I am kind of, sort of, way too excited about this fun little ice cream sundaes (ok maybe not little). I mean, these Salted Caramel Chocolate Covered Potato Chip Sundaes may just be the best ice cream sundae summer’s ever seen.

Yes, it is just that good.

For some odd reason, I always think about sundaes the most during these August summer days. I think it has something to do with trying my hardest to soak up every last bit of summertime, and well, summer and ice cream sundaes just go hand in hand. But this ice cream sundae… well let’s just say you’re not going to want confine it to just summer… this sundae will be a special treat all year-long!

Oh but you guys?!?!

Speaking of these last days of summer, I spent Sunday down in Denver with my family. We needed to drop Kai and Caitlin off at the airport and us girls wanted to do a little shopping first. It was finally the perfect excuse for me to actually spend a Sunday like not working…it’s kind of been a bit since I spent the day doing something that didn’t revolve around work.

Oooopppps.

Anyway, we went to Denver and it was the first time since last summer that I felt true warmth on my skin. I’m talking ninety degree heat and sunshine. It was hot and I loved it, but we spent most of the day in and out of the mall. Once we dropped Kai and Cait off at the airport it was “dish shopping” time.

UGH.

Some people may have fun going around to antique stores, but you know, it’s just not my thing. I prefer to sit at my very clean desk and search online, then click and be done. It can be hard cause you don’t know exactly what you’re getting until you receive the items, but I am just no good at picking through antiques. I am over it in about five minutes flat. My dad on the other hand? Somehow he has the momentum to just keep going until he finds at least something that might work for me. I dunno, the guy is definitely weird.

But then, he also now has a rooster crowing as his ringtone (Kai found it for him), so I guess weird is pretty much his thing. Ahh, yeah I did say a rooster crowing, that’s my dad.

Anyway, my point is that is was nice to have a true, super hot summery day. I know most of you are probably incredibly tired of the heat, but for someone who doesn’t get to walk outside of her door and immediately feel the warmth, the ninety degrees temps were very much welcomed. And yes, there was ice cream involved!!

Alright, so here’s the deal. You guys know I love the combo of sweet and salty, these Salted Caramel Chocolate Covered Potato Chip Sundaes are pretty much my dream. Sweet ice cream, paired with salty caramel, chocolate-peanut butter fudge sauce, and chocolate covered potato chips?!?!

Oh my gosh. Yes, please!!

There’s no doubt that this is a pretty indulgent sundae, but in my personal opinion, if you’re going to do a sundae, you really need to do it up right. Plus, with only one week left of summer for Asher, we both decided that we needed to make this last week the best one yet (she goes back to school just a week from today…I cannot even believe how fast the summer has flown!).

Clearly that needs to involve the most over the top ice cream sundae.

…topped with chocolate covered potato chips (it’s gotta be the Kettle Brand Sea Salt chips, they are my favorite!)

Salted Caramel, Peanut Butter and Chocolate Covered Potato Chip Ice Cream Sundae.

Ingredients

Salted Caramel

Chocolate Peanut Butter Hot Fudge Sauce

For the Sundae

  • 1 8.5 ounce bag Kettle Brand Chips Sea Salt
  • 4 ounces semi-sweet or dark chocolate melted
  • 3 scoops chocolate ice cream
  • 3 scoops vanilla ice cream
  • 3 scoops peanut butter ice cream
  • whipped cream for topping

Instructions

Salted Caramel

  • In a dry, large deep heavy skillet cook the sugar over moderately high heat, stirring constantly with a heat proof rubber spatula until the sugar is melted and turns a deep golden caramel, remove the skillet from the heat and let cool 5 minutes. Add the, honey, coconut milk and chunks of butter one by one, whisk until combined. The caramel will bubble, this is ok. Return the pot to the heat and, cook the mixture over moderate heat, stirring until the caramel has thickened, about 3-5 minutes. Remove from the heat, add the vanilla. Set the caramel aside to cool.

Chocolate Peanut Butter Hot Fudge Sauce

  • In a microwave safe bowl, combine the milk, chocolate, peanut butter and honey. Cook on power lever HIGH on 30 seconds intervals, stirring after each interval until the sauce is melted and smooth. If making ahead of time, warm the sauce slightly before serving.

For the Sundae

  • Line a baking sheet with parchment paper. Dip or drizzle each potato chip with melted chocolate and place on the baking sheet. Place the chocolate covered chips in the freezer, freeze until firm, about 5-10 minutes.
  • To make the sundaes, drizzle warm fudge sauce and salted caramel into the bottom of 3-4 bowls. Divide the ice cream evenly among the bowls. Drizzle the ice cream with warm fudge sauce and salted caramel. Top with whipped cream and chocolate covered potato chips. EAT!!!

  2. This is a super sundae! I love the sweet-salty combo as well (like beer-nuts…or brown sugar/maple bacon?). I have tried chocolate-covered potato chips and they’re so good! Yes, ice cream and summer go hand in hand but I can eat this any season! That rooster ring tone is funny..my hubby wants a popcorn ring tone! Lol Again, great job, Tieghan! ?
