  • Coconut Carrot Cake with Jam Swirled Buttercream...because why not bake cake on Tuesday? It's fun, it's springy, and it feels like the right thing to do. And it’s very good. 3 layers of fluffy cake swirled with sweet coconut + carrots and frosted (generously) with berry jam swirled buttercream (baking with the pantry staples). Exactly what Tuesday need. Right? Hoping it brightens your day :) Recipe up on HBH - linked in profile.
  • 20 Minute Honey Garlic Butter Shrimp in Coconut Milk. Spicy, garlicky, gingery and tossed with golden browned butter. It's Easy. It's Quick. And yes, it's DELICIOUS. My only suggestion? Add a side of oven fries + a spicy cucumber margarita...trust me, you should do this. Recipe on HBH today - linked in profile.
  • Crispy Salt and Vinegar Smashed Potatoes (w/ stove directions or IP). Monday snacks? I mean, why not, you know? These are kind of like potatoes chips, but maybe better? Potatoes, vinegar, cheese, plenty of flaky sea salt, black pepper, and creamy yogurt. The BEST + super EASY. Serve these this week, serve um for Easter...or just make them right now. Can't go wrong.   • Filipino Coconut Cauliflower Adobo. I have one head of cauliflower in the fridge in this is what I am making. It's chicken adobo, but swap the chicken for cauliflower. My brothers are rolling their eyes at me for swapping cauliflower for chicken, but honest? This. Is. So. GOOD. The cauliflower just soaks up that tangy adobo sauce. Delicious.
