1 medium sweet potato, cubed 
2 tablespoons extra virgin olive oil 
1 tablespoon chili powder
2 teaspoons smoked paprika 
1 teaspoon cumin
kosher salt and black pepper
2 Field Roast Mexican Chipotle Sausages, sliced 
1 poblano pepper, diced
2 cups red enchilada sauce
1/2 cup fresh cilantro, chopped
10-12 corn or flour tortillas
1 cup shredded sharp cheddar
1/2 cup shredded pepper jack 
In a large skillet, cook together the olive oil, sweet potato, chili powder, paprika, cumin, salt and pepper until the sweet potato is soft, about 10 minutes.  Stir in the sausages and the poblano, cooked until browned. Add ½ cup enchilada sauce, the cilantro, and a handful of cheese. 
Pour some enchilada sauce into the bottom of a baking dish.

Spoon a little of the chipotle mix down the center of each tortilla, tuck and roll, placing into the baking dish as you go. Pour the remaining enchilada sauce over top of the enchiladas and then top with the remaining the cheese. Bake at 375 for 15-20 minutes, until the cheese has melted. Remove and top with avocado and cilantro.

  • Roasted Garlic Butter Chicken with Lemon Olive Dressing. Sometimes the classics need an update, you know? This is roasted chicken, but better --> herby, garlicky chicken, roasted with pats of butter (yes. pats of butter), lemons (use Meyer lemons. so good) and served with a tangy + salty olive dressing. Add cheese (goat of feta, whichever you love). Simplest sheet pan dinner. I'd serve with crusty bread for scooping up the sauce...or french fries (see my stories).   • 30 Minute Coconut Milk Braised Chicken with Sweet Potatoes and Rice. It's cozy comfort food, but yet pretty healthy too. It's all made in ONE POT (or the instant pot or slow cooker). And?
