All Mondays should include (cheesy) pizza!!  This whole wheat spinach and artichoke pizza is a game changer.

I mean, Mondays can be slightly intimidating, but ending the day with pizza gives us something to actually get excited about. I mean, right? RIGHT.

This Whole Wheat Spinach and Artichoke Pizza is basically everything and anything you’d want in a pizza. It’s healthy…ish, loaded with veggies, cheese, garlic, lemon and basil, all piled on the most delicious whole wheat crust! It’s honestly the best, and I while I typically save pizza for Friday and Saturday meals, I’m starting to rethink things…thinking we really need to make pizza Monday a thing.

Plus, this pizza only takes around thirty minutes from start to finish, thus allowing it fit into my “30 Minute Monday” theme for 2017. YES. Three weeks in and going strong…cool, cool.

So hey, hi! How was everyone’s weekend? Thanks so much for your incredible feedback on yesterday’s slightly different post. I am so excited you guys are enjoying seeing some different stuff from me. I had a lot of fun putting the post together, so more to come!

I spent most of my weekend working away because ahh, I am a workaholic and can’t be stopped. BUT, I did carve out a few hours later in the afternoon on Saturday to go tubing with Asher and her Brownie troop. I only went once since I didn’t actually have a ticket, but Asher had a blast going with her friends. Afterwards she convinced me to take her to Target to look at the Valentine’s Day stuff. She then proceeded to convince me to buy her kitty cat valentines for her class party, along with about four bags of milk chocolate hearts. We finished the night off with a Starbucks hot chocolate…full of mostly whipped cream.

The girl clearly has me wrapped around her little finger! Since my parents had to go down to Denver to pick my younger brother Red up from the airport, Asher spent the night at my house. Before she went to bed, she watched a marathon amount of Gilmore Girl episodes. I’ve created a monster, Asher is obsessed with Gilmore Girls, and I could not be more excited! She now not only shares my love of Harry Potter, but Gilmore Girls too! Sisters will be sisters!

Also, the tubing lifty guy called me her mother…no, no, no.

I also spent some time Sunday night hanging out with Red since he’s headed to Aspen today to begin practice for X-Games. What were you guys up to?

OK. Pizza time.

Like I said, I could not be more in love with this Whole Wheat Spinach and Artichoke Pizza. Spinach and artichokes have always been one of my favorite pizza toppings, so I knew that for Healthy January this year I wanted to create a healthified version.

Enter this pizza, complete with a whole wheat crust, plenty of spinach and artichokes, a little lighter on the cheese, seasoned with immune boosting lemons and topped with fresh microgreens. Simple little changes, but promise this pizza is beyond delicious. Sometimes simple truly is the best.

Question: how do you guys feel about whole wheat pizza crust? My dad used to buy pre-made ones as a kid and they seriously tasted like cardboard. Ever since then I have avoided them at all cost…until I made my own and realized I couldn’t even tell the difference. No one even knew the crust was whole wheat. This crust is crispy on the edges and doughy in the center. Just the way I love pizza crust! If you don’t have time to make your own dough, I’ve heard great things about Whole Foods whole wheat dough!

Once the pizza is in the oven, it takes no more than fifteen minutes or so to cook. The roasted lemon slices add a fresh flavor to this spring like pizza…it’s an awesome pick me up for winter! Top the pizza off with a ton of microgreens (my favorite topping for almost everything) and fresh basil.

YUMMMMM!

Perfect, quick, easy and healthy Monday night dinner. So who is ready?!?!

Did the crust recipe change recently? I had this bookmarked as my preferred pizza crust recipe as it made the perfect amount of crust to fill my cast iron skillet without any extra but I don’t remember the recipe being whole wheat? It didn’t make enough to fill my skillet this time 🙁

    1. Hi Katy,
No changes have been made to this recipe, it’s always been whole wheat, which is the title of the recipe:) Please let me know how I can help! xx

This is a winner. The whole wheat crust is amazing – you don’t even notice the difference from a white flour crust except that it rolls thinner much easier. The mix of artichoke and mozzarella with lemon is magic. And I love that the “sauce” is olive oil and garlic with herbs. Overall, it’s super easy and extremely flavorful.

