This super simple Healthier Slow Cooker Creamy Tortellini Vegetable Soup is the perfect fall dinner…great for nights when you’re craving Italian, but want something warming and healthy too. A mix of vegetables, simmered with Italian seasonings, a splash of wine, kale, and cheese tortellini. Finish each bowl off with an extra sprinkle of cheese and serve with crusty bread. It’s hearty, full of greens, and so delicious. Great for just about any night of the week. Plus the leftovers the next day make for the best lunch!

As promised…a new slow cooker recipe to start off the week. And a healthier one too. But don’t worry, it’s still creamy, cozy, and of course, delicious. I mean, it’s October, I wouldn’t share a non-cozy recipe at this point in the year. Cozy is always the way to go when the weather begins to turn cooler.

To be completely honest, I don’t love all soups. To me, a dinner soup needs to be hearty. It needs to be brothy, but it also needs texture, carbs, and preferably some cheese on top too. French onion? Yes – yum. Hearty, thick chili? Of course. Ramen with double the noodles? Yes, 100%.

But a brothy soup with just a few vegetables just doesn’t do it for me, which brings me to this soup. It’s vegetable soup, but it’s not your average vegetable soup. This one is creamy, cheesy, and made with not just vegetables, but cheese tortellini too.

It’s all the things I love in a bowl of soup, yet made on the healthier side too. Promise you guys, this one is good, and kid-friendly too!

Here is the story:

This soup just sounded good to me. I’ve never done an Italian-style tortellini soup, but oddly I’ve done a Mexican-inspired tortilla soup with tortellini. Not sure where I got that idea, but it sure is different. Nothing like this bowl of tortellini soup.

When I presented the idea of a vegetable-based tortellini soup to my sister-in-law, she gave it a double thumbs up. Granted Lynds loves a bowl of soup, but she’s also picky about her them. So instead of second-guessing my ideas, like I always do, I took her double thumbs up and I ran with it. And the verdict? I am very, very happened I listened. This is such a delicious bowl of warming soup. And I love that I was able to make it a touch healthier than the versions you might find in a restaurant.

And my favorite part…well, aside from the taste…this is actually the easiest soup to make. You can cook it low and slow in the slow cooker, or speed things up by cooking it in the instant pot, or you can even cook it on the stove-top.

prep photo of soup in slow cooker

To make this tortellini soup:

I love to start this off on the stove-top. I know it’s annoying, but I really think cooking your vegetables with the dried herbs and spices before slow cooking adds so much wonderful flavor. If you have an all-in-one browning slow cooker then you can do this all in the slow cooker bowl. I literally just hit purchase (before starting this post) on this all-in-one All-Clad slow cooker with a browning function. I cannot wait for it to arrive this week!

Cook the onions with a mix of my favorite Italian spices…the dried herbs, fennel, and smoked paprika. They are all KEY here. They add so much flavor, almost like Italian sausage, but minus any of the meat.

Once the onions have been seared, add everything to the bowl of your slow cooker. Then add tomato paste, a good splash of dry white wine, and plenty of vegetable broth. Cover and cook low and slow.

I like to just let my soup cook all day long. The house smells incredible as this simmers away in the slow cooker. But, as I mentioned, I’ve also included directions for the Instant-Pot and stove-top variations, in case you’re in a crunch.

Once the soup has finished cooking, before serving, stir in a few large handfuls of kale, cream or milk, parmesan cheese, and the cheese tortellini. Cook another few minutes and then that’s it.

Easy. EASY. But yet so delicious.

I’d highly recommend serving this soup with a side of crusty bread. If you own the HBH Super Simple cookbook, there’s a really good, really easy, no-knead bread recipe that’s perfect to pair with this soup.

If you’re planning to enjoy this soup leftover, be sure to first remove the tortellini from the broth before refrigerating. That way the tortellini won’t soak up all the broth. Then just add them back in before serving.

Alright, and with that, I’m going to leave you all to it. If your Monday night needs some warming soup, this should be it. I’m actually beyond excited to make this again today on Instagram stories. It’s the perfect fall soup.

Cannot wait!

  • 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Remove from the heat and add to the bowl of your crockpot. Stir in the tomato paste, carrots, and celery.
    2. To the crockpot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on low for 6-8 hours or on high for 4-5.
    3. During the last 15 minutes of cooking, stir in the kale, cream, parmesan, and the tortellini.
    4. Serve the soup topped with additional parmesan and fresh oregano, if desired.

Instant Pot

  • 1. Set Instant Pot to sauté. Add the olive oil, onion, carrots, celery, garlic, thyme, basil, oregano, fennel, paprika, and a pinch each of salt and pepper. Cook 5 minutes, until very fragrant. Stir in the tomato paste. Turn the Instant Pot off.
    2. To the instant pot, add the wine, broth, and a pinch of red pepper flakes. Cover and cook on high pressure for 6 minutes.
    3. Once done cooking, use the natural or quick release function. Set the Instant Pot to sauté. Stir in the kale, cream, parmesan, and the tortellini. Cook until the kale is wilted, about 10 minutes. Turn the Instant Pot off.
    4. Serve the soup topped with additional parmesan and fresh oregano, if desired.

Stove-Top

  • 1. Heat the olive oil in a large pot over medium heat. When the oil shimmers, add the onion and cook 5 minutes, until golden. Add the wine, broth, and a pinch of red pepper flakes. Simmer over medium heat for 20-30 minutes, until the carrots are tender.
    2. About 10 minutes before serving, stir in the kale, cream, parmesan, and the tortellini.
    3. Serve the soup topped with additional parmesan and fresh oregano, if desired.

  1. This looks great, excited to try it! Question: Do you chop up the carrots and celery into tiny cubes, or are they big chunks as shown in your photo? I would imagine the former, as I generally do for soups, but I wasn’t sure. Thanks!

  2. Can I use coconut milk instead of whole milk? Is there a different alternative that is better? (I am Dairy sensitive)

  3. 5 stars
This soup was delicious and so flavorful. I used more red pepper flakes (i love some heat) and used some chicken and beef broth because that’s all I had available at home. LOVED it. Will be making it again this winter!

  4. 4 stars
this soup was fun to make, and made the house smell amazing simmering in the crockpot all day! I do have to agree with a few previous commenters that the flavor of the broth did fall a bit flat for me. If I made again I would try to increase amount of spices for more flavor and/or use a more high quality vegetable broth. Everything else was spot on! Thanks for the recipe!

    1. Hi there! Thanks so much for trying out this recipe, so glad to hear it was enjoyed! And thank you for the feedback as well, it’s much appreciated! Have a wonderful week! xTieghan

  5. 4 stars
I’m eating my first bowl of this now…the broth turned out surprisingly subtly flavored, though I did not have fennel seeds so that may be the reason why. Overall, a very satisfying meal!

  6. Just put everything in the crockpot! Although, I read the directions wrong and used chicken broth instead of vegetable broth! 🙈🙈 I hope it will still turn out ok!

  7. 5 stars
Love this soup! Such a versatile broth that you could add just about anything To this soup and it would be delicious!

  8. 5 stars
So delicious. I had to swap out Kale for spinach but otherwise made this as directed in a crockpot. Very hearty and flavorful.

  9. I really liked this one! The flavors in the broth worked well together and really amplified the tortellini. I did make one small alteration… I swapped out the smoked paprika for regular old paprika. Just a preference thing.

  10. 3 stars
A hearty soup but a bit disappointing in flavour. It’s an ok recipe but something is missing and it tastes a bit bland.

    1. Hi Faith, I’m so sorry to hear that this recipe was not what you were expecting. Please let me know how I can help. xTieghan

  11. 5 stars
So yummy and filling and easy to make. We didn’t have paprika so we subbed ancho chile powder which I thought added a really nice sweet heat to it. Will definitely be making it again.

  12. 5 stars
This soup is delicious, I made it exactly as written with one slight exception. The market was out of kale, so I substituted baby spinach. Perfect for fall.

  13. Wondering your thoughts on a dairy free option? I’m thinking coconut milk and either cavatappi noodles or a non-cheese tortellini?

    1. I just made a dairy free version yesterday and it was delicious. I used silk brand dairy free “heavy whipping cream” and a vegan tortellini that I bought at Whole Foods.

  14. If adding Italian sausage, would you recommend cooking before placing into the slow cooker? Would you cut it or crumble it?

  15. I made this for my family tonight, and it was an absolute delight! I used mostly fresh herbs as I had them all at the ready in my garden, but otherwise followed the recipe to a T. Thank you for sharing your wonderful talents with us, my family and I’s tummies and tastebuds truly appreciate it!

