Who’s ready to celebrate with these lava cakes?

Ahh, me. duh.

I may be single on Valentine’s day, but you know I am totally cool with it. Single, loving life and loving the fact that I have every excuse to make these easy lava cakes today. Any of you with me or what? Did I mention not only is their warm chocolate oozing out, but peanut butter too? Because there is. And you know…the best part is possibly the fact that you really do not have to feel all that guilty about eating these. Made with all dark chocolate, whole wheat flour, an egg, and coconut sugar, these are practically one hundred percent, well, healthy…ish. 🙂

In all seriousness though, I love these cakes SO much. The fact that they can be made in just about fifteen minutes is a huge selling point. I mean, don’t you ever just crave some serious chocolate (hello, you know what I’m talking about…don’t deny it) and need to get your fix ASAP? This is your cake. Bonus that they’re pretty healthy!

OK, so let’s chat here about these sweet little single girls wholesome molten chocolate lava cakes.

What I love about these is that they are really easy to make, I used ingredients that I have on hand at all times (and I do mean at ALL times), and these are made for just one serving. So basically, they’re perfect for all us single girls out there! Or okok, anyone else who just needs a healthy..ish (<–clearly my favorite word) chocolate treat anytime, any day.

The ingredients are as follows…

…butter. I have been really into using ghee lately, which is clarified butter and a little healthier than conventional butter. That said, organic butter will do the trick, or even melted coconut oil.

…super dark chocolate. I like to use 82% dark as it has more of the superfood cacao in it.

…an egg. hello protein.

…vanilla. needed for any and all desserts. <–truth.

…coconut sugar. ahh, sweet, sweet, superfoods.

…salt. just a little to bring out those chocolate flavors

…peanut butter. or any other nut butter, but I like to use peanut butter. this is totally optional too, but you guys know I love my chocolate and peanut butter combos.

And that’s it. Simple right? Just mix everything all in one bowl. Bake for seven to ten minutes (I like to bake seven minutes for extra lava action). Then just serve with whipped cream or ice cream and EAT. You could also serve this with greek yogurt, which I think would be delish as well.

So while I know what I will be doing tonight, do you guys have any big Valentine’s Day plans? Do you do it up and go out or make a romantic dinner at home? Do any of you make something fun that you can also enjoy with your kids?

Totally dying to know since I have never really been into Valentine’s Day. Sure I love the idea of chocolate and flowers galore, but ahh, why can’t we do that everyday?

Whether you love Valentine’s Day or hate it, these cakes are probably a must make for today. Single, married, not sure what the status of the relationship is, whatever your love life situation is, you need this cake.

Again, it’s oozing with chocolate and peanut butter (if you want, which I DO) and topped with whipped cream. It’s just the most perfect sweet cake that you can treat yourself to today…and then every other day after. Obviously.

Instructions

  • Preheat the oven to 375 degrees F. Grease an 8 ounce ramekin with cooking spray.
    In a microwave safe bowl, melt together the butter and chocolate for 15-30 seconds, until melted and smooth. Add the egg, vanilla, and coconut sugar and mix to combine. Stir in the whole wheat flour and salt. 
    Pour the batter into the prepared ramekin. Insert the dark chocolate in the the center. Add the nut butter and then spoon a little batter overtop to seal. Transfer to the oven and bake for 7-10 minutes. Bake 7 minutes for super gooey and 10 for just a little lava. serve with whipped cream or ice cream.

  1. Hey, I googled 1.5 oz of chopped chocolate and it seems like it is 1/4 cup – but in a response to a comment below you wrote that it’s a tablespoon…can you please clarify how much chocolate to use? Thank you!

  6. Hi so I figured out how much chocolate is 1 1/2 oz and then I quickly started to make this lava cake since it seemed so easy and quick. Since I didn’t have the big ramekin, I made two small ones, the taste was really good but my cake was of a dense texture, not crumbly like a cake. Did I do something wrong?

  8. Omg these look amazing. I’d like to make these for a dinner party this week but wanted to do some prep in advance. Do you think I could mix up the batter and store the prepped ramekins in advance in the refrigerator until I’m ready to bake them?

  9. Brilliant recipe! I’ve made this twice now, upping the healthy factor a bit by using honey for the sweetener, einkorn flour instead of regular, and replacing the chocolate bar with frozen raspberries. Can’t go wrong!