    1. Hey Kristen,
Perfect!! I am delighted to hear that this recipe turned out well for you and thanks so much for trying it out! xx

  3. I could have sworn this recipe used to call for like a teaspoon of honey, is this not the same recipe? Do you have another pizza dough recipe?

    1. Hi Amanda,
The recipe that calls for honey is in the HBH Super Simple cookbook. Please let me know if you have any other questions! xx

    2. This one definitely used to have honey in the recipe. Even a comment below from 2021 referenced it saying they used a tbsp instead of a tsp of honey and HBH replied that it was totally fine. So I’m confused too?

Can you make this recipe the day before and place it in the fridge overnight? How would I do that?

    1. Hey Katelyn,
I would just make the dough in advance, I think pizzas are best made the day of:) Please let me know if you give the recipe a try, I hope you love it! xx

  5. huh quick comment i doubt that with an roughly estimated weight of 250 gr of ingredients you can make 1 lb ( which if google doesn’t lie is about 450 gr) dough….. My own pizza dough recipe uses similar quantities and i got about 260 gr of dough last time i made it….

    1. Hi Alex,
Sorry, I am not sure what you are asking, but if you follow the measurements, you should end up with 1 lb of dough. Please let me know how I can help. xTieghan

      1. Well 1/2 cup of flour is about 60 gr so 2*1/2 cup of flour is about 120 gr, add to that 1/2 cup of water which is about 125 gr plus assorted yeast, salt and olive oil and you get about 250-260 gr of dough. Not 450 gr/ 1 lb, the math doesn’t add up….

  6. Hey Tieghan!! This pizza dough turned out deliciously but it only made enough for one personal size pie with a thin crust (instead of ~4). Did I mess something up, or should I just multiply the recipe a few times to make more? Thanks!!

    1. Hi Dee,
Fantastic! Love hearing that this recipe was enjoyed, thanks for giving it a try. Was there anything you adjusted in the recipe? If you take a look at the video, that’s about the size of the pizza you should get. xTieghan

Love this rerecipe. This is the first time I am making it all in my stand mixer with a dough hook. Do I forgo the olive oil if I do this?

    1. Hey Suzanne,
You will want to follow this recipe as is:) Please let em know if you have any other questions! xTieghan

wowwww!! tieghan, you are killing it 🙂 I’ve made this twice in the past two weeks for my family and they LOVE it, a new staple for us. Thank you for making dinners so fun.

    1. Hey Kat,
Happy Weekend! I am thrilled that this recipe was enjoyed, thanks so much for making it! xTieghan

  9. Hi!!!

I’m wondering if you have an old school pizza dough recipe that you could share. Also your most favorite of pizza sauces. We just ordered a OONI pizza over and you are the absolute first person I thought of who would have something AMAZING 🙂 Also, am I able to cook your pizzas in that oven?

    1. Hey Heidi,
My go to pizza dough recipe is in the HBH Super Simple cookbook. Sorry, I am not familiar with the Ooni pizza oven, but let me know how it turns out! xTieghan

  10. Can i use rapid/instant yeast instead of active dry yeast!? I’m also in colorado and I’ve never made homemade pizza dough so want to make sure it rises correctly with the right yeast. Or does it matter?

    1. Hey Stacie,
Totally fine to use, you can just mix it right in with the flour! I hope you love the recipe, let me know if you have any other questions! xTieghan

    1. Hey Rebekah,
No worries, it should be fine:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  11. Hello,
If you double or triple the recipe do you double or triple the yeast as well? will rising times be affected? I’d like to triple the dough and freeze some. Would you freeze it after first rise? How long would it need to be out of the freezer to reuse later. So many questions that I hope you can answer. I love all your recipes!
    Thank you so much,
    Roslyn

    1. Hey Roslyn,
Yes, if you double or triple, you need to double or triple everything. Although, I would highly recommend just making 2 or 3 batches. This will ensure for better results:) Yes, you will freeze after the first rise. xTieghan