  16. I made this on the stovetop and it was super easy. I did not use fennel and the soup was still great. Another family favorite 😊

  17. 4 stars
So this was absolutely delicious but the cooking instruction for the stovetop version needs some edits. Here’s what I’d recommend: cut carrots smaller then pictured. Caramelize onions, celery and carrots. Simmer more like 30-40 min range… I used my cast-iron Dutch oven so following the recipe time of 20-30 left pretty firm/crunchy vegetables… not pleasant for soup… also totally my bad for not trying all of the veggies for doneness.
If not eating all soup at once, make tortellini separate and add as needed so prevent tortellini from falling apart and swelling in soup. Other than that, very good vegetable based soup and very tasty!

  18. I ran out of having enough veg broth and threw in some chicken broth with it :/ can I still save this somehow? Help!

    1. I’m sure it’s fine, they’re virtually the same! It’s labeled as vegetable broth to make this dish fully vegetarian.

  19. I really want to try this, but am not a fan of the flavor of fennel. What would you suggest as a substitute to add additional depth of flavor?

  20. 5 stars
Made this in the instant pot and oh my goodness was it delicious! I did tweak a little and added spicy Italian sausage and swapped the kale for spinach. Also omitted the fennel, not a fan. Sooo yummy and a great start to the fall season. Even my husband loved it, and he is not usually a soup fan!

  21. 5 stars
Loved the recipe. I added crumbled sausage, a sweet potato and used spinach instead of kale.
    Delicious!

  22. O.M.G. This is so delicious!! Added shredded rotisserie chicken and used frozen tortellini (which I was worried about), and it turned out perfectly. Will make again FOR SURE! Thank you!!!

  23. 5 stars
I don’t think a soup gets any better than this! I made this last night and everyone absolutely loved it! It’s so light yet filling! This will be on our weekly menu for the duration of winter. Thank you for this recipe!

  24. 5 stars
This is one of the most decadent and delicious soup I ever made! And it was so simple! I went for the stove top variation, used spinach instead of kale and pumpkin tortellini in place of cheese.
It was the most delicous weeknight dinner we ever had! Felt like being on italian vacation!
Love your website and your recipes so much, they are all to my taste. Thank you so much for this all here!
    Greetings from Germany,
    x Madeline

  25. This looks amazing and I cannot wait to try it! Have you ever tried dairy alternatives instead of butter and cream? Don’t get me wrong, I LOVE both of those but some family members need to be dairy free. I wasn’t sure if you’d recommend Coconut Milk, Oat or something different. Thank you!

    1. Hey Chelsea,
I would keep the butter but yes coconut milk will also work here. I hope you love this recipe, please let me know if you give it a try! xTieghan

    1. Hi Jordan,
Happy Friday!! I am thrilled to hear that this recipe was enjoyed, thank you so much for making it! xTieghan

  26. Would this soup be good still if I froze the leftovers and reheated? You mentioned the tortellini may soak up the broth so unsure if I can freeze it.

    1. Hey Nikki,
If you want to freeze, I would just keep the tortellini on the side and not add it to the soup. I hope the recipe turns out amazing for you, please let me know if you give it a try! xTieghan

  27. 5 stars
So I cheated. I made your creamy french onion soup over the weekend and then repurposed the leftovers by making it the base for this soup. O.M.G. Absolutely fabulous! Next time I’ll add a little chicken and maybe even a little jalapeño for a Texas style chicken noodle. Love love love it! Thank you for inspiring me to get creative in the kitchen! You are so beyond awesome!

    1. I love the fact that you combined a few recipes there! I too enjoy experimenting with soups! Your combination sounds enticing.

  28. 5 stars
I loved making this slow cooker soup. It was perfect for a cooler day, and has amazing flavor. The house smelt amazing all day, and the taste didn’t disappoint. Really enjoyed this dish.

  29. 5 stars
Did it on the stove-top. Fantastic. Served it with the Brown Butter Sage Brioche Bread. I’ll be making this again!

    1. Hi Alisa,
Fantastic!! So great to hear that you enjoyed this recipe and thanks a lot for making it. Have a great week!🍂 xTieghan

  30. Hi! I just made this soup for dinner. When I added the whole milk it wouldn’t separate and stir into the broth to get that creamy texture. Do you know why that might be?

    1. Hey Brianna,
Thanks for giving the recipe a try. Was your milk at room temp? That typically works best:) I hope this helps for next time! xTieghan

  31. 5 stars
Made this soup for the second time and man it’s a hit! Used the stove top method which took longer than I expected and required more stock. Pretty sure it’s because of the way I cut my carrots and celery. Love love love. Tieghan you’re amazing. Keep it up sister!

    1. Hey Tawni,
Love to hear that this recipe was enjoyed, thanks a bunch for making it! Have the best weekend🍁 xTieghan

  32. I have not tried this soup yet but definitely will in the next few days! Every recipe that I’ve made of yours is fantastic. Absolutely a hit and a ‘make again and again and again’ Thankyou. I wish I had a cookbook of all the wonderful meals that we’ve enjoyed using your recipes!!!

    1. Hey Dani,
Yes, lactose free milk will work just fine for you. I hope you love this recipe, please let me know if you give it a try! xTieghan

  33. Soup is wonderful!! Just remember to chop up the kale into bite sized pieces 🙂 I didn’t and now have to rip em

  34. If I add ground italian sausage to this, would you recommend that I omit/cut down on the dried herbs? Love your recipes so much!

    1. Hey Hannah,
Nope, I would keep all of the seasonings the same. I hope this recipe is enjoyed, please let me know if you give it a try! xTieghan

    1. Hey Jenna,
Sure, I would just freeze without the tortellini. I hope you love the recipe, please let me know if you give it a try! xTieghan

  35. 5 stars
I love this soup and so does my family. My husband is not a “soup” person and he loves it. My mom ate three bowls and made herself feel sick from overeating because it’s so good! The only thing I change is I never have fennel so I don’t put that in, and I don’t love kale so I put spinach in it instead. This is a wonderful, filling, cozy soup. Thank you for the recipe.

    1. Hey there,
Happy Sunday! Thanks a lot for making this recipe. I am delighted to hear that it was enjoyed! xTieghan

  36. This was my first recipe I cooked from your web site, now I am hooked. This soup has so much flavour and very filling . Cant wait to try something else.

  38. 5 stars
I have made this SO many times and it never gets old. It’s comforting, easy and delicious. A huge bonus that it’s vegetarian too. I usually add a parmesan rind in the last couple of hours of cooking to give a little extra yumminess.

    1. Hey Taylor,
Awesome! I am thrilled to hear that this recipe was enjoyed, thanks a lot for making it! Have a wonderful weekend☀️ xTieghan

  39. 5 stars
This was sooooo good! Made it for dinner last night. I don’t even care that it’s not soup weather here (82° today). I would eat this all spring and summer long!

    1. Hey Sara,
I am delighted that this recipe was enjoyed, thanks so much for making it! xTieghan Also very jealous of your weather!!

      1. 5 stars
This is my all time favorite soup! I go back to it again and again when I need a hit of veggies and something comforting and easy! I like to cook and add the tortellini separately to each bowl of soup as I find the leftovers reheat better without the pasta soaking up all the broth and then breaking apart.

        1. Hey Mandy,
Awesome! I love to hear that this recipe was enjoyed and appreciate you giving it a go! Have a wonderful week:) xTieghan

  40. I’m craving soup today and have been looking for a recipe to use my tortellini for! Do you think this soup will freeze well? I’m making the whole batch but will be the only one eating it. Thanks!

    1. Hey Bailey,
You can totally freeze this soup, but I would recommend doing so without the tortellini. Enjoy the recipe! xTieghan

  41. 5 stars
I’ve made this soup about 10x now and am obsessed. I rarely have cooking wine on hand, but I found that using 1/4 cup apple cider vinegar + extra broth works just as good! Thanks Tieghan!

  42. 5 stars
Delicious and easy! I used chicken broth because it is what I had on hand. I also added one shredded chicken breast for a little protein. Looking forward to enjoying my leftovers!

    1. Hey Emily,
Thank you so much for giving this recipe a try, I am thrilled that it was enjoyed! Have the best weekend☀️ xTieghan

    1. Hey Olivia,
I would just be sure that you have a large enough pot for the recipe to be doubled. I hope you love the soup, please let me know if you have any other questions! xTieghan

    1. Hey Barb,
Thanks a lot for giving the recipe a try, I am delighted that the recipe was enjoyed! Happy Sunday! xTieghan

Call us “purests” but we rarely use our slow-cooker. But we tried this recipe, and could not be happier about the time spent (not much) and the flavors developed in such a short time with this soup. It tastes like it’s been simmering for hours, like a good stew. To be honest, we did not have kale on hand, so we used spinach (which I like better) and we also used a combo of chicken stock and veggie stock…but it didn’t seem to change much. Great soup…loved it.#halfbakedharvest

    1. Hey Doug,
Thanks a lot for giving the recipe a try, I am thrilled that the recipe was enjoyed! Have a fantastic weekend! xTieghan

  44. 5 stars
In a word, YUM! Made the soup using the stove top method and it hit the spot, house smells amazing. I’m not a huge fennel fan so I used only 1/2 teaspoon but next time will use a full teaspoon.

