Today we eat all the color!!

And all the ricotta, because let’s be honest, ricotta is the bestest. Yes, I felt like our Tuesday needed a little brightening. With the weather being cold and super snowy (at least it is here), I am left craving lots of color…as you can tell from these photos, not an ounce of grey here! But I also felt it needed a comfort aspect. So I made us breakfast bowls! Really simple, really delicious breakfast bowls, with ingredients like honey infused ricotta, blood oranges, and plenty of granola. Basically breakfast bowl heaven…pretty much the most perfect breakfast bowl out there.

Major bonus points that this is also so easy to throw together. Yes, please! Perfect for a busy morning or a healthy afternoon snack.

SOOO, before we dive into this pretty bowl, can we chat about a few things?

First, how pretty is the winter citrus this season? I am in love with each and every orange and grapefruit that I have peeled into. Not only are they addictingly good (like candy!), but they are so pretty to photograph. I literally cannot stop.

Second, after finishing up most of the cookbook, I’m feeling a little, um well, wordless. I feel like I have written and written, and cooked and cooked, and photographed and photographed, for months on end. Much of the process I loved… and much of it I hated, but I am so excited to be nearing the end. It’s coming together just the way I wanted and I cannot wait to share. That said, I am excited for a little family time this weekend. All of my brothers are going to be in town and we are all going to be in one place…whoa, more details on Friday! And maybe, hopefully, just a little chill time too. I know it’s only Tuesday, but a girl can still dream about the weekend early, right?

PS. should I do a post on the process of writing a cookbook? Maybe once it’s all completely done and released?

Third, I’m brainstorming recipes for February and would love to hear what you guys would like to see in the upcoming months. Big events already on my calendar are the Super Bowl and Valentine’s Day. I have some other ideas brewing as well, but I’d really like to know what you guys want more of in your life? Should I continue on with the healthy eats? Make some winter favorites and healthify them? Please, let me know! I ended up using so many of your suggestions for Healthy January that I figured I’d try to start asking you guys more about what recipes you’d all like to see, so be sure to let me know!! 🙂

OKok. Back to our yummy Winter Citrus Ricotta Breakfast Bowl.

Here’s the thing, I’m one of those people who’s pretty routine about breakfast. Meaning I have yogurt and fruit pretty much everyday of the week. I am up early and I always eat before I leave the house for my daily hike. I don’t want anything crazy heavy, so yogurt has always been my go-to. Now I mean, breakfast for lunch or dinner…that is a completely different story. But breakfast for me, early in the morning, is yogurt! Oddly, last week I had the urge to try something just a little different and reached for the half empty container of fresh ricotta cheese. I was contemplating the merits of ricotta for breakfast, but then I reasoned with myself that it’s full of lean protein. So I piled the fruit on high, dug in and I went for it!

SO GOOD. Again, it’s ricotta…how could it not be delicious?

You can really use whatever toppings you like here. I went the sweeter route with homemade granola and plenty of fruits. I’m just more of a fruity early morning breakfast person, so that was my route. But I also think serving this bowl with whole grain toast, an egg, and an avocado would be amazing <–actually going to make this for lunch today…cannot wait.

Just be sure to include two things in your bowl. 1. Really good whole milk ricotta…trust me, low-fat is not the way to go, it’s healthier for our bodies to eat foods in their purist form, so go for the full fat baby! 2. Winter citrus, the blood oranges and cara cara oranges are my current favorites. With those two ingredients you are going to have a delicious and energizing breakfast no matter what else you decide to add! AND it’s going to be ready in ten minutes or less, high five to that!

  • 1/3 cup whole milk ricotta cheese
  • 1-2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1-2 blood or cara cara oranges or grapefruit, sliced
  • 1 banana sliced
  • passion fruit or berries
  • [granola |]
  • honey or honeycomb
  • toasted nuts/seeds or cacao nibs


  • In a small bowl stir together the ricotta, honey and vanilla. Top with citrus slices, banana, passion fruit and granola. drizzle with honey. Enjoy!

    Suggestions…I don’t have time till the weekend for your fabulous breakfast recipes, so more fun, and some fun AND healthy-ish, breakfast recipes for the weekend. Remade comfort foods, cold weather foods, etc. are always great. Quick lunch or dinners. Maybe a lunch dish that can be thrown together/heated up at work? And PLEASE, keep up the crockpot recipes. I can do these at home or take them for work potlucks. (the guys here at my construction company loved the crockpot chili!) Thank you!

