  • Creamy Wild Rice Chicken Soup with (butter) Roasted Mushrooms. The coziest bowl of soup because it's December and it is cold. Sooo creamy bowls of slightly cheesy, extra delicious rice soup on repeat. This is everyone's favorite at the moment. It's very good. And? Very easy to make. Throw everything in the crockpot (instant pot/stove-top directions on the blog) and done. One thing? Do not skip the mushrooms. They are SO. GOOD. Buttery, crispy and just a little garlicky too.

In the crockpot combine...
1 pound boneless, skinless chicken breasts
1 1/2 cups dry wild rice blend
6 carrots, chopped
3 stalks celery, chopped
2 medium shallots, chopped
6 cups low-sodium chicken broth
2 tbs chopped thyme or 2 tsp dried
1 tbs chopped sage or 1 tsp dried
1/2 tsp crushed red pepper flakes

Add 1/2 cup water. Season with salt + pepper. Cover and cook on low for 5-6 hours or on high for 2-3 hours. 
Shred the chicken. Stir in...
2 cups fresh baby spinach or kale
2 tablespoons chopped fresh parsley
1 cup heavy cream or whole milk
1/2 cup grated parmesan
Cook until warmed through, about 30 minutes. Stir in 2 tbs parsley. If the soup is thick, add an additional 1/2 cup water.

To make the mushrooms. On a baking sheet, combine the 6 tbs butter, 2-3 cups mushrooms, 4 garlic, 2 sprigs rosemary, 1 tbs lemon zest, and salt + pepper. Roast at 425 for 25-30 minutes,  until golden and crisp

Divide the soup among bowls and top with rosemary and additional parmesan. enjoy...enjoy!

  • Cheddar Pierogies with Caramelized Onions and Bacon. Took my favorite childhood food (hello Mrs. T's Pierogies) and made it SO. MUCH. BETTER. Hello to homemade potato + cheddar filled dumplings. Every pierogi is a little cheesy, full of creamy potatoes, layered with caramelized onions...and salty bacon. Nothing is better…or cozier…on a cold night.   • Salted Caramel Pretzel Snickerdoodles. These are snickerdoodles, but better... because browned butter, chocolate-covered caramel chunks (decadent, but oh so good), cinni sugar and a little pinch of flaky sea salt. Each cookie is slightly crisp on the edge but soft and gooey in the center…with just a little pretzelly crunch. Sooo yes, you should bake cookies on a Tuesday night because it's December and that's what you do. Then? Take the leftovers to work and make everyone’s day. ‘Tis the season for giving!   • Instant Pot Pesto Zuppa Toscana...tastes kind of like the Olive Garden version…but better...if you ask me anyway. It's a little spicy, extra creamy, made with pesto, potatoes, a good amount lemon, cheese, and yuppp, it is topped with salty bacon too (all the good things, right?). It's without a doubt a bowl of comfort food and yes, it's making Monday night very GOOD.  Recipe up on the blog - link in profile.