  45. 5 stars
I made this tonight for my husband and I. When I described it to him his eyes glazed over (probably at the thought of vegetables and kale) but when we served it he had THREE bowls and thanked me for making such a delicious hearty meal! We both feel so good after eating it. This is the third recipe I’ve made from your website – didn’t disappoint thank you xx

  46. 5 stars
We love this recipe! We use spinach instead of kale and add Italian sausage! We also omit the fennel seed because it’s in the sausage. We make it at least once a week though!

    1. Hey Nida,
You can use chicken broth in place of the wine. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  47. 5 stars
Easy and delicious! I made this on the stove top last night. A very satisfying meal. At the start, I added 1lb of ground beef and I would definitely recommend that if you’re wanting to add more calories/protein to this. I cooked the tortellini separately because I think we added too much kale (didn’t measure) and the pot was very full. I also added a little more stock and seasonings. This is a great base recipe so you can easily edit it to your liking and it would still be good. I’ll definitely be making this again! Perfect for a cold day.

    1. Hey Mary Beth,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed! Have a great week:) xTieghan

  48. I’m OBSESSED with this soup. It’s the perfect amount of creamy and cheesy. The wine gives it such a nice flavor too. It’s a favorite for my family. I’ve made it multiple times with my slow cooker and on the stove top. I prefer using the slow cooker… I think it brings out the flavors more and it’s so easy.

  49. 5 stars
Loved this soup! It was easy to make, so creamy, and delicious! Such a good meal to eat when it is cold and rainy out 🙂

  50. 5 stars
I finally made this last night in my Instapot and it was SO easy and good. I didn’t have any wine, so I subbed in slightly diluted apple cider vinegar. I had never done that before but it turned out great! (I’d rather use wine though). Thanks for this recipe!

  51. I made this last night for cozy, snowy night meal. it was so delicious, and filling! I made it in my dutch oven on the stove-top, and it came out perfect. Thanks for another simple, and yummy recipe.

  52. 5 stars
Love this recipe! I have made it a couple times! I like to meal prep this as my lunch for the week! ( I normally cook tortellini separate and don’t add it till I’m ready to eat, otherwise it can get a little soggy).

  53. 5 stars
Made half the size and it was still plenty for the 2 of us to eat over a couple days. AMAZING recipe…I don’t think I’ve ever had a better vegetarian soup and that’s saying a lot since I’ve been a vegetarian for 36 years!

  54. 4 stars
I really liked this – however I accidentally put in 2 T of dried Thyme!! now I see what happened! I also felt like it needed a little “acid” so we mixed in some sour cream and that just brought the depth of the flavor up! Wow, now I realize what I did with the thyme! Maybe BOLD the words fresh and dried? I will certainly try this again following the exact recipe!
I have just fallen in love with your site – my husband asked this morning what I recipe I was going to make today from “my girl”! I almost would like to take 6 months and make something everyday from your collection! You are a gifted gifted cook! Thank you for sharing with all of us! <#

    1. Hey Michele,
Thanks a lot for giving the recipe a go, I am so delighted that it was enjoyed! Have a great week:) xTieghan

  55. 5 stars
Exactly what I needed on a cold day! Easy meal prep idea as well. I made a batch and had soup for my entire block of shifts. Thanks for an awesome feel-good meal to brighten my day!

  56. I made this soup last week and O…M…G! Best soup ever is all I can say and I’ve made a lot of soups. The broth is SO flavourful. Absolutely delicious, everyone LOVED it. Will definitely be on repeat over here. Love it.
    Thank you!!

  57. 2 stars
Your cookbook is my first go to, I love so many of your recipes. I made this because it is one of your popular recipes. I followed the recipe exactly except only half the tortellini as a pound is way too much. The tortellini was mushy and the flavor was just odd. I ended up throwing it out, a first!

  58. 5 stars
This recipe was DELICIOUS!!! Thank you so much for sharing. I made the instant pot version and ate two bowls in one setting-soooo good!!!

    1. Hey April,
I am so glad this recipe was enjoyed, thanks so much for giving it a try! Have the best week. xTieghan

  59. Hi Tieghan
Wondering if there would be any benefit to using my
New Dutch oven. My crock pot cooks very hot so
Often even on low my food is ready in half the time…so I wonder if I am missing out on the results of a long slow cooking time.
    Thanks!

    1. Hey Kathleen,
Using a dutch oven would be great, just follow the stove top instructions! I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Morgan,
Thanks so much! I would totally freeze, just do it without the tortellini. Please let me know if you have any other questions! xTieghan

  60. 5 stars
This was delicious. I added rotisserie chicken (love my protein). My husband hates soup and devoured his. ❤️

    1. Hey Susan,
I am thrilled that you enjoyed the recipe, thanks so much for trying it out. Have a great weekend! xTieghan

  61. 5 stars
Wow! Just made this today. We loved it! I am so happy we have leftovers. I followed the directions as written, I splurged on really good, block parm and I may never go back. I used fresh tortellini from Rana brand. The broth is so tasty; and we added some fresh bread. Super easy, super tasty!!
    Thank you! Just fantastic!

  62. 4 stars
I omitted the celery, added some diced sweet potatoes, and swapped out the kale for baby spinach! Next time, I would add more broth as there wasn’t a lot of actual soup, and I’d reduce the cooking time as the carrots and sweet potatoes were a lot softer than I like (I made it in my instant pot). Otherwise this was as super tasty, easy meal. Thanks Tieghan!

    1. Hey Joey,
Thanks so much for giving the recipe a try, I am delighted that it was enjoyed! Have the best weekend:) xTieghan

  63. 2 stars
I am a HUGE fan of HBH and have made many recipes (I own the latest cookbook, too). All have all been great. This soup is not one of them. The broth was bland and the whole thing was just so blah. Very disappointing.

  64. 5 stars
I made this with several substitutions and it was INSANELY good! Here’s what I changed:
cheese tortellini – used lobster ravioli from TJ’s
used fresh basil instead of dried
    didn’t add fennel seeds
    no celery
Used dry vermouth instead of white wine
used a 1/2 cup almond milk (didn’t affect taste surprisingly!)
I can’t wait to make this again — I had three helpings the first night!

I’ve made both versions of this soup on the stove top and they both are delicious! It is a very flexible recipe… I subbed spinach for kale in round 2, added some frozen peas at the end (yum!) and used fresh basil at the end instead of dried early on. I love tomato so added about a 1/4 cup of tomato sauce in addition to the tomato paste and loved the flavor. Thank you for the delicious and easy recipe!

  66. 5 stars
This was so good ! I made it in the crock pot and very tasty. I did add cherry tomatoes and let those cook with the rest of the veggies. Perfect winter soup!

    1. Hey Beth,
I am thrilled that you liked the recipe, thanks so much for giving it a go! Have an awesome week:) xTieghan

  67. 4 stars
This was delicious! My only comment was that I had to add twice as much broth as the recipe indicated to get it “soup” like.

  68. My family enjoyed this! I did the stovetop version with Pinot Grigio. We paired it with your beer bread recipe and both were wonderful! This is our week long Half Baked Harvest menu and every night has been a hit!!

  69. Hi Tieghan! I now exclusively cook HBH meals and my family loves them! I made this last night and it was so so good. I didn’t read to remove the tortellini from the broth before refrigerating until it was too late (this morning) whoops! How do you recommend reheating today for lunch, given that the tortellini was refrigerated with the broth overnight?

    Thank you,
    Rebecca

    1. Hey Rebecca,
Thanks so much for giving the recipe a try, I would just heat in the microwave or on the stove top. Please let me know if you have any other questions! xTieghan

This is my go to soup when I don’t feel like trying out a new recipe or I’m in a rush. So so yummy. Sometimes I’ll add shredded chicken or sausage, but it’s still so delicious without!

  71. 5 stars
This soup is delicious!! I absolutely loved it! It was simple to make and so tasty. I am a beginner cook and it was such a manageable recipe for me. Already looking forward to making it again soon. Thank you for sharing a fantastic recipe!

  72. 5 stars
I don’t usually do the cooking, but I got an instant pot and want to try and start. This was the first recipe I wanted to try and it was amazing! No surprise though since we love all your recipes 🙂 The flavors were delicious and it was quick and easy to put together, I know we’re going to be making it often from now on. Can’t wait to try your other instant pot recipes!

  73. I”m making this soup today! Wondering if you can give us measurements for carrots and onion…I have a bag of carrots that are entirely different sizes. Nothing consistent. And my onions are different sizes, as well. Could make a big difference in taste. Thanks!

    1. Hey Julie,
These do not need to be exact, I would follow the recipe as is:) I hope you love the soup, please let me know if you have any other questions! xTieghan

  74. Do you see any issue with adding chicken into the crockpot before cooking? Would love a non-vegetarian version of this, THANKS!!