  7. Tieghan, if you ever decide to leave blogging behind, I can tell you right now that you would be an amazing food stylist for a food magazine or a cooking show. I can’t believe how gorgeously you arrange the food in your photos. I have an eye for things like that. There are some folks who cook wonderful food, but don’t think to make their food LOOK as appetizing as it really is, and then they post these bland photos that just don’t appeal at all upon first glance. For their stuff, I have to rely on the ingredient list to know whether I even want to try their recipes. Lol.

    Cookbook process post would be cool, I’m in agreement with other commenters there. Also, I’m scared to try some DIY things. Like, one person commented that making their own ricotta was easy (well, for them). Seriously, if YOU yourself post a DIY article on HBH once in a while, I might be more inclined to try the DIY stuff. Don’t know if that makes sense, but it’d be so encouraging.

  8. First..I’ve found your bolg about a year ago, have made many of your recipes. One word..delicious. I just got started on Instagram. My one of 27 nieces and nephews are showing me how I use this phn. I love the random thoughts on Sunday, talking of your family (because mine is just as crazy..36 in one house..liquor must be involved, and that’s immediate family). I just love it! Don’t ever second guess yourself. Yes cook look process needes!

  9. Absolutely YES! to a post about the cookbook writing process. I’ve read these series by other lauded food bloggers (smitten kitchen, Style, etc), but I’d love to hear it from your perspective, too.

    Also with regard to February, meals or desserts for two for Valentine’s Day is something I haven’t seen much of comparatively on blogs, and dividing a fancy recipe that’s meant to serve 4-8 down to 2 is sometimes problematic.

    Final thought, ricotta cheese is close to cottage cheese in my mind, cottage cheese is substituted in recipes for blintzes, cheesecake, and lasagna for ricotta, and lots of people eat that for breakfast, so I say ricotta is fine! 😉 Have you ever had Icelandic-style yogurt, skyr? It’s so good. I love Siggi’s brand for example, it’s only barely sweetened. Excellent protein, too. I almost can’t eat regular yogurt now after trying Siggi’s, it’s like unnecessarily sweet.

  13. Would love to hear about the cookbook process…so intriguing! Comfort foods made healthy for Feb would be great. Also, any air fryer recipes or ideas–have you used one yet? I got one for Christmas and it didn’t have a cookbook with it; so I’m scrounging up ideas and recipes to use it. So far it’s been trial and error with more emphasis on ERROR! 🙁

  14. I think a peek into the cookbook process would be fascinating. Especially if you can speak to testing the recipes (how many times? were there total failures? etc.) and how involved the publisher was in giving you deadlines and guidelines for what to include (did you have a certain number of recipes you wanted to include? did they specify how many of each type? did they give you a format with breakfast, lunch and dinner or was that up to you?). I’m a librarian, so I see books on the other end, but I’m very curious how they come together before they end up in my library.
    As far as other posts, my husband recently agreed to try eating vegetarian at home. You frequently have recipes that are vegetarian-friendly, but more of those would be much appreciated. Or recipes where it’s easy to simple remove the meat or swap it for something like tofu or a grain. I haven’t made a single recipe from your blog that he hasn’t cleaned his plate and he is an incredibly picky eater.
    Keep up the good work. Love the blog. I have ricotta left over from your mushroom ravioli recipe, so I think breakfast is served. 🙂

  20. I am so sad, Healthy January month is almost over! I know it’s hardly possible.. but can we PLEASE have healthy all year round 🙂 There are plenty temptations out there, we need some healthy inspirations. Some ideas: the first thing when I saw your post I thought: “hmm.. is she making her own ricotta?” I’ve done it and it’s so super easy! Or.. I have not tried to make my own yogurt yet and heard it’s super easy too. Would love some inspiration to make kids eat homemade version without all the added sugar that comes with store-bought kind.
    And of course we want a book sneak preview/ process. Have been so super excited about the book. Love your site, it’s my morning routine to open it first thing in the morning

  23. i usually have ricotta in savory applications, but it sounds delicious here! i get stuck in my breakfast routine (usually pb&j or overnight oats if i remember at night), so this sounds like the perfect crunchy, creamy, citrusy way to switch it up. also: +1 vote for a cookbook process post please~
