmer 5 minutes, until the peaches are very soft. Remove from the heat and strain through a mesh strainer into a glass jar. Chill. 2. In a blender, combine the frozen peaches, wine, peach thyme syrup, and 1/2 cup of ice. Blend until slushy. Add additional wine to thin.3. Pour into glasses and serve with fresh peach slices. Drink!
To Freeze Your Own Peaches: slice the peaches, and if desired peel them (I like to leave the skin on). Arrange the peaches on a baking sheet lined with parchment paper and freeze for 4 hours or overnight. Use as directed in the recipe.
For a stronger Drink: add 1/2 to 1 cup vodka.