    1. Hey Liz,
That should be totally fine to do! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  75. 5 stars
I made this tonight and it turned out perfect! The flavors were amazing, so delicious and hearty, and I cannot wait for leftovers for lunch tomorrow. The only issue… we forgot the crusty bread 🙂

  76. 4 stars
This soup is really easy to make. Even tough it’s delicious, I’m leaving out the smoked paprika next time. It’s too smokey for my taste and that doesn’t seem to go with the rest of the soup. Anyway…love your recipes! Regine

  77. Making this tonight!! How long can it be kept in the fridge for leftovers? and would you advise freezing it with the cream, cheese and tortellinis cooked? Thanks!

    1. Hey Julie,
You can keep this in the fridge for 4-5 days. If you want to freeze, I would freeze without the tortellini, cheese, and cream. I hope you love the recipe, please let me know if you have any other questions! xTieghan

I loved this recipe. Made it earlier today in the crockpot and it made the apartment smell wonderful. I usually never use kale in your recipes when you call for it but today I decided to give it a try. Sooooo glad I did! Not sure why I’ve been so scared of kale lol. Thank you!!!!!

    1. Hey Sam,
Thanks so much for trying the recipe. That is so great the recipe was enjoyed! Happy New Year! xTieghan

Thanks so much for trying the recipe. That is so great the recipe was enjoyed! Happy New Year! xTieghan

  80. You are my go to! Made this tonight as the topping to our Meatless Monday meals and WOW. So good!

If anyone wants to know- I didn’t have any wine, so I just omitted. sad I didn’t realize it before going to the store, but will try again with it bc this was so dang good!
Also if you have any vegetables that you need to use up (mine was asparagus) it works really well!

    1. Hey Ashlei,
Thanks so much for trying the recipe. That is so great the recipe was enjoyed! Happy New Year! xTieghan

I made this soup for dinner and it was very satisfying. I had most of the ingredients and ad-libbed the rest. I added mushrooms and used half and half. I didn’t have wine or fennel seeds and it was great without. I omitted the 1/3 cup of Parm and just sprinkled a bit on top of my bowl. Enjoy!

    1. Hey Megan,
Thanks so much for trying the recipe. That is so great the recipe was enjoyed! Happy New Year! xTieghan

  82. Hi Tieghan,
For the fennel seeds, can you substitute fennel powder? If so, what would the adjustment be?
    Thanks 🙂

    1. Hey Alexis,
Sure, I would use 1 teaspoon. I hope you love the recipe, please let me know if there is anything else I can help with! xTieghan

    1. Hey Em,
I am so thrilled that you enjoyed the recipe, thanks so much for giving it a try! Happy New Year! xTieghan

  83. SOOOOO DELICIOUS ❤️
I followed recipe exactly. The only change I made was to add chicken and pancetta tortellini instead of cheese tortellini. The entire family loved it. Thank you 🙂

Oh, so, yummy. My husband Will eat soup but it needs to have Protein to make him happy. I cut two large chicken breasts in half, coated both sides with Italian seasoning and lightly pan fried them. I added the chicken in About halfway through. This recipe was a big hit.

    1. Hey Shelley,
I am so thrilled that you enjoyed the recipe, thanks so much for giving it a try! Happy New Year! xTieghan

In my top 3 “soup for the winter” list! It is so so so SO good (and easy to make)! I like to make more of the broth (step 1) and store it in the fridge/freezer so I only have to add the cream, cheese, greens and tortellini for a quick dinner prep!

  89. hey there, I want to make this for dinner this evening however I do not have fennel seed. Will this make or break this dish? Is there something I can substitute this with or just omit it? Thanks so much!

    1. Hey Pam,
Totally fine to just skip the fennel seed. I hope you love the recipe. Please let me know if I can help in any other way! Happy New Year! xTieghan

  90. 5 stars
Super easy, very tasty. Only had dried TJ tortellini so so slightly undercooked them and added to soup last 5 minutes. I made this after I saw the top recipe post today on IG. Great lunch on a chilly day. Definitely a repeat

  91. 5 stars
Absolutely delicious and simple, well rounded and hearty. Flavors are perfect. Not that hbh recipes need improvements but I was feeling frisky and I threw my parm rind into the pot while everything simmered, highly recommend.

    1. Hey Jaime,
Thanks so much for trying the recipe, I am thrilled that it worked out for you! Happy New Year! xTieghan

    1. Hey Heidi,
If you are planning to keep for 2-3 days, please note the noodles with soak up a lot of the broth. You can freeze this, but I would freeze without the tortellini and or noodles. I hope you love the recipe, please let me know if you have any other questions! Happy New Year! xTieghan

this is now one of my go to soups when I want some pasta type food. i have made this 3 x in a month and my son-in-law who is a “pseudo-chef” he’s really a lawyer but an amazing cook, asked for this recipe. Great flavor from the herbs and a quick soup to make!

  93. 5 stars
A winner! And my kids loved it! (I used the slow cooker. I added mushrooms at the final hour, and swapped kale for spinach). Delish. This will be a go-to recipe.

  94. 5 stars
Loved this soup made as written!
I was thinking of making it as a freezer meal for one of my friends who is about to have a baby. Do you think I could just leave the tortellini out and have them add it and briefly boil to reheat the soup? Thanks!

    1. Hey Lexy,
Thanks so much for giving the recipe a try, I am so glad it was enjoyed! Yes, that would work well:) Happy New Year! xTieghan

  95. 5 stars
    A winter favorite!
I prepare more of the broth and store it in the fridge or freezer so I only have to add the tortelini for an easy weeknight dinner!
Great flavors and warms you right up!

  96. 5 stars
Yum! I’ve made this about about five times and it’s a five star! I’ve also made it with crumbled sausage or rotisserie chicken added to it; sometimes not. Delicious!

    1. Hey Kimberly,
I am so glad you have enjoyed the recipe, thanks so much for giving it a go! Happy New Year! xTieghan

  97. Hi Tieghan! I was wondering if you have any suggestions/recommendations for adding in some additional protein to this soup? I would love to hear your thoughts! Thanks!

    1. Hey Megan,
I think chicken or sausage would work well here. I hope you love the recipe. Let me know if there is anything else I can help with! Happy New Year! xTieghan

This was yummy soup! I did have to use frozen ravioli as that was all I had and no cream as when I went to use the leftover cream from Christmas, it had gone bad. The soup was still good without it. Got my husband to eat kale, lol.

  99. 5 stars
I crave this every week. It is so SO good. I try to stay away from dairy when I can so I replaced the cream with coconut cream and it’s just as good!

  100. 5 stars
This is the third recipe I’ve made from your site and they’ve all been great. We’ve already picked out some new ones to try for Christmas/Eve 🙂 Thank you

  101. 5 stars
Lovely recipe. Perfect on a cold, winter night. Added zucchini but followed the rest of the recipe as written. Sooooo awesome!

  102. 5 stars
Wow, wow, wow! May be top 5 favorite HBH recipes. I used a 12 oz bag of chopped kale, added 1/4 more wine and cream, added 1 cup of broth because it didn’t seem like there was enough broth before putting in the tortellini. This was absolutely incredible! Bravo!

  103. 5 stars
Made this for my family tonight and it was a win! I was worried at first I put too much fennel in based on the intensity of smell when everything just started simmering, however it was perfect! It added a flavor I’ve been missing ever since I became a pescatarian. I may be trying more fennel related recipes in the future. My family loved this dish as well. I am excited to have another easy go to recipe in my toolbox.

  104. 5 stars
AHMAZING! I made the stove top version, it came together pretty quick. Super hearty, packed full of vegetables, creamy but not too heavy. Definitely going to be a staple recipe during these winter months. 🙂

  105. 2 stars
Smelled amazing. But, the broth tasted liked someone messed up making minestrone. I didn’t use celery and substituted spinach for kale, so possibly that led to the issue.

    1. Hi Jenna! I am sorry this did not turn out as expected! I would suggest trying it with kale and celery if you are able to! xTieghan

  106. This was a fun and delicious way to eat tortellini, a change from the usual pasta-with-red-sauce rut. It was delicious and easy. You really are the absolute best for flavorful, healthy dinners. Again and again, thank you-

  107. 5 stars
This is my go-to soup this fall/winter! Super easy and fast in the instant pot. I’ll throw in extra veggies I have laying around sometimes too and add a little extra spice…because we like spice in this house. SO good!!

  108. Hi! I really want to make this for my family but my mom is on a low carb diet. Do you have suggestions for a pasta substitute? Maybe mushrooms?

