Perfect side dish to burgers, wings or even atop a salad, AND they're pretty healthy too! Got to love when delicious food is also good for us!

Garlic Cheese Sauce
- 1 tablespoon olive oil
- 1 cloves large or 2 small of garlic minced or grated
- 1/2 cup milk + more if needed
- 1 1/2 cups shredded sharp cheddar cheese or smoked gouda chese + 1 tablespoon flour
- 1 teaspoon seasoned salt + pepper
Preheat the oven to 425 degrees F.
Place the sweet potatoes on a large baking sheet and drizzle with olive oil. Add the flour, creole seasoning, thyme, paprika, cumin, cayenne, salt + pepper. Gently toss with your hands or two spatulas to evenly coat. Bake for 15-20 minutes, then flip and bake for 15-20 minutes more. You want the sweet potatoes to be tender, but crisp. Serve with the cheese sauce (below).
Chese Sauce
Heat a skillet over medium heat and add the olive oil. Next add the garlic, cook for 30 seconds then add the milk. Toss the shredded cheese with the flour in a small bowl. Add the cheese to the warm milk and stir until melted and smooth, about 5 minutes. Season with salt and pepper. Keep warm until ready to serve. Serve over the fries.