    1. Hey Andrea,
You could skip the tortellini and do something like cauliflower gnocchi! I hope you love the recipe, please let me know if you have any other questions. Happy Holidays! xTieghan

  109. 5 stars
I have made this a few times on the stovetop and the flavour is amazing! I have added a couple shredded chicken breasts (cooked so easily in my instantpot) to it, as well as some sliced mushrooms. Yummy xo

  110. 5 stars
    Delicious!
A cold Monday night in Carolina – soup was called for! Made the house smell delicious.

And thanks for the tip to take out the tortellinis for leftovers. When I made chicken & dumplings, the dumplings totally soaked up the broth.

    Thanks!

  111. 5 stars
Excellent soup! Great flavor. I made some subs and additions that worked out—-spinach for kale, used chicken and vegetable broth 50/50 for the broth and wine because that is what I had and added shredded turkey. Also used frozen tortellini. Was so good, with rave reviews from the family, A keeper!

    1. Hey Caroline,
I think chicken or sausage would be great here! I hope you love the recipe. Please let me know if you have any other questions and Happy Holidays! xTieghan

  112. 5 stars
I have been cooking some of your recipes and just want to say Thanks they are so delicious, and I am telling others about your recipes Thank you

  113. 5 stars
Hi there! I love this recipe, but i cook for one. How can you successfully have this leftover without the tortellini soaking up all the liquid!!

  114. 5 stars
This soup was delicious. The flavor was spot on. I had some left over pesto, so I threw a spoonful in in-place of the basil. Such an easy weeknight meal!

  115. 5 stars
I made this soup tonight for dinner in my Instapot. My daughter loved measuring out of the herbs and chopping the fresh vegetables. We had it tonight for dinner with crusty bread. It was AMAZING! Thank you so much for sharing your delicious recipies. I’ve just headed back into the fridge to finish the leftovers 🙂

  116. I put this in the slow cooker this morning and just realized I accidentally put an entire jar of tomato paste instead of only 2 tablespoons. 🙁 oops! We will see how it comes out. Might be more of a tomato soup, haha. I’m so bummed because I was so excited for this one. Hopefully it still comes out decent. Thoughts? Would it still be good with that much paste?

    1. Hey Jessica,
I think it will be fine:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

Made this recipe for myself and my husband for dinner tonight and I loved it! I asked my husband how many stars he would give it and he said 5! It’s a good one! Thank you!

I have made this recipe for my family four times now . . . and I only discovered the recipe last month so that’s saying something! It’s so simple and so yummy! I had a question — would exchanging spinach for the kale work sometimes too?

    1. Hey Jillian,
Thanks so much for giving the recipe a try! Yes, spinach would be great to use in place of the kale. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  119. 5 stars
This soup is currently in the crockpot and I cannot WAIT to eat it for dinner! Are the estimated calories per serving? Or is it 402 calories for all 6 servings? Thanks! Love all of your recipes.

  120. 5 stars
AMAZING!! The spices really turn this soup up a notch from your typical “Italian Tortellini Soup”. I maxed out on the fennel and HIGHLY recommend this recipe for anyone looking for the PERFECT cozy soup recipe as it gets colder outside.

  121. Hi Tieghan,
I love everything HBH!!! So does my family. It brings me joy to try new things in the kitchen. I love all of your soups – question for you. What do you consider a serving of soup when you have “makes 6 servings.” Would you consider it a cup?

    1. Hey Mary,
I would say about 1 1/2-2 cups. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  122. Hi! I can’t wait to make this for dinner tonight, but I only have frozen tortellini. How would you recommend I go about using frozen instead of fresh? Thank you in advance, love all your recipes!

    1. Hey Destiny,
You will just need to allow a little more time for the tortellini to cook. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  123. 5 stars
Made this for my hubby and skeptical 21-year-old son this week. It was a huge hit with all three of us! My husband said that he doesn’t usually like Italian soups, but this is the exception to the rule. This recipe is definitely going into regular rotation. Thank you!

  124. Hi, I’m going to make this tonight. When you mention 4 celery stalks are you referring to a bunch of celery as a whole or the individual ribs? Thanks !

    1. Hey Liz,
I am referring to 4 individual ribs. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  125. Hi! Will be making this recipe tonight. Was just wondering, if I am making this in the crockpot, do I need to cook the tortellini before or will it cook in the crockpot?
Thanks! Can’t wait to try it out!

    1. Hey Abby,
The tortellini will cook in the crockpot. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  126. Hi! Making this yummy recipe today, and wondering about frozen tortellini? Should I put it in sooner? Cook it on the stove prior? Thank you! I loooove your recipes so much!

    1. Hey Mackenzie,
I would just add the tortellini during the last hour of cooking. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Thank you so much for trying this recipe, Renee! I am really glad this recipe turned out so well for you! xTieghan

The temperature finally dropped enough for us here in Southern California that it now feels like autumn (of as autumn as we can have in San Diego). With the rain and finally being able to bust out the flannels, the day was made even better with this soup simmering away in a slow cooker. I can think of no other way to best stimulate an appetite than having something yummy cooking away all day 🙂 The soup, like all recipes I’ve tried of yours, was delicious. It was filling, healthy, and comforting. I did omit the cream/milk to lighten things up a little (I’m sure it would’ve tasted even better with it) and added slices of Napa cabbage since I had it available. Soooooo good. Throwing this one into the rotation for good feelings all fall and winter long. Thanks!

    1. That sounds like the perfect day for soup! I am really glad this turned out so amazing for you, Marilu! I hope you are staying warm! xTieghan

    1. Hey Ashley,
Yes that will work. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This is our new favorite soup. I’ve made it twice this week. I used spinach instead of kale since that’s what I had, and added a TBSP of pesto that I needed to use up. Thanks for another great recipe!

  129. 5 stars
This soup was so comforting to eat! The perfect cozy meal on a fall day, and I loved all the nutritious veggies included, too. I didn’t end up adding the fennel, paprika, or red pepper (mostly because I didn’t have them on hand), but the soup was still incredibly delicious!

    1. I am really glad this recipe turned out so amazing for you, Amanda! Thank you so much for trying this one! xTieghan

  130. 5 stars
Made this in the instant pot tonight and it was PHENOMENAL. Only edit was no fennel, since we do not enjoy the taste…. needless to say it was SO. GOOD. Silky, creamy broth and the seasoning on the veggies made for a rich taste! LOVING THIS!!!

  131. 5 stars
This recipe is amazing, delicious, and so easy!!! I subbed kale for spinach and it was perfect. We also ended up using a 20oz pack of tortellini which was good. I’m going to make this for the second time in a week this time on the stove (used crock pot first time)!

  132. This is my new favorite soup! I use the wine to deglaze the pan that I cook the onions, garlic and herbs in. I cook it in a crockpot. Love that it is a vegetable soup. I did cut down on the fennel to 1/2 tsp. Love your cookbooks and recipes.
    Keep up the good work!

    1. Hi Victoria! I am really glad you have been loving this and other recipes of mine! I hope you continue to! Thank you so much! xTieghan

  133. 5 stars
I made the stovetop version of this tonight along with a side of your beer bread. Delicious! The soup had such incredible flavor. I look forward to making this over and over again this winter.

  134. 5 stars
This has such excellent flavor! I wanted some extra protein, so I did add some shredded chicken…and mushrooms too. It was delicious! I made it on the stovetop, but did use my instantpot to cook the chicken.

    1. Hey Mackenzie,
The tortellini will cook in the crockpot. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  135. 4 stars
I made this yesterday using the slow cooker. Absolutely delicious. Today all the broth was soaked up into the tortellini though. Still tastes good but that broth was to die for!

  136. 5 stars
Another fantastic recipe! Thank you so much for sharing your skill and creativity with us. I look forward to trying a new recipe every weekend!

  137. 5 stars
This was really good. I appreciate that you also list stovetop directions. I think I am going to add some sausage and mushrooms next time, although this recipe is excellent as written. I am never disappointed when I try one of your recipes. Thank you for the inspiration.

  138. 5 stars
I made this soup today, followed all instructions, except added a couple of shots of Maggi to it (i had to use no salt veggie broth and it was a little bland) at nd added a cup of chopped chicken leftovers… man oh man was it great! Even with the kale, which I’m normally not a fan of!

  139. 5 stars
PERFECT fall soup on a cold & windy Sunday. Left out the fennel because we aren’t fans. Hearty but healthy, and my boys didn’t even protest the kale. Plus, I love that you included instant pot instructions as well so I can still make this on busy weeknights – I’ve never been good at getting stuff in the crockpot in the morning 😉

    1. I am so happy this recipe turned out so amazing for you, Sara! Thank you so much for trying this one! xTieghan

  140. How would this be using sweet potato raviolis? It seems to beg for it! I haven’t tried it, but it looks delicious!

    1. Hey Michele,
That would work! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  141. 5 stars
This soup is so incredibly delicious! The flavors are amazing, and it was perfect for dinner on a cold fall night. I made the stovetop version and the instructions were super easy to follow. Subbed kale for spinach since had on hand and it was delicious but want to try with kale next time 🙂 Will definitely be adding this to my recipe rotation!

  142. 5 stars
Obsessed with this soup! I add a bit more veggie broth and add some beyond meat hot Italian sausage to kick up the protein. I’ve made this multiple times and even dehydrated it for backpacking! Big fan.

  143. 3 stars
I so wanted to love this but it wasn’t as tasty and rich as I had expected being that there’s dairy and the pasta adding richness to this soup. I followed it to the t but just not as good as expected. My husband and I were trying to figure out what it needed. There was enough salt and herbs but definitely lacked more depth of flavor. Not sure I’ll make again.

    1. Hi Danette! I am really sorry this recipe did not turn out as expected for you. If there is anything I can help with, I would love to! Otherwise, I hope you love some other recipes of mine! xTieghan

  144. 5 stars
Just took my first bite of this and… YUM! I highly recommend using the heavy cream for that beautiful light orange color and silky texture. I forgot the paprika and basil… still delicious! Never heard of tortellini soup before, and I am LOVING it.

  145. Made this recipe yesterday and it was soooo delicious! Definitely making this again! I cut back on the smoke paprika and probably will cut it back even more next time but this was really tasty!

  146. 5 stars
This is a great comforting soup. I made it a couple of weeks ago and forgot to review. I didn’t have any tortellini on hand so I added Trader Joe’s frozen Fiocchetti which worked perfectly. They’re slightly more delicate pasta pockets filled with cheese. And since it comes with frozen little blocks of pink sauce that melted right into the soup, I didn’t need to add any separate milk or cream. It was a very successful substitute. This is an easy, yummy, Fall and Winter weeknight meal.

    1. Hi Sarah! I am so happy this recipe turned out so well for you, especially on a chilly night! YES! Thank you for trying it! xTieghan

    1. Hey Victoria,
Yes, above the ingredient list you can edit the servings. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  147. 5 stars
Another winner! This was super quick to put together- love the crockpot/insta pot/stovetop directions all being on here as well. The broth was delicious – definitely need the bread to make sure you can eat all of it.

  148. 4 stars
I made this last night because it was officially soup weather. My place smelled great! This soup has great flavor. I rarely use vegetable broth so I subbed chicken stock which I had on hand. Everything else I pretty much did by the recipe. I used my instapot which worked out wonderfully! My biggest recommendation is to use maybe 1/2 lb of tortillini or make way more broth. Tastes amazing! But the next day I almost just had a pasta in a sauce rather than a brothy soup. Most of the soup was soaked up. I added a little stock to help when I reheated it. Still amazing! I’ll definitely make this again, with chicken stock of course, (I also used the heavy cream.) Cozy weather soup!

    1. Thank you so much for trying this recipe, Beverly!! I am really glad this turned out so well for you!! xTieghan

This soup is SO good! Perfectly cozy for fall, but still filling enough to be a good dinner when you serve it with bread! It is a very unique soup too, not just the same old thing. I have never put tortellini in soup before, but after this I am DEFINITELY a fan! Thanks Tieghan!

I made this on the stove top and it was surprisingly quick and easy to make. So flavourful and really very filling for a soup. So perfect for this horribly rainy October.

PS. Tieghan, thanks for the metric conversion you’ve added to the ingredients for all your new recipes. Makes it so much easier to follow your instructions from Europe. A great touch x

Made this for dinner tonight and it was a hit! Perfect meal for a windy day. I was a little confused on the tortellini part. I made it on the stove top and wasn’t sure if it was supposed to cook in the soup so I boiled it separately and then added it in. Reading the comments I think I should have cooked it in the broth, but it was still delicious. Love all of your recipes!

  152. 3 stars
I followed the instructions exactly… The blandest soup that has ever come out of my slow cooker. Needs drastically more salt as the recipe calls for low sodium stock. The parmesan should NOT be mixed in with 15 min to go—it just becomes gluey. The tortellini got mushy in that time frame. Carrots tasted good but everything else was totally disappointing.

    1. Hi Rachel! I am really sorry this soup did not turn out as expected. If there are any questions I can help with, please let me know! Otherwise, I hope you enjoy some other recipes of mine! xTieghan

Fantastic soup! I made this on the stove top and took the other reviewers suggestion to add some spicy sausage. I also used ravioli rather than tortellini because that’s what I had. Sooooo good! Soooo easy! 10 stars! 😉

  154. I’ve been trying to make this soup over the past week. (Had to get more fresh carrots because I waited too long to use them) plus, I’m 50 and it’s the 1st time I ever bought kale! I made it on the stove top, followed the recipe ad is, and it was fantastic. So yummy for a cold rainy evening. I served it with warm crusty bread for dunking. I look forward to making it all through the winter. Even my 10 yr old loves it!

    1. I am really glad this turned out so well for you Beth! I’m glad you gave kale a try! Thank you so much! xTieghan

Made this tonight Perfect night for it weather wise. I had a rotisserie chicken in the refrigerator so I added some shredded chicken breast to it. Served it with french baguette Excellent Soup Glad we have leftovers 😋

  156. 4 stars
I am not giving five stars only because of the herb quantities. I have an herb garden and cook with herbs all the time. I was suspicious of the 1 tablespoon quantity of dried herbs, so I used 2 teaspoons of each and less than one of fennel seed.
That said, this is an amazing soup! It was so delicious with some crusty bread on a chilly wet day. My adjustments came out perfect.
The other thing is that you must have a larger than basic crockpot, I had to finish mine off on the stove in a Dutch oven.
This one is in our rotation now.

    1. Hi Cheryl! I am really glad this recipe turned out so amazing for you! Thank you for trying this one! xTieghan

  157. Oh my goodness this soup is soooo delish! I added some ground sausage but it paired beautifully. I tried to add a photo but can’t figure it out!!!! Super easy and we are having with warm sourdough bread!

    1. I am so happy this recipe turned out so amazing for you, Katie! If you have instagram, I would love to see this! Thank you for trying this one! xTieghan

I made this soup using two different methods, one batch in the instant pot and one on the stove. I took off one star for this recipe because the tortellini (yes, I used fresh like the recipe said) ended up absorbing too much broth. In the future I would probably double the liquid or maybe pre cook the pasta. I also would prefer the spices to come through a little stronger so I would also increase those, possibly even double. Overall, still a great recipe! Thank you!

    1. I am really glad this recipe turned out so well for you, Liane! Thank you so much for trying this one! xTieghan

    1. Hey Joyce,
Yes that is fine to use! I hope you love the recipe, please let me know if you have any other questions! xTieghan

I followed the stovetop recipe and it was awesome. I love fennel in soup so I added the full two teaspoons of fennel seeds. I did a quarter teaspoon of smoked paprika just to be safe and the soup was still pretty spicy, which I like but definitely something to keep in mind. I was feeling courageous so I made my own cheese tortellini. It was all just so good. Perfect for a Fall Sunday afternoon. Thank you for another fabulous recipe!

    1. Hey Ruby,
I would use additional veggie broth in place of the wine. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This soup was SO good! I never seem to make soups flavorful when starting from scratch, but this one was delicious. I used the slow cooker method, and it was so easy, perfect dinner for a lazy, cold day.

  161. 5 stars
Made it on the stovetop. Didn’t have kale so I subbed baby spinach. Threw in some cooked hot Italian sausage, too. Absolutely delicious. This one is keeper!!

  162. Hi! Looking to make this next week! CANT wait. Question: can you do a chicken stock instead of a vegetable broth?

    1. Hey Emily,
Yes that would be totally fine to do! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  163. 5 stars
I recently found your recipes on Instagram and this was the first one I started off with. Very delicious. All I needed to do was a little bit more broth but other than that it was great!

  164. 5 stars
Prepared this soup along with your beer bread and your pumpkin butter for the first time and delivered it all to a sick friend. It’s always a risk preparing food for others that you’ve never tested yourself—-but thanks to your amazing recipes I never really worried. All these were delicious, beautiful and a perfect fall menu!! Thank you so much, Tieghan, I love your site and recipes, you are a treasure!!

    1. Aw I am really happy you have been enjoying my recipes, Vanessa! I hope you continue to! Thank you so much! xTieghan

  165. Hi! I am making this over the weekend and am SO excited. It’s going to be in the 30s all week so this is going to make a perfect lunch/dinner. I just wanted to say how cool I think it is that you have the battery for the calorie symbol, I love that. Thank you for showing that calories are our energy, nothing more, nothing less. Just energy for our bodies! So cool!

    1. Aw thank you so much Jessica! I hope this soup turns out amazing for you!! Perfect for a chilly evening! xTieghan

This was SO delicious! My husband and I both loved it. We did swap out some of the dried herbs for fresh and it was an excellent swap as we like the texture of fresh over dried better. Additionally, while the recommendation is to take out the tortellini before storing any leftovers, we left them in because, well, weeknights, and actually both thought the leftovers were almost better! The tortellini does soak up some of the liquid but it makes them so flavorful and it becomes more stoup like, which we loved! Will definitely be making this again!! Thanks so much, Tieghan, for your amazing recipes!

    1. Hey Julia,
Yes that will work! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  167. Tieghan – This soup was a HUGE hit! I subbed coconut milk for cream tomato puree for paste and spinach for kale (Covid = less trips to the store). It was sooooo tasty! Thank you for the work you do to make me look like a great cook! 🙂

    1. Hey Sheridan,
Sure, I would not freeze with the tortellini though. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  168. 4 stars
Delicious! I have been eating on this soup for days now. I am a big fan of kale in soup. The soup is light in comparison to the go-to tortellini soup I make for my boyfriend, which is packed with cream, meat and cheese. I much prefer this version as a pescatarian and one who can NOT just eat one bowl of soup. I was short a couple spices, but compensated with a spice blend from the pantry. I would recommend and also make again – very easy, filling and comforting.

    1. Hey Cayla,
The milk is added in step 3. I hope you love the recipe, please let me know if you have any other questions! xTieghan

This soup was so flavorful and comforting! Definitely an easy weeknight family meal to keep on hand for the fall and winter!

  170. 2 stars
I love the majority of the half baked harvest recipes I have made and was excited for this soup on a cold rainy day. While it is not inedible as written, it is also not very tasty. The flavors of the broth, and the overall soup do not seem balanced.

    1. Hi Brittany! I am really sorry this did not turn out as expected. Please let me know if there is anything I can help with to make this better! xTieghan

    1. Hey Clare,
I would use ground chicken and brown that with the onions. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  171. Making this today!! Can’t wait. Adding ground chicken – do you think I should cook the chicken prior to adding it to the crockpot, or would it cook in the crockpot? Thanks so much!

    1. Hey Hannah,
I would brown the chicken with the onions. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  172. 5 stars
So delicious! Minimal prep and cleanup – made it stovetop and start to finish took less than 45 minutes, including doing the dishes. I added baked Parmesan crisps for garnish to act like crackers. Perfect way to kick off soup season!

  173. 5 stars
This recipe was awesome! I subbed canned coconut milk and spinach. I also added a little Italian sausage. It was delicious and smelled great in the crockpot!

  174. I made this today and wowowwwww so good. My boyfriend barely eats his greens and loved the kale in it! My mom asked for the recipe as well 🙌🏼

  175. Your creamy tortellini veg soup looks delicious…..can’t wait to try. I am a novice cook and new to slow cooker recipes. If I wanted to add Italian sausage (family likes) what kind – spicy or sweet- would you recommend, how much, and when should be added in the cooking process? Thank you in advance.

    1. Hey Cynthia,
I would recommend using spicy sausage, I would do 1 pound and brown it with the onion. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  176. 5 stars
Another easy and equally tasty recipe! I switched out the pasta for squash instead and it still came out delicious, followed the stove top instructions, everything was done in less than 30 minutes…easy dinner for any day of the week. Thanks again!!

    1. Hey Clarise,
For this recipe you will want to use fresh ravioli. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  177. 4 stars
This very hearty, but still healthy meal is so delicious. My husband loved it! I decided to use spinach instead of kale, and used fat free half and half instead of the cream. This yummy meal will be on our regular soup rotation this Fall and Winter. Thanks for the healthier option! Keep them coming!

  178. 5 stars
This was another amazing recipe of Tieghan’s. The only thing I changed was the amount of vegetable broth. I added 1 cup more and added mushrooms to the recipe. I will definitely make this again!

  179. Hi I’m in college and very new at cooking on the stove top directions, It just says simmer for 20-30 min is it covered or uncovered ? Thank you in advance

    1. Hey Evilin,
You can simmer covered. I hope you love the recipe, please let me know if you have any other questions! xTieghan

Simply delicious. So perfect for chilly weather. Love all your recipes and I have made so many already.I made the pumpkin and apple butters also and have been using them so often in so many recipes. I made your 5 ingredient bread to go with this soup and boy did we devour it! Thank you for your amazing recipes!

  181. 5 stars
This was delicious—so much flavor, actually bursting with flavor! I added mushrooms and a bit more wine which I thought was a nice touch and followed the stove top instructions. I also made the 5 ingredient beer bread to have with it as recommended. Highly recommend this combo for a chilly fall evening!

    1. Hey Tina,
The milk is added in step 3. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  182. Delicious!!!! Made it tonight and everyone loved it. Used 1 teaspoon of fennel and tiny ravioli instead of tortellini. Definitely will be a staple for Meatless Mondays this Winter.

    1. Hey Morgan,
Sure, adding chicken or sausage would be great! I hope you love the recipe, please let me know if you have any other questions! xTieghan

    Tasty tasty soup!
I had a bit of a disagreement with my pepper shaker, but it was still so herby and delicious! Would ABSOLUTELY make again!

    1. Hey Susan,
Sure chicken broth would be great! I hope you love the recipe, please let me know if you have any other questions! xTieghan

I made this tonight and it was very good. I accidentally forgot the wine so don’t worry if you do that. I cooked it on low in my slow cooker and then cranked it up to high when I added in the tortellini. Everyone in family (including picky 3 year old) chowed done! Thanks , Tieghan!

  185. 3 stars
Delicious recipe! My instant pot was in the dishwasher so I made on the stove. I found that the broth evaporated a lot when cooking so I had to add a lot more than the recipe called for. Ended up running out of broth, so it ended up more of a pasta and less of a soup. Might have to try again in my instant pot so it comes out right! Despite that, was really yummy. Just be aware that you might need extra broth if cooking on the stove!

  186. Would it work to add more broth? It seems so low in my crockpot I feel like there’s not enough for the tortellini later? First time! Can’t wait!

    1. Hey Cari,
Yes that will work. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  187. Looking forward to making this tonight! Could I add i some diced butternut squash? I need to use it before it goes bad. Should I cook the squash before adding it or just throw it in raw with the rest of the veggies?

    1. Hey Nicole,
I would add it with all of the veggies. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  188. 5 stars
I made this in my multicooker using the saute function for the first step and then letting it slow cook for four hours. It was easy and delicious! Too late I realized I should have thrown in a parmesan rind, but I will definitely be doing that next time. The recipe made a ton of leftovers, so we’ll be set through this rainy, chilly week with hearty and delicious lunches. I’m loving the run of slow cooker recipes lately.

  189. 5 stars
This was a big hit and will be a fall favorite! I did leave the celery out (because we just aren’t fans) and served it with some Parmesan toast. It was so good – thank you!!

  190. Had this on the agenda for over a week now, and finally made the stove top method….
Let me say this soup did not disappoint me and the picky meat loving hubby! Kudos Tiegen, and thank you! This will not bee the last I see of this soup!

  191. 5 stars
Just made this and wanted to say thank you – this was a delicious and easy to make fall recipe. I definitely plan to make it again!

    1. Hey Sirenna,
I think ground sausage would be great to add. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  192. 5 stars
I added baked diced chicken into the pot with the tortellini. Great add for a more dinner feeling recipe. Also, I used spinach instead of kale. This soup was a hit and I’ll be making it again!

  193. 5 stars
Wow, what a delicious soup. This was my first time making one of your recipes. It turned out great. Couldn’t be happier with it. Thank you.

  194. Hi! If I plan on making a bunch of this, do you think it would freeze okay? As in with the cream/pasta/parm too? Thanks!

    1. Hey Jeanna,
I would freeze but keep the tortellini separately. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Ilene,
Yes totally fine to omit. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Kristyn,
I would freeze this soup with the tortellini separate. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  195. Hey Tieghan! This soup looks amazing! I just happen to have everything but the kale on hand already! I do have half a bag of tricolor coleslaw mix (shredded green and purple cabbage + carrots) in the bottom of the fridge. Do you think I could sub that in for the kale, or would it change the taste/texture too much?

    1. Hey Kate,
In place of the kale I would use spinach, I don’t think cabbage would be the best option. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  196. 5 stars
We love this soup. Delicious and filling. Wonderful flavors and a great use of all our stored garden vegetables. We used spinach, which we always have in the fridge, instead of kale. Perfect for our chilly fall New Hampshire weather.

  197. Hi! Can’t wait to make this this week. Can we sub 2% milk instead of whole or heavy cream? Or do you believe it wouldn’t be creamy enough? Thanks!

    1. Hey Sophie,
2% milk is totally fine to use! I hope you love the recipe, please let me know if you have any other questions! xTieghan

I immediately pinned this recipe when I first saw it, and we were counting down the days until it was cool enough to make. It was SO delicious! I doubled the amount of veggies that it called for, but other than that pretty much followed the recipe exactly for the stovetop version. Can’t wait to make this when we can safely have guests over for dinner again!

  199. Hi, Tieghan! Currently have your 5-ingredient beer bread in the oven as I type this 🙂

This may be a silly question, but I’m curious–In the first step when you sauté the onions, garlic, and herbs, is there a reason you instruct doing it in a large pot before transferring to the slow cooker? Would it be alright to do this in a smaller pan, or will I be missing out on some magic cooking trick that’ll take everything up a notch?

Thank you for your incredible work!

    1. Hey Mila,
You just want to use a pot that has enough room. I hope you love the recipe, please let me know if you have any other questions! xTieghan

Made this for dinner and absolutely loved it! I swapped out spinach for kale, and it was great. I didn’t have tomato paste so I omitted it, but that definitely resulted in a slightly less appetizing colour of the broth so next time I’d be sure to add that in. Despite that, it was still absolutely delicious. I made HBH’s soft pretzels to go with it. I will make this over and over!

  201. 4 stars
Really good for a fall dinner!! My husband didn’t particularly like the kale but the veggies and broth tasty! Thank you for your great recipes!!

    1. Hey Robi,
Yes that will be fine to use. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  202. 5 stars
This was absolutely delicious! Made it on the stovetop and added my own spin: mushrooms along with the onions, browned some chicken sausage and used chicken stock. So simple and a hit. Will make again and again!

  203. Will be making this next week for sure! Just curious if you have a favorite brand of cheese tortellini as I have not found one my family loves. Any suggestions would be appreciated. Thanks!

    1. Hey Gina,
I like to get my tortellini from Whole Foods. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  204. This soup was absolutely delicious, super easy to throw together, and the perfect cozy, Autumn meal! I opted to add some ground Italian sausage and cook it with the onions and garlic. It was delicious and my fam loved it! Would love any tips to make it a little more creamier, I think I used a little too much olive oil this time around. This one is a keeper and a favorite. Thank you!

  205. 5 stars
This was sooo good, and super quick to prepare. Love a good slow cooker recipe. I also added mushrooms! I’m not sure why it only has a 3.5 star rating, definitely one of my favs so far from Tieghan!

    1. Hey Rob,
Yes that is fine to use! I hope you love the recipe, please let me know if you have any other questions! xTieghan

Fantastic! Did the stove top version. Added more kale than what was called for and made us so full for dinner. HBH never fails us!

  207. 5 stars
Made this last night in the instant and it was so yummy! My BF is vegan so we subbed coconut milk for heavy cream. We’ll definitely be making this again as the weather cools down. Thank you for this easy, delicious recipe!

  208. Hi Tieghan! If I don’t have any white, could I substitute red wine, or would you suggest omitting it altogether? Thanks!

    1. Hey Leah,
I would just use additional veggie broth. I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Dedra,
Yes, that would be a great idea! I hope you love the recipe, please let me know if you have any other questions! xTieghan

This was very, very tasty! I used my IP. I used dried tortellini and it was great. I had one of those kale salad kits and used 5 cups of that which was a mix of kale and other chopped veggies. I followed the recipe but did the IP on high 4 min, QR, then added the tortellini and kale mix and did another 2 min and QR. The textures were perfect. Hearty but not heavy! Win win!!

  210. 5 stars
Made this soup the first chance I had! I’m dairy-free, so I subbed coconut milk for the cream, nutritional yeast for the parmesan, and non-dairy tortellini. Instant Pot instructions came together really quickly! I swapped the kale for spinach I had on-hand so I only simmered for 4 minutes instead of 10 to finish everything off (4 minutes was the recommended cook time for the tortellini I used). I was out of fennel and oregano which might have made this taste even more savory ~ I’d definitely make this again with spices as written! Thank you for brightening our daily inboxes with creative, easy-to-follow recipes!

  211. 5 stars
This was a fantastic soup! I made a few extra additions ( andoullie sausage and extra carrots) to help clean out some odds and ends in the fridge, but mostly followed the recipe. Everyone loved it.

  212. 5 stars
Just made this for dinner. It’s so good! It was nice that I already all the ingredients. Perfect balance of flavors. Thank you for another great recipe!

I made this tonight using my Instant Pot the whole way through. I sauteed the veg in it, then set it to slow cook mode on the “more” setting for the rest of the steps. It cooked 4 1/2 hours and it was perfect! This is such a great hearty soup, perfect for chilly fall days. I also made pumpkin butter today so I can make the cinnamon swirl, chocolate chip pumpkin bread after dinner. What did I even cook before HBH?

  214. 5 stars
Love! We made some (accidental) variations and it came out wonderful!

The store was out of kale so we subbed for spinach and I realized after coming home that we were out of tomato paste. I had some delicious cherry tomatoes, so I cooked those in oil and blended it into the broth. We also wanted some meat so we browned up some sausage. So yummy and I look forward to trying more recipes soon!

  215. About to throw this all into a pot now! I only have skim or 2% milk. Will that mess up the recipe? Also have almond milk….Thoughts??

    1. Hey Laura,
Skim or 2% is totally fine to use. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  216. This looks amazing! Are you able to use any kind of pasta or is tortellini a must? I find that reg pasta bothers me to I usually go for rice pasta and I’ve never seen brown rice tortellini before. Thank you! Love all of your recipes, I will be making 3+ this upcoming week!

    1. Hey Meghan,
Use whatever pasta you like:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Jan,
I would just omit the fennel:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

As soon as I saw this soup, I knew I had to make it STAT, so I rushed out to the grocery store this morning to get all of the ingredients. All I can say is, “WOW!” This is absolutely delicious! It has so much flavor. I did use more broth instead of the wine, but it was still absolutely amazing. I highly recommend this soup! Thank you for the delicious recipe!

  219. What size crockpot did you use? I have a super large one and a smaller 2.5 quart one? Just wondering if I should pull the big one out, haha.

    1. Hey Lauren,
You will need the big one for this recipe. I hope you love the recipe, please let me know if you have any other questions! xTieghan

Very good and super easy! I subbed spinach for kale. And accidentally used cayenne pepper instead of paprika… woops. Still ended up delicious!

    1. Hey Beth,
Yes, the instant pot instructions are listed above:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  221. Has anyone added potatoes to this recipe?
If so what type and how far into the cook did you add them?
Wanting them to be cooked but not falling apart

    1. Hey Chad,
You could add diced potatoes with the carrots and celery. Just be aware of how much room you will have in your crockpot!
I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Julia,
You can just omit the fennel seeds:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

What an incredible soup! One of the best I have ever made. The flavours were perfect and the splash of Parmesan was delicious. I added spinach instead of kale and it was wonderful. (I popped it in for the 5 mins as I didn’t think it needed as long as the kale ) not sure if the photo will attach but I will try! Thanks for all of tha amazing recipes.

Yes that is fine to do:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  223. This looks so good I can’t wait to try it. Have you read the reviews on that all clad slow cooker? There not good. I was tempted to my it a while back but once I read the reviews I changed my mind.

    1. Hey Lisa,
I have never had issues with my slow cooker and have had it for years:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

  224. This looks amazing. I can’t have tomatoes due to a health issue. Can I leave out tomato paste or is there a good substitute?

  225. Looks fantastic. I can’t have anything tomato due to a health issue. Can I just leave out the tomato paste or is there a good substitute?

    1. Hey Crystal,
I would just omit the tomato paste. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  226. This looks amazing!! I’ve made four of your recipes in one week. Question about this recipe… do I cook the tortellini prior to putting in the instant pot? Or does the tortellini cook in the instant pot? Can’t wait to make this!

    1. Hey Abbie,
The tortellini will cook in the instant pot. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  227. Hi Tiegan. I love those Stuart Weitzman boots with pearls too. I found them on the Saks website. They are called Sondra there. You might have a look. Today, Monday is the last day of their friends and family sale. You might want to splurge they are 25% off. I am also going to make this delish looking soup.

  228. Trying to stay away from wine so don’t have it in the house. While cooking wine has more sodium is that an alternative? Other suggestions?

    1. Hey Deb,
You can just use additional veggie broth. I hope you love the recipe, please let me know if you have any other questions! xTieghan

  229. Same question—can you use the slow cooker function of the Instant Pot? I gather that you prefer the slow cooker option. This sounds delicious!

    1. Hey Connie,
I haven’t never used the slow cooker option my on instant pot, I prefer to just use my slow cooker:) I hope you love the recipe, please let me know if you have any other questions! xTieghan

    1. Hey Jessica,
Yes that is fine to do! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  230. Hi! This recipe looks amazing! Do you think it would work okay if I used canned coconut milk in place of the heavy cream/milk to give it a dairy-free creamy base? Let me know your thoughts!

    1. Hey Tara,
Yes coconut milk is totally fine to use! I hope you love the recipe, please let me know if you have any other questions! xTieghan

  231. The directions for all three ways (crock pot, instant pot and stove top) all say to put the soup in the bowl of the crock pot.
I feel this may be an error. 🙂
But I am going to make it. It looks great!
    Thank you,
    Cindy
